Parmesan Squash Noodles

Spaghetti pretty much rocks my dinner table – we all love it. It would be sad, sad world without it.

We’ve just started using alternative noodles occasionally. We really love spaghetti squash, and on Thursday I’ll show you how I fix them. It’s fun and crazy stuff around this joint. Added to our “love list” now are these delicious squash noodles. Do they taste like spaghetti? No – it’s a squash, not a miracle. Are they good with pasta sauce? YES. I think I even like them better – they don’t stick and clump together.

Vegetable Cheese Sauce

I like my broccoli plain. I don’t like cheese sauce on it. I like it roasted or steamed with some salt…and butter. Lots of butter. So, maybe that’s not plain after all. Hmmm. I’ll have to think on that one.

I do like Broccoli Casserole…and Broccoli Salad. Okay, so nix what I said earlier. I do like stuff on my broccoli – I just don’t like cheese sauce on it. I think broccoli is tasty enough you don’t need it.

However, I have a 3 year old who likes to have sauce of any kind…and if I can get her to eat more veggies by making a healthy cheese sauce, well dagnabbit, I’m gonna do it. Mini Trees Dipped in Cheese Snow? Yes please. [Read more…]

100 Days of NO Processed Meals – Crock Pot Style

100 crock pot meals

If you’re new to Humorous Homemaking… let me just say, welcome, we’re so glad to have you here!

My 100 Days of No Processed Meals posts are fan-favorites, and this one full of Crock Pot style recipes is one that I go back to again and again. This post is the perfect go-to reference for awesome no processed meals you can make in your slow cooker. (In the American South, we call our slow cookers by the name of my favorite brand which is the Crock Pot.)

What do I mean by “no processed” meals?

No processed meals means that nothing in any of the these recipes calls pre-packed items like Italian Dressing, canned cream of mushroom soup, a package of onion soup mix, Velveeta (bless Velveeta’s heart), etc., and that’s a good thing!

You WILL find ingredients for these Crock Pot recipes like soy sauce, ketchup, canned beans, taco seasoning and mustard because there are clean versions of all these products that are minimally processed (for most folks) or are VERY easy to make your own clean version at home.  When a recipe calls for “taco seasoning”, I automatically make a sub in my head for the homemade version.

Also, please note…there is a difference between “processed” and “prepared”!

When I say “processed” in this context, I mean foods with ingredients I cannot pronounce: Velveeta, stuffing mix, Hamburger Helper. Prepared foods such as “canned beans,” “canned tomatoes,” or “ketchup” are easily made yourself or found at the grocery store with no added ingredients. A can of beans from the grocery store usually includes: beans, salt and that’s it. So, don’t be sending me hate mail about “You big fat liar! Canned tomatoes are processed food!” Yeah I know, but technically, so is anything you cook in your home because cooking is PROCESSING. Just so we’re clear. 🙂 **Comments on this post have been disabled because of nastiness – ain’t nobody got time for that.**

Mostly these Crock Pot recipes call for good, wholesome ingredients like meat, vegetables, broth and seasonings. And the results are meals so delicious that they make you wanna slap yo mama (if you’re not from the south, please know that’s a good thing).

Some of these recipes are mine and some are from other bloggers. I hope you enjoy the list, and that it’s a good resource for you. And if you like this post, you’ll likely enjoy my post of 100 Crock Pot Dessert Recipes and 100 Days of Meal Plans Whole Foods Style as well.

And while I’m thinking of what you might like, I’d bet you’d enjoy my books: Keep Crockin’: A Poorganic Slow Cooker Cookbook and Crock On: A Semi-Whole Foods Slow Cooker Cookbook – both are available in print or as eBooks. 😉 Shameless book plug.  Okay…ON TO THE RECIPES!

Vegetable Casserole

Vegetable Casserole

Casseroles are true comfort food. Something about a delicious, warm, creamy food just makes you want to feel better. And if you’re feeling fine already, you can still eat it – because there is no such thing as feeling TOO good.

BUT, down here in the south almost every casserole calls for multiple cream-of soups…and French fried onions…and Velveeta. So, when I see a casserole recipe, I make it my personal mission to whole food-ize that thing…and food-ize is not a real word. Whatever.

Sometimes I just go with the recipe and use homemade cream-of soup mix instead. But then sometimes I turn into a rebel and I totally remake that recipe. I live on the edge. So, in this installation of Cooking Through Stacy’s Stash we’re tackling a casserole. Take THAT, French fried onions! [Read more…]

Spinach Supreme

Spinach-Supreme

I’m really enjoying sharing this new series, Cooking Through Stacy’s Stash, with you guys. It lets me look through all my cookbooks and pretend like it’s work. “Well gosh – I guess I’m just going to have to spend part of the day reading my cookbooks…again. Sigh. This is such a hard job. Please pass the chocolate.”

But reading cookbooks seriously makes me hungry. Same goes with Pinterest. When I look at Pinterest, I have to have a snack. Does that happen to anyone else? Like right now I’m just thinking about Pinterest and I need a snack. Blast that Pinterest. [Read more…]

Crock Pot Caramelized Onions

Crock Pot Caramelized-Onions

First off, let me tell you that getting an appealing picture of caramelized onions is a hard job – a job at which I did not succeed.  Bummer. It’s as hard as Stacy trying to caramelize onions in the skillet without burning the snot out of them. I burn stuff a lot.

I had a 3 pound bag of onions in the fridge that NEEDED to be used…or else they were going straight to the trash without passing Go and collecting $200. I saw a recipe that called for caramelized onions and I thought I’d just try them in the crock and see how they turned out. Bingo, baby. Bingo. [Read more…]

Crock Pot Butternut Applesauce

Crock Pot Butternut Applesauce

I have a love for butternut squash. You can incorporate them into so many normal dishes – I take it as a challenge to have a bunch of squash to use up. Once you get them cut up  there is a host of things you can make:

Butternut Ice Cream

Moroccan Chicken Stew

Creamy Potato Soup

Butternut Apple Bake [Read more…]

Crock Pot Spicy Black Beans

I love beans. They’re good for your heart. The more you eat them, the more you….uhhhhh. Yeah.

I always try to keep beans on hand in the freezer. It’s nice to have them at a moment’s notice for recipes like nachos or soup. I’ll make up a big batch in the crock pot and then freeze them in 1 ½ cup portions (the equivalent of one can).

But we also like having beans with cornbread on Meatless Monday. I served these fresh out of the crock with cornbread for dinner – and then I froze the rest for use at a later date. They are SO GOOD. I love beans…they’re good for your heart, remember? [Read more…]

Veggie Tuna Pasta Salad

(Note: I forgot to post this before I went on maternity leave..and now it’s autumn – so bear with me. Ha!)

In the summer months, I have a hard time making hot food. I just don’t want to eat it. I want to eat ice cream and pudding…sandwiches and watermelon. I hate heating up the kitchen. This year it’s worse since we’re still saving up for a heat pump – so when I cook, the entire kitchen warms up to a balmy 95 degrees. When you’re 8 months pregnant, that feels more like 150 degrees.

I try to make salads and sandwiches when I can. We survive on them in the summer. I created this delicious salad using veggies I had in the fridge. Yes, you do have to cook it but then you eat it chilled – and since you only use the stovetop, it doesn’t make the kitchen too hot. Nice. [Read more…]
