Skillet Pizzas

I’ve been on a pizza kick recently. I want it all the time. We fix these tortilla pizzas a lot in our house. You can vary the toppings depending on how you’re feeling. Feeling especially frisky today? Use hot salsa and jalapenos. Feeling bland and blah? Plain cheese works too. It’s ok if no one in your house likes the same toppings…..if usually that makes you travel somewhere like CiCi’s Pizza (be still my heart!) then today you’re in luck! Each pizza can be customized to your pickiness. There won’t be a recipe at the end, as this is just to give you a general idea. Then I’ll unleash you and let you go. If you love something, let it go! I love pizza, and I let it go…….down the hatch.

For these I used chopped peppers, onions, mushrooms, pepperonis, medium salsa, whole wheat tortillas and Colby cheese. Whatever you like, that’s what you use. It’s like Burger King – your way right away…..however, don’t get too bossy with the cook. Don’t bite the hand that feeds you. Have you noticed that I love clichés?  If you bite the hand that feeds you, they might spit on your pizza. Not that you’d ever know…..unless you mysteriously end up with Mono.

You’re going to need to grease your skillet with something. I used this olive oil spray that I got marked down at Kroger. It’s pretty tasty. You could also use cooking spray or even a tad of pure olive oil. We just need something to give the pizza “crust” a little crunchiness.  So, go ahead and spray your skillet and set it over medium heat.

Add your veggies to the skillet and cook them until they start to get soft, about 3 minutes. I cooked mine a tad longer because I like them really soft. I don’t want crunchy pizza….except for the crust. Yes, I am very picky about my pizza.

Since the mushrooms are already cooked, then you just add them at the end so they can warm up a little bit. Make sure you drain the can…….or your mixture will be floating.

When they’re done, remove them from the skillet. I just put mine back on the cutting board so I wouldn’t dirty another dish. Speaking of, we’re going to use the same skillet for the tortillas. We’d hate to unnecessarily dirty another dish…..unless someone else is doing them and then by all means make dirty dishes! Spray the skillet with cooking spray again and set it over medium heat.

Pop your tortilla right in there and let it start to brown on the bottom. Mine were already brown, so I waited until I got the tell-tell browning marks. If you’re using white tortillas, you’ll be able to tell when they’re ready.

Flip them over so the other side can cook. See my brown marks? I love crispy pizza! I think that’s why I like CiCi’s…..they have really delicious cracker crust pizza. Oh, and their breadsticks make me wanna dance. I always grab one when I come in the door, even before I go to the table. Have I mentioned that I love pizza?

Now, don’t dilly-dally like I was just going by going off on a CiCi’s Pizza tangent. IF you do, your pizza will burn on the bottom……because I accidently burned one. And then I made Barry eat it. Sorry honey! I put the pepperonis on the bottom so they wouldn’t fall off. I wanted to save them from tragedy.

Now, add all the other vegetable toppings here. Spread them out and make sure they cover evenly……do not discriminate. I left a nice sized outer crust, but you don’t have to. Just do what you like. Anything goes!

Then I added the cheese and spooned salsa over the top. Sorry the picture is blurry, but Annie was on my hip. She was as excited about this pizza as I was…..but somehow she ended up eating a peanut butter sandwich. Oh well.

Grab your lid and put it on. We want the cheese to melt without letting the pizza burn….this will just take a minute or two. Don’t burn it! If you do, just feed it to your husband and start over.

When it’s done, just remove it from the skillet and plop it on a plate. Now you’re ready for your next pizza…unless you’re the only one eating. These would be quick and easy to make for lunch. Or you could have a pizza making party! I love themed parties…..I love parties in general. They mean cake……and pizza. Have I mentioned that I love pizza?
