
You know how you have those pivotal moments in life? Moments that you remember with astonishing clarity? In my life, I have a few of those moments. One of them was all about Cornbread Salad. I remember where I was, the table, my plate… I remember it all. That Cornbread Salad changed my life. From hence forth, I was a Cornbread Salad connoisseur.
Where it Started
When I saw this recipe for Cornbread Salad, I didn’t have to go any further to decide what to make for dinner. It was like a sign from heaven…a sign from heaven in a church cookbook. This is spiritual, guys.

How I Made it My Own
I didn’t have to change much in this recipe to make it wholesome except to make these items homemade. I sometimes use this delicious recipe for Grain Free Sandwich Bread from Nourished and Nurtured. It’s fabulous.
But let’s be honest…Pioneer Woman’s Skillet Cornbread is where it’s at, man. Make it.
This is the time when veggies shine! You can use whatever you have laying around…veggie I mean. Don’t use Play Doh or dust bunnies.
This is more of a GENERAL IDEA instead of a recipe. You just use what you want – the veggies and cornbread you like. And just throw it all together.
I used: tomatoes, onion, green peppers, celery, cilantro, cucumbers, ham, and ranch dressing in this particular photo. You could also use chicken or bacon in place of the ham…or leave the meat out if you just want this as a side. We like it as a main dish.
I use the recipe for Ranch Dressing from Venison for Dinner. Layer everything together and dinner is served. This is a PERFECT potluck dish…unless you’re like me and don’t want to share. That’s not spiritual is it? And so, the clichés end. Oops.
Cornbread Salad
Ingredients
- 1 batch baked cornbread (perfect for leftover!) I really like Pioneer Woman's Skillet Cornbread recipe from her blog
- 3/4 cup Ranch dressing
- misc. raw veggies of your choosing, chopped/diced We like tomatoes, cucumbers, green peppers, onion, cilantro, celery, etc.
- misc. cold cuts, chopped bacon or grilled chicken breast is also tasty!
- 1/2 cup shredded cheddar cheese
Instructions
- Chop and combine all ingredients. Serve immediately or allow to set overnight. Either way it is delicious!

Nope! I absorbs some of the veggies and dressing, but it doesn’t get soggy. It’s DELICIOUS and I wish I had some right now!
