You know how you have those pivotal moments in life? Moments that you remember with astonishing clarity? In my life, I have a few of those moments. One of them was all about Cornbread Salad. I remember where I was, the table, my plate… I remember it all. That Cornbread Salad changed my life. From hence forth, I was a Cornbread Salad connoisseur.
Fruity Baked Steel Cut Oatmeal
I’ve been making this recipe for fruity baked steel cut oatmeal for several years now…and it’s become one of my go-to breakfasts. For us, it ranks right up there with Baked Oatmeal and Sweet Potato Oatmeal. We all LOVE it! It’s so easy to customize to your desire and it works with whatever is in season. I found the general idea online and made my own version. 😉
Steel cut oats can be a little tricky…if you don’t cook them just right, they’re crunchy. I’m not sure about you, but crunchy oatmeal is just not cool – not cool at all. If you expect them to taste like regular oatmeal, you’re going to be sadly disappointed. They do have a bit of a bite to them, but they should not be crunchy when cooked. For us, we had to learn to like them – and buddy, do we like them!

You know those moments of pure genius you have in the kitchen? You’re just standing around and suddenly think “Oh. My. GOSH! I could totally make yadda yadda!!!” Well, I have those a lot. The problem is, about half the time, they turn into utter disasters. Now, I do usually eat the utter disasters, including the pancakes that wouldn’t ever get firm, the cookies that were so bitter it would give you chest hair, and the “muffins” I had to eat like cereal out of a bowl. I just hate to waste food…but sometimes, I just can’t help it. Sometimes, even the dog won’t eat it. Just picture it with me: peanut butter brownie pizza. What could go wrong?!

You might recall that I already have a recipe on this site for Crock Pot Meatloaf, but it calls for potatoes and carrots…this crock pot cheeseburger meatloaf is like one big cheeseburger patty. It’s just heaven on a plate.
I first came across a recipe for Cheeseburger Meatloaf somewhere on the internet and I changed it to suit our tastes…and then I knew I could re-create it to be fixed in the crock pot. It is literally the best meatloaf I’ve ever had.
In fact, when I made it the first time, Barry was out of town. I got up from the table and got my phone to text him. I said “I just made the best meatloaf of my entire life.” And then we ate it all without him. Sad how things work out that way for him. Oh well. I was happy and so was Annie.

Holy Moly. How can something so simple be so good? Usually I make lasagna from scratch (my Mama’s recipe), but I wanted to try this one because it just seemed too easy to be true. The reviews were great, so I went for it. And I was blown away. This crock pot lasagna is AMAZING!
Even Annie, who hated noodles AND meat when I first came up with this recipe, ate her entire plate of this. I liked it because I was able to start it during the day and have dinner done later when things were busy. Nice. On the 8th Day, God invented Crock Pots. Amen.

Raise your hand if you like cold pizza. Lame. Cold pizza is grody. No. Thank. You. Guess what? I’m married to a man who likes cold pizza – God is funny like that. But, on the flip side, I don’t like my pizza piping hot. I kinda like it warm…so that the cheese doesn’t burn the roof of my mouth. I have issues with waiting until food cools down…that’s normal, right?
Lots of people like pizza for breakfast. They grab a leftover piece out of the fridge and head to work…or class. When I was in college, lots of my friends ate cold pizza for breakfast. Not me – no way. I had higher standards than that – Toaster Strudels, baby…they are classier than Pop Tarts. 😉 [Read more…]
Crock Pot German Meatloaf
So, if you don’t have a thing for meat, this might not be the blog for you. Because really; I might be considered meat-obsessed. I get excited over different variations of meatloaf and meatballs. Sincerely excited. And yes, I realize that might be considered slightly pathetic, but that’s okay. I could be obsessed with worse things…like belly button lint or dust bunnies. And this thought just actually occurred to me, but do you realize that if belly button lint is left long enough, it could possibly turn into a DUST BUNNY? Wow. Now that will get you thinking.
But, I digress. We’re talking about meat, right? Yep. I love making meatloaf in the crock pot. If you’ve not tried out my other three versions: Traditional, Sweet Potato, and Cheeseburger, then you don’t know what you’re missing. Meat just makes bellies happy…I’m still thinking about belly button lint now. [Read more…]
Tropical Island Pancakes (GF)
Pancakes are a sure win in this house. I can’t say that about everything I make…because some things have crrruuuuuuuuuuuuuuuuuuuust, Mama! Or black specks. Or burned edges. But pancakes? Everyone likes pancakes. And they’re easy. And I like flipping them.
These days my favorite way to make pancakes is with coconut flour. I love the flavor and texture. If you’re not a huge fan of coconut flour, you probably won’t like these. Sorry – just thought I would clear the air right now. And yes, these do taste like coconut. I’m on a roll! [Read more…]
Spaghetti Squash Deluxe
I got this cookbook when I was a junior in high school. I bought it from my Home-Ec teacher, Mrs. Cole. It’s full of yummy goodness – but most of it is also full of processed ingredients. However, I’ve become quite good at switching out those processed things for homemade things…and now that I’ve said that, my next dish will probably taste like dog food. [Read more…]
Coconut Milk Chicken + Allergen Friendly Cookbook
There are approximately 4.5 billion ways you can cook chicken. And yet, it seems most people get in a chicken rut: chicken Alfredo, baked chicken, grilled chicken, blah blah blah. If you haven’t yet figured it out, one of my goals here is to get you out of your food rut – whether it be a side dish rut or a skillet meal rut.
Recently, I have a love affair with coconut. Not gonna lie, I’m putting it in just about everything: cake, granola, muffins, cake, eggs in coconut oil, cake, coffee, cake, and sometimes coffee cake. I’m also using a lot more coconut milk because I like sniffing it. I just like sniffing coconut in general. I think this might be getting out of hand – my mom is concerned. “It was pretty good – but there’s coconut in it again.”
