Crock Pot Tuscan Chicken

This Crockpot Tuscan Chicken is really quick and easy to whip up. Just mix it all together, pour it on top of some chicken in your crockpot, walk away and come back at dinner time.

So, this recipe was born because I bought a jar of sun dried tomatoes – and then I didn’t know what to do with it. So, they sat in my basement for a while
until I almost knocked them off the shelf and broke them. Then I figured it might be in my best interest to use them so that I wouldn’t end up cleaning them off the floor.

I’ve never been to Tuscany – and I’ve never really had Tuscan food. I’m not even sure what makes it Tuscan
garlic? If you know, please tell me in the comments. And I know you do, because I have the smartest readers EVAH! But, I know that a lot of Tuscan recipes call for sundried tomatoes
and so, I call this Tuscan Chicken! Voila!

Pumpkin Breakfast Cake (GF)

If you search Pinterest or Swagbucks  for pumpkin recipes, you will encounter approximately 1 trillion options
maybe more. My pumpkin recipes are but a drop in the bucket. This time of year, a pumpkin recipe starts to look kinda BLAH after you’ve seen a couple hundred of them. I even hesitated to use this cookbook.

But then I smacked myself and got over it. Why do I care if there are one trillion recipes for pumpkin already? There isn’t THIS one. And even if you don’t care, I do. I love this recipe and I’m sure glad I made it for my tummy. And guess what? Like I already told you, this isn’t the last pumpkin recipe you’re going to see. You’ve been warned. 😉 Make that 1 trillion and ONE. [Read more…]

Crock Pot Pumpkin Gingerbread Steel Cut Oats

I love everything with pumpkin in it, so this crockpot pumpkin gingerbread oatmeal is perfect! It cooks overnight, so breakfast is ready when you wake up!

Let’s cut to the chase here. Since I figured out how to make oats in the crock pot using a water bath instead of cooking them directly in the crock, it’s made my wheels turn a bit. I’ve been dreaming up all sorts of flavors to make – since I can actually get up and eat them instead of using the mixture as wallpaper paste.

This one came to me because, frankly – I like pumpkin stuff. That should be evident by the amount of recipes I post with it
soooooooooooooooo, being frank again (Frank and Pete must be related), if you don’t like pumpkin, you might want to zone out for the next few months and come back to me in the spring. Or when I run out of pumpkin – which isn’t likely to happen. [Read more…]

Spaghetti Squash Primavera

Are y’all getting bored with Cooking Through Stacy’s Stash? Cause I gotta tell you – we’re not even half-way there yet. Surprised? Yes, I might have a cookbook hoarding problem
but if you knew how many I had before we moved, you might change your mind. Ahem. There are lots of things that are worse than hoarding cookbooks
hoarding empty ketchup bottles
hoarding broken light bulbs
hoarding used q-tips. See, now I have justified myself.

I love spaghetti squash – no matter how you cook it: in the oven or in the crock, it’s one of my favorite vegetables. I like to buy several at the Farmer’s Market when they’re in season and keep them in my basement where it’s cool. I can keep them for 2-3 months this way. But I’ve had people tell me you can also store them in the fridge for extended amounts of time
but my fridge is usually crammed full with various things in mason jars.  [Read more…]

Crock Pot Chicken Meatballs in Marinara

When I was pregnant with Andy, I was sick for about two months. Everything made me want to puke so I was plastered to the couch for most of the day. Barry either cooked or brought dinner home. It was not a fun two months for the type of person that really enjoys being in her kitchen – it’s my happy place
give me a list and give me my kitchen.

But then I started to feel better, so I immediately thought, “watch out, smoke detector kitchen, here I come!” I got it into my mind that I was going to make this Creamy Chicken Spaghetti from Pioneer Woman. And I’m not gonna lie – even now I look at it and shudder. Well, Miss Smarty Pants thought that she would use ground chicken instead of the chopped chicken it called for in the recipe. [Read more…]

Pumpkin Pie with Gluten Free Flax Crust

Trim Healthy Tuesday: Pumpkin Pie with Gluten Free Flax Crust (S) Humorous Homemaking

In my misspent food youth, I was dumb. I didn’t eat certain things. Stuff like salad, cabbage, and salmon were off my radar. Man, how dumb is that? If I could go back and talk to myself, I would smack Misspent Stacy around a little bit.

Dear Missspent Stacy, you’re being stupid. That salad is delicious. And quit being afraid of cabbage – what did it ever to do you? Just eat it. Put down the Corn Flakes and marshmallows (yes, my fave young combo) and EAT A SALAD YOU DORK! Sincerely, Smarter Future Stacy. [Read more…]

Crock Pot Cocoa Almonds

These Crockpot Cocoa Almonds are so easy and so yummy! All you need to do is cook, stir, cook, and then dump! Then hide them from the kids!

You know those cocoa dusted almonds you can buy at the store? Yeah – they’re stinkin’ delicious.

When I give them to Annie, she acts like I’ve handed her the moon – and I’m the best mommy EVAH. Cool feeling
not so cool of a feeling when they’re all gone though. Bummer.

Also, it’s not so cool when you read the ingredient label. Yeah. Save yourself and don’t read it. Thanks.

I’ll just tell you that you probably don’t want to know what’s in there. DUDE! They’re COCOA ALMONDS
why do you need to add all that other mess??

Couldn’t you save yourself a buck and nix the weirdo ingredients? This is Stacy, trying to save the big companies some cash. You’re welcome. [Read more…]

Grain Free Dutch Babies

‘Round these parts, we really like pancakes. You’ve probably noticed that by all my pancake posts. Why do I like them so well? Honestly – they’re easy and everyone will eat them. I can’t say that about everything. Add to that fact that they’re stinkin’ delicious and you’ve got a winner without a chicken dinner.

Crock Pot Spaghetti Squash

So, I’m pretty much obsessed with spaghetti squash. It’s fun to fix and it’s fun to eat. My obsession started about two years ago when I made Spaghetti Squash Casserole for the first time – it’s just been a downward spiral since then. It could be worse. It could be a downward spiral with chocolate and peanut butter. Oh – wait a minute. I have that too.

I’ve already showed you guys via video how I normally prepare a spaghetti squash. But, being the crock pot lover that I am, I thought I would be a genius and try it in there – turns out, it’s already been done. Y’all even told me that in the spaghetti squash post. I believe the Bible says, “there is nothing new under the sun
” and dude, the Bible is always right. [Read more…]
