I have to tell you something. Come close…okay, ready? Making lists is my happy place. A pen and a piece of paper. A bulleted list. Ahhhhhhhhhhhhhhhh, yes. It just gives me happy chills all the way down to my toes. Make lists and save the world! Laundry? Check! Beds? Check! Dusting? Who the heck does that? Dinner? Check! Dessert? CHECK! Priorities, people. Lists make priorities.
So, I’ve noticed that y’all like my list posts too: 25 Healthy Cracker Recipes, 100 Days of No Processed Meals, 20 Healthy Granola Bars, and 75 Real Food Side Dishes…and I promise, there are more to come. Because, as much as you like having them – I like making them. Happy place, remember? So, holler at me with some ideas. I love ideas. I love lists too…have I mentioned that?
First, let me tell you something…some people think “healthy” means I use low-cal margarine and Splenda. ICK! No. No margarine on the premises. By healthy, I mean healthy fats, good for you meats, good for you flours and oils. I get emails and comments from some of you wondering why I call a recipe “healthy” when it’s loaded with butter. Well…butter is good for you. Snack on THAT.
So, please refrain from sending me links and comments about saturated fats killing me slowly and how I should embrace Splenda and canola oil because the jury is still out on coconut oil. That will save us all a bunch of time – and where there is time saved, there is time to make a chocolate cake. Amen.
So, without further ado, here is a list of 25 healthy skillet meals – no cream of soups included or boxed ingredients. Just honest-to-goodness food.

I totally agree about butter and real ingredients! Margarine and splenda are totally manufactured and way bad for you! Plus too many people equate low calories or fat with use way too much of something. I’m so glad I found your website I cant wait to try these recipes. And lists make me super happy too…..especially crossing things off!
Stacy says
Sometimes I make a list just so I can cross things off. 😉

I love your lists! They make me feel like I got a bunch of free ebooks or something like that.

Thanks for linking up at Cast Party Wednesday #112! I enjoyed your post, and I do agree with you about what’s “healthy” – a lot of people cut out things, saying they’re not healthy, while adding other things even less healthy! What a fun post!
Stacy says
Please pass the butter.

Your thoughts on healthy foods are my thoughts on health foods! I admit, I used to be all about the margarine, artificial sweeteners, and packaged “low fat” foods, but I’ve started embracing non-processed whole foods more and more.
I’d much rather have a small(ish) slice of chocolate cake I made myself, with ingredients I can pronounce, than a packaged “healthy” chocolate cake.
Stacy says
Amen – as I sit here and nosh on my cookie.

Ah, what a nerd. I love lists too. And, um, I can’t stand having lots of tabs open on my computer but I refuse to close them until I read them. And, I still have up your list of 75 side dishes! LOL. I opened a few of them and now I’m going to have to do this with this awesome list too. Let’s see, how to make my own list of your list…:)
Thank you!
Stacy says
I currently have 7 tabs open. LOL

Dear Stacy,
At dinner last night, I wondered out loud… “Whatever did we do before we read Humorous Homemaking?!” We scooped out the Lentil Burrito bowls from the crockpot just early enough to replace it with the sour cream cake brownie recipe so it would be ready in time for desert – oh my word – how you have greatly blessed our family!! I cannot wait to go through this skillet list and find more new dinner ideas that can be made in real life with little people all around. Thanks so much for all you do- and all the ways you make us laugh. Please keep the lists coming!!
Stacy says
Hooray for lists!!! And Lentil Burritos!

hi! I don’t want to be a pest but you need to include the colon in “http://” for the photo link to the Pan-seared Salmon recipe 🙂
Stacy says
Fixed. The actual link in the post was correct. It was only the photo that wasn’t working.

Hi Stacy! Thank you so much for the recipes and links! I have finally decided to do THM! I was skeptical about using the unfamiliar ingredients, so I’ve read a LOT these past couple of days! And have decided that I can do this! The real kicker was seeing how skinny you are on that video! And how much Barry has lost! If I can eat and loose weight, I’m all for that! I’m tired of being hungry and fat! My way isn’t working and if this doesn’t work, oh well, at least I’ll be healthier! Sorry for not commenting much these past few months! You will probably see me more now! Your kids are just adorable! Thanks for all you and Barry do to help people! Blessings from Bama!

BAMA!!!!!!!!!!!!!!!!!!! 🙂

One of our favorite snacks in this house is chopped apples sauteed in coconut oil. If we’re not in a coconut oil mood, we use butter! And maybe top it if off with some whipped heavy cream 🙂 Thanks for the post!

I think I just drooled all over myself.
