An Apple A Day, For Dinner! {Crock Pot Chicken with Apples and Bacon}

Apple season is here! When apples are in season, not only can you find the juiciest, most crisp and delicious apples, but they’re available for really low prices. And I think we all know what that means… Apple Cobbler, Apple Crisp, Apple Pie, Homemade Applesauce, Apple Cookies. And as if all the sweet recipes popping up on blogs, Pinterest, and cooking magazine covers aren’t tempting enough, I’m here to share a few more ways you can enjoy an apple a day… for dinner!

How to Get Three Meals from One Chicken

A long while back, when I conquered my fear of cooking a whole, naked chicken in the crock pot (Crock Pot Baked Chicken), I felt like the world opened up to me! Behold! All those glorious Pinterest recipes calling for 2 cups cooked chicken would no longer add 20 minutes on to making a meal! A whole neeeeeeeeeeew worlddddddddddddddddddd! Come with me on my magic carpet.

So, today we’re talking chicken – and how you can make three meals from one chicken. That’s right – ONE whole chicken to make three meals. First off, let’s clear the air: I’m only feeding 2 adults and 4 small children people. So, if you’re feeding more than that, you might only be able to get two meals.

Honestly, we don’t eat a lot of meat. I I try to make sure vegetables and healthy whole grains are a bigger part of our diet than meat…mainly because I’m stinking’ cheap frugal. And  high quality meat can get expensive! [Read more…]

I got an idea in my head that wouldn’t go away. I have a dream – my dream is a huge list and resource of crock pot desserts that don’t call for cake mix, pudding, and canned pie mix. All of the delicious flavors of Chicken Pot Pie without all of the hassle. It's the perfect option for an easy dinner since it's made in the crockpot.

Instead of a normal “this is how I do it” type of post, I thought I would do a more “behind the scenes” type of post. This way you can see what’s really going down around the Myers house. As you know, I’m all about keepin’ it real. I’m also all about chocolate and coffee…and sleep. But not dusting.

Crock Pot Roasted Red Pepper Pork Chops

When Barry and I brought home 231 pounds of pork, I was a weeeee bit overwhelmed. I mean really – I knew the pig was big, but maybe he should have been working out a bit more. My uncle raised the pig for us on the family farm – my neighbors have been cool with the chickens, but I really didn’t want to press my luck with a hog in the back yard.

Crock Pot Stuffed French Toast

What do you do on Christmas morning? Do you sleep in? (Not if you have kids, you don’t.) Do you plan a huge breakfast? Do you eat Toaster Strudels because you’re too busy doing other stuff to think about cooking breakfast?  Either way, I’ve got you covered today. If you hate spending Christmas morning cooking, this dish is prepared the night before – before you start assembling all the, “some assembly required” toys that will take approximately 4 hours of what would otherwise be your precious slumber.

But, if you LOVE cooking then this dish is great for you too – because it can cook in the crock while you prepare other things…like scrambled eggs, bacon, and hot cocoa. In the spirit of keepin’ it real, as I usually do, I’m gonna be honest. I don’t have time to write this post – but I still want to share a yummy recipe. It’s holiday time, I’m behind (better than BEING a behind), and Andy keeps chewing on wires. Soooooooooooooooo, you might see that a few posts here and there are a bit sparse – and that’s because I’m busying chasing around a 15 month old who currently likes to play in the toilet while his sister stands by and watches (partners in crime).
