Granola is one food we eat in massive quantities. One of my favorite breakfasts of all time is a big bowl of granola with yogurt and berries. I knew one day I would tackle making granola without all the honey and maple syrup in it – because let’s face something here…I like a challenge. [Read more…]
Crock Pot Country Redneck Chicken Paella
So, here’s the thing. I’ll be totally honest. I forgot to take pictures of this dish. I took some when I set the plates down at dinner…but that’s all I’ve got. I failed. I failed the blogging photo world. It happens – first time it’s really happened to me, but hey – it won’t be the last.
Honestly, when I made this the first time the day hadn’t gone really well. I was convinced Annie had been invaded by visiting aliens, Andy wouldn’t nap but just wanted to whine all day long, Dottie (the dog) pooped in the basement floor, and I didn’t get anything done – except to make dinner. [Read more…]
Summer Stir Fry
I love summer…and I love fresh veggies. I love being able to buy new things at the Farmer’s Market – and I love knowing that I can go to my fridge and pull out any assortment of veggies that are fresh. Yummmmmmmmmmmmmm. There is something so refreshing about fresh produce. Don’t you agree? If you don’t, then don’t read this post. It’s about fresh veggies.
In the summer, I like light meals…and I like heavy meals in the winter. Probably because I hate heating up the house and the oven tends to do that. This is made on the stovetop so it’s a bit cooler – plus it uses whatever you have in the fridge. Except fudge sauce. This doesn’t use fudge sauce. [Read more…]
Crock Pot Sweet Apple Chutney
When I was pregnant with Annie, I went hog wild and pig crazy over apples. I ate them every day. Yes, plural. Sometimes three a day. I couldn’t get enough. Now, apples and applesauce are one of her favorite foods. With Andy, it was bananas. I would have attacked you over eating my banana – and he LOVES them now too. It’s a good thing I didn’t gorge myself on Skittles and Doritos.
I still love apple dishes. If I come across a recipe with “apple” in the title, I’m always gonna read it. As much as I love them, I don’t care for traditional apple chutney. It usually includes chopped onion and vinegar. I’m sorry, but I just cannot do that with my apples. It seems wrong to me – like I’m cheating on caramel or something. [Read more…]
Chicken with Cream Sauce
Embrace cream. Really. Try it. The jar is cold, but it feels good to make nice with your cream. It does such wonderful stuff: it makes ice cream; it makes BUTTER; it tastes good in coffee, and it makes THIS…Chicken with Cream Sauce. Go ahead. I’ll wait. Hug it. I dare you.
I’m really enjoying this Cooking Through Stacy’s Stash and making new recipes for y’all to try out. It challenges me in the kitchen…but every day is a challenge for me in the kitchen. I do dumb stuff daily, so I’m a challenge in myself. Oops? Does this paragraph even make any sense? [Read more…]
Crock Pot Lentil Burrito Bowls
Y’all have requested more lentil recipes…and I can understand why. Lentils are just stinkin’ delicious…pun intended? Ha, ha! Beans, beans, the magical fruit! The more you eat the more you…uh, yeah. I digress.
I only have two lentil recipes posted on this site: Buttered Lentils and Lentil Vegetable Soup. Those are both delicious. We love beans around here…and if everyone eats them, any negative effects are cancelled. Can I get a witness?! [Read more…]
Crock Pot Sugar-Free Strawberry Chia Jam
I love jam…namely my Mama’s Strawberry Freezer Jam. I could literally suck that stuff up with a straw. But man alive – as good as it is, it’s chock full of sugar. Most jams are.
Most jams are made with a bunch of sugar, some pectin, and a little bit of fruit. I wanted my jam to be made of mostly fruit, sweetened with stevia, and thickened with something good for me. [Read more…]
Crock Pot Southwest Chicken and Rice Chowder
The first time I ate Southwest Chicken Chowder, I’m pretty sure I cried because it was so wonderful.
I’m not usually this dramatic about my dinner, but at the time, I was three days post-partum with my second son, exhausted, weepy, and starving. And this yummy chowder was a gift from my friend, Kate, who knows that bringing dinner to a new mom is about #3 on the list of “Nicest Things You Can Do for Anyone.”
I have made this many times since then. I don’t always shed tears of joy eating it, but almost. I love that this dish is yummy and allergy-friendly, as we manage multiple food allergies. It’s perfect for rainy days, cold days, hot days, basically any day you need dinner. Which here, is every day. We do not skip dinner. [Read more…]
Almond Flour Brownies
I’ve never met a brownie I didn’t like. Wait. Scratch that. I have met brownies I didn’t like…dry ones. Ashes to ashes, dust to dust brownies. No thanks…but gooey brownies. Yeah, buddy. Come to Mama!
Y’all told me on Facebook you wanted me to start posting coconut flour and almond flour recipes…and I’m happy to oblige because that’s mostly what I find myself using these days. I love both of them – they are different, but I love the taste and texture. [Read more…]
Easy Crock Pot Vegetables
This isn’t one of those crock pot recipes that you use because you need to leave the house for the day and want dinner ready when you get home. This is one of those “it’s too hot to turn on the oven today but I still want yummy vegetables with my steak” kind of recipes.
Sometimes the crock pot isn’t for long cooking – sometimes it’s for keeping the house cool. Sometimes it’s for making more room on the stove if you’re cooking for a crowd and need that space. Sometimes it’s because your oven is broken. Sometimes it’s because you’re obsessed with your crock pot. [Read more…]
