Breakfast Pizza
Raise your hand if you like cold pizza. Lame. Cold pizza is grody. No. Thank. You. Guess what? I’m married to a man who likes cold pizza – God is funny like that. But, on the flip side, I don’t like my pizza piping hot. I kinda like it warm…so that the cheese doesn’t burn the roof of my mouth. I have issues with waiting until food cools down…that’s normal, right?
Lots of people like pizza for breakfast. They grab a leftover piece out of the fridge and head to work…or class. When I was in college, lots of my friends ate cold pizza for breakfast. Crock Pot German Meatloaf
So, if you don’t have a thing for meat, this might not be the blog for you. Because really; I might be considered meat-obsessed. I get excited over different variations of meatloaf and meatballs. Sincerely excited. And yes, I realize that might be considered slightly pathetic, but that’s okay. I could be obsessed with worse things…like belly button lint or dust bunnies. And this thought just actually occurred to me, but do you realize that if belly button lint is left long enough, it could possibly turn into a DUST BUNNY? Wow. Now that will get you thinking.
But, I digress. We’re talking about meat, right? Yep. I love making meatloaf in the crock pot. Tropical Island Pancakes (GF)
Pancakes are a sure win in this house. I can’t say that about everything I make…because some things have crrruuuuuuuuuuuuuuuuuuuust, Mama! Or black specks. Or burned edges. But pancakes? Everyone likes pancakes. And they’re easy. And I like flipping them.

Coconut Milk Chicken + Allergen Friendly Cookbook
There are approximately 4.5 billion ways you can cook chicken. And yet, it seems most people get in a chicken rut: chicken Alfredo, baked chicken, grilled chicken, blah blah blah. If you haven’t yet figured it out, one of my goals here is to get you out of your food rut – whether it be a side dish rut or a skillet meal rut.
Recently, I have a love affair with coconut. Not gonna lie, I’m putting it in just about everything: cake, granola, muffins, cake, eggs in coconut oil, cake, coffee, cake, and sometimes coffee cake. I’m also using a lot more coconut milk because I like sniffing it. I just like sniffing coconut in general. I think this might be getting out of hand – my mom is concerned. “It was pretty good – but there’s coconut in it again.”
Crock Pot Tuscan Chicken
So, this recipe was born because I bought a jar of sun dried tomatoes – and then I didn’t know what to do with it. So, they sat in my basement for a while…until I almost knocked them off the shelf and broke them. Then I figured it might be in my best interest to use them so that I wouldn’t end up cleaning them off the floor.
I’ve never been to Tuscany – and I’ve never really had Tuscan food. I’m not even sure what makes it Tuscan…garlic? If you know, please tell me in the comments. And I know you do, because I have the smartest readers EVAH! But, I know that a lot of Tuscan recipes call for sundried tomatoes…and so, I call this Tuscan Chicken! Voila!
Pumpkin Breakfast Cake (GF)
If you search Pinterest or Swagbucks for pumpkin recipes, you will encounter approximately 1 trillion options…maybe more. My pumpkin recipes are but a drop in the bucket. This time of year, a pumpkin recipe starts to look kinda BLAH after you’ve seen a couple hundred of them. I even hesitated to use this cookbook.
But then I smacked myself and got over it. Why do I care if there are one trillion recipes for pumpkin already? There isn’t THIS one. And even if you don’t care, I do. I love this recipe and I’m sure glad I made it for my tummy. And guess what? Like I already told you, this isn’t the last pumpkin recipe you’re going to see. Crock Pot Pumpkin Gingerbread Steel Cut Oats
Let’s cut to the chase here. Since I figured out how to make oats in the crock pot using a water bath instead of cooking them directly in the crock, it’s made my wheels turn a bit. I’ve been dreaming up all sorts of flavors to make – since I can actually get up and eat them instead of using the mixture as wallpaper paste.
This one came to me because, frankly – I like pumpkin stuff. That should be evident by the amount of recipes I post with it…soooooooooooooooo, being frank again (Frank and Pete must be related), if you don’t like pumpkin, you might want to zone out for the next few months and come back to me in the spring. Spaghetti Squash Primavera
Are y’all getting bored with Cooking Through Stacy’s Stash? Cause I gotta tell you – we’re not even half-way there yet. Surprised? Yes, I might have a cookbook hoarding problem…but if you knew how many I had before we moved, you might change your mind. Ahem. There are lots of things that are worse than hoarding cookbooks…hoarding empty ketchup bottles…hoarding broken light bulbs…hoarding used q-tips. See, now I have justified myself.
I love spaghetti squash – no matter how you cook it: in the oven or in the crock, it’s one of my favorite vegetables. I like to buy several at the Farmer’s Market when they’re in season and keep them in my basement where it’s cool. I can keep them for 2-3 months this way. But I’ve had people tell me you can also store them in the fridge for extended amounts of time…but my fridge is usually crammed full with various things in mason jars. [Read more…]
