Cornbread Salad

Perfect for a potluck; just use whatever veggies and meat you have on hand. Throw in your favorite cornbread and ranch dressing and you're ready to go!

You know how you have those pivotal moments in life? Moments that you remember with astonishing clarity? In my life, I have a few of those moments. One of them was all about Cornbread Salad. I remember where I was, the table, my plate… I remember it all. That Cornbread Salad changed my life. From hence forth, I was a Cornbread Salad connoisseur. You are welcome to address me as such.

Where it Started

When I saw this recipe for Cornbread Salad, I didn’t have to go any further to decide what to make for dinner. It was like a sign from heaven…a sign from heaven in a church cookbook. This is spiritual, guys.

God bless Shirley, whoever she was – and her friend Mary Jane for posting her recipe. I want to hug them. Church people hug. And eat. And eat while they hug. It’s spiritual, ya know.

How I Made it My Own

I didn’t have to change much in this recipe to make it wholesome except to make these items homemade. I sometimes use this delicious recipe for Grain Free Sandwich Bread from Nourished and Nurtured. It’s fabulous.

But let’s be honest…Pioneer Woman’s Skillet Cornbread is where it’s at, man. Make it.

This is the time when veggies shine! You can use whatever you have laying around…veggie I mean. Don’t use Play Doh or dust bunnies.

This is more of a GENERAL IDEA instead of a recipe. You just use what you want – the veggies and cornbread you like. And just throw it all together.

I used: tomatoes, onion, green peppers, celery, cilantro, cucumbers, ham, and ranch dressing in this particular photo. You could also use chicken or bacon in place of the ham…or leave the meat out if you just want this as a side. We like it as a main dish.

I use the recipe for Ranch Dressing from Venison for Dinner. Layer everything together and dinner is served. This is a PERFECT potluck dish…unless you’re like me and don’t want to share. That’s not spiritual is it? And so, the clichés end. Oops.

My mother-in-law has this same recipe from “Shirley”. Shirley’s is actually a southern family-style restaurant in Hampton, TN! Here’s a link to their website. My in-laws have eaten there several times and love it! http://shirleyshomecooking.com/

I’ve eaten at Shirley’s one time – and it was an experience I will never forget. All the food. The glorious food. I’m slobbering here.

This looks delicious can’t wait to make it. I think adding some goat cheese and American cheese might go well with cheddar here. Thanks for sharing.
