
Instead of a normal “this is how I do it” type of post, I thought I would do a more “behind the scenes” type of post. This way you can see what’s really going down around the Myers house. As you know, I’m all about keepin’ it real. I’m also all about chocolate and coffee…and sleep. But not dusting.
First off, I got the idea for this recipe when my friend Karen told me she was making it…and I said to her, “I bet I could make that in the crock pot.” And I DID. I love it when I get ideas from friends. So, go ahead…you can always ask me if there is a new recipe you’d like to see in the crock pot. I like getting fresh ideas – I also like getting a haircut. My college major was Random 101.
So, when I’m conjuring up a recipe in my head, most of the time I write it down like this…on a scrap piece of paper. And then I make changes and notes as I go along. It lets me have something to focus on if my creation turns into a disaster zone.
Sometimes I might look a recipe up in a book or online to get a general idea of what should go in there – it’s always good to have a general idea. For this one, I knew what goes into a pot pie, so it was pretty easy. Most pot pie recipes call for cream-of yadda yadda soup, but I wasn’t going to go there, so I just used sour cream…which is a favorite food of mine.
So, what is Annie doing while I am cooking? Well, this. She’s making her own stagecoach in the kitchen with Andy’s high chair and the table bench. Shouting, “Ya! Ya!” and “Whoa!!!” Special note: she’s still in her pajamas at 10am…because if I would let her, she would wear them all day, every day. She has also used other various pieces of furniture to block her brother from getting to her – because it’s some kind of code that sisters are supposed to torment their brothers.
For this recipe, you can use any type of chicken you like…boneless, unless you want to pull those out before you add the sour cream. I used chicken breast because that’s what I had on hand. Cut it into nice sized cubes. And while you’re knee deep in chicken juice, the phone is going to ring, someone is going to play in the toilet, OR you’re going to turn around and see…
Your son chewing on his daddy’s shoe that most likely has chicken poop on the bottom. You shout, “NO, ANDY!” So, he puts it down and then decides to play under the trash can. A much better improvement until you realize that he’s pulling out all the trash bags.
Yes, he’s still in his pajamas too. Oops? Important note: I was not still in my pajamas.
I used onions, peppers, potato, carrots, and celery in this soup because that’s what I like in my pot pie. I also added green peas, but you should wait to do that until the end. Otherwise you end up with pea mush, which isn’t very appetizing. Which makes me wonder why they have that in the baby food aisle. It’s like some kind of baby torture. Have you tasted that stuff? GAG ATTACK.
So, what do I do while I cook? Most of the time I listen to a podcast or video…very loudly so that I can hear it above, “Ya! Ya!” This is when I get most of my “reading” done. I’m very much into learning new things all the time, so with my lack in the time department, this really helps me learn new things. I love multi-tasking! And I SERIOUSLY need a set of wireless headphones.
For the “pot pie” effect, you’re going to serve this with bread. I used sourdough, but you can use whatever you have. You could also serve it up with a nice side of Kefir Drop Biscuits…just leave out the cheese…because cheese in pot pie is just bizarre. They put cheese in the weirdest things. Like hot dogs. What is that about?
This is a very easy recipe, but very filling. It’s a great comfort food and it will make you want to call your mama and hug your babies. It’s food at its finest. It’s happiness in a bowl. It’s not full of junky canned junky junk. Get your soup on, y’all.
Chicken Pot Pie Stew
- 1 pound boneless chicken, cubed
- 1 medium onion, chopped
- ½ cup chopped green pepper
- 2 cups, chopped potato (peeled if desired)
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chicken broth
- 1 teaspoon salt
- ½ teaspoon poultry seasoning (optional but AWESOME)
- ½ teaspoon garlic powder
- 1 cup sour cream
- 1 cup frozen peas
- Kefir Drop Biscuits or other desired bread
- In a 5 quart crock, combine chicken, onion, pepper, potato, carrots, celery, broth, salt, poultry seasoning and garlic powder.
- Cover and cook on low 6-8 hours.
- During last hour of cooking, add sour cream and peas. Stir.
- Stir and serve over biscuits or other bread.
Yield: 4 servings

I am also staunchly against canned junky junk…but I have discovered Pacific Organics now makes cream of mushroom and cream of chicken in their neat little cardboard containers! And, I know and can pronounce all the ingredients! (And, they are gluten free!!) So, no yucky yuck- junky junk and also no BPA! So, while sour cream is awesome and works great, just a heads up that Pacific now makes these creams for a quick addition to easy meals. 🙂
I have some GF friends who use it – it’s just a bit pricey for me when I have alternatives that work. 🙂 I’m cheap, don’t ya know? LOL
yes, you’re right…it can be pricey. I try to get a few boxes when it goes on sale. I just discovered it for Thanksgiving, my first GF Thanksgiving, and wanted to make green bean casserole, but I had to work all day so I needed to be as efficient as possible with all the food. Actually, I’m making some crockpot chicken pot pie tonight, and I only had one box of the cream of chicken, so I’m taking your cue and adding some sour cream to make it creamier! Pretty excited for dinner….

I made this for dinner tonight! I added some extra broth, because I used a bigger crock pot so not everything was covered. I also just added the chicken breasts whole, then shredded them in the crock pot when they were cooked. So yummy! And my house smells gooood 🙂

This is going on my rotation this month! I love your recipes because I find them easy to make vegetarian friendly (for me), while keeping the meat for the rest of the family. I think it’s because you use whole, real ingredients in the recipes that makes it an easy conversion. I also have your spicy chicken soup on rotation as well. can’t wait to make both of them!!

Woohoo…. wheat free with no modifications (except the bread of course, but I’ll probably serve GF biscuits with it) Although Missy’s idea might wiork too… put the drop biscuits in on top like dumplings. hmmm….
