Crock Pot Chicken Fajitas

Oh. My. Word. These are amazing. Actually, amazing doesn’t even cover it. They are stupendous! Spectacular! Dreamy! Totally Tubular! You want to make these soon. Very soon. In fact, you’re already too late. Gosh, you’re so slow……cooker. Slow cooker, get it? Okay, sorry.

Easy to assemble and a breeze to cook in the crockpotI found three marked down peppers at Food City so I knew immediately I’d make fajitas with them…..then I decided to use my crockpot too. Y’all are sure bossy and keep asking me for more crockpot recipes. GOSH! The color of the peppers doesn’t matter, but the orange and yellow sure are pretty. You also need an onion, chicken, chicken broth, chili powder, cumin, salt, lime juice, tortillas, and tortilla fixings…really simple stuff that combines to make something totally tubular. You can count on hearing that at least two more times today.

It helps them not disintegrate in the crockpot…..or something like that. Actually, it just makes it easier to serve – and it’s easier to slice than chop. Unless you’re like me and have a stinking awesome Slap Chop.

Easy to assemble and a breeze to cook in the crockpotThrow your peppers and onions into the bottom of your crockpot (grease it first) and put your chicken breast on top. I left mine whole because I knew I was going to shred it. I just like shredded chicken. Most fajita recipes tell you to slice the chicken…..and you can do that if you like, but I like to be different……or weird. One of those.

Normally you don’t add water to a crock pot recipe, but I wanted to make sure there was plenty of moisture down in there. It really helps the chicken be nice and moist….no one likes tough chicken.

I just used bottled lime juice since I didn’t have any fresh limes. If you do, you’re totally tubular. It was probably one or two tablespoons that I squeezed in there. It really gives it a great flavor. I should grow a lime tree. I should grow any tree……actually, I should just grow SOMETHING.

It’s going to make your house smell good all day long. You’ll get belly growls. Your child will chant “Yum, yum!” all day long. Your neighbors will come knocking.Instead of standing around and twiddling your thumbs, waiting for it to be done, why don’t you make up a batch of homemade cleaner and attack the floor? I hear that works for some people.

Yes, I realize this looks nothing like something you would want to serve for dinner. It looks like something that’s been on the buffet line too long. It’s not burned…..it just looks burned. Well, I hope yours isn’t burned. Mine wasn’t.

Oh yeah, baby. Come to Mama! Stir the meat back down into the juices and veggies.  Serve it with a slotted spoon. I used my spaghetti spoon and it worked great.

You’ll make a big mess while eating it. I served ours with rice and just let my juice drip on the rice, making it delicious and totally tubular. This isn’t something you want to serve on a first date or if you’re trying to be prim and proper….it’s something you want to serve to your best friend who doesn’t care if you’re still in your pajamas at 6pm. They are really great leftover too. I took a big ole bite of cold meat before I warmed it up and it was so good I almost stood at the counter to devour the bowl cold.Totally Tubular.

Crock Pot Chicken Fajitas

  • 1 yellow onion, sliced
  • 3 sweet peppers, sliced
  • 1 ½ pounds boneless chicken breast or thighs
  • 1/4 to ½ cup chicken broth, depending on preference (leave this out if you prefer a drier fajita filling)
  • ½ teaspoon salt
  • 2 tablespoons cumin
  • 1 ½ tablespoons chili powder
  • Squirt of lime juice
  • Tortillas
  • Fajita fixings
  1. Combine sliced onion and peppers in the bottom of a greased crockpot.
  2. Lay chicken on top of veggies.
  3. Pour chicken broth over top.
  4. Sprinkle everything with cumin, salt, and chili powder.
  5. Give a nice quirt of lime juice over the top.
  6. Cover and cook on low for 4-8 hours (or on High for 4 hours) or until meat is shreddable.
  7. When meat is done, shred with two forks and stir back into juices. Serve meat mixture with slotted spoon on tortillas with your choice of fixings.

NOTE: You can forgo the salt, cumin, and chili powder and instead use Homemade Taco Seasoning or Homemade Fajita Seasoning. If you want to use a pre-made seasoning, try Holgrain Fajita seasoning from Vitacost – it’s free of MSG and it’s non-GMO.

    This meal is DELICIOUS! I did not use lime juice but i did put some cooked rice in the torillas before serving it was full of flavor & my family loved it! Leftovers were just as good i have made this easily 20 times & it doesn’t get old!

    For some reason, the font is either too large or the margins are not wide enough. Parts of the words on the right side are cut off. I looked at the Beef Fajitas recipe and it is fine. Is there anyway you can fix that? The one that is a printable recipe is the same way.

    Made this tonite..it is really yummy! I’ve always made this the same way but on the grill or on stovetop saute pan. I like your way better. This makes it much more tender & with less steam in my face!! I did however make them in the OVEN in my small covered roaster (a dutch oven pan would work too) instead of crockpot. Didn’t change a thing, worked fine. Served it with black beans & “fixins”…I didn’t even use a tortilla…tasted great just piled on a plate!

    These were delicious! Made about 5 lbs of chicken breast and used 4 tbsp chili powder, 3 tbsp cumin. Perfect – very flavorful. Skipped the peppers and will add veggies as I use it up throughout the week!

    I made these a while back & were absolutely delicious! It looked like too much seasoning at first, but tasted amazing. I am glad you showed what the picture of the chicken would look like. I was a tad concerned! 🙂 This by far is my fave fajita recipe! Thank you for sharing. It’s in my crock pot as I’m typing. 🙂 Yum!!

    I hate to admit it, but your meals are still processed. You got store salsa, broth and tortillas. To make this truly unprocessed you have to make your own salsa from scratch, your own broth(which is easy), and your own tortillas.

      This recipe doesn’t claim to be free of “processed” foods. It can easily be made much more whole foods (and I do it that way all the time nowadays) by doing what you’ve said. When I wrote that post back in 2011 we were still very much on the journey toward healthy eating ourselves. I want to encourage everyone out there to take the journey for themselves. Too many are quick to condemn because someone hasn’t learned to be whole foods (or can’t afford to be), and I try not to be that way.

    We just had these for the first time! We skipped the tortilla (I’m going Gluten Free for medical reasons) and put fresh cilantro, fresh lime, avocado and sour cream on it… they were a HIT. I subbed pork for the chicken. Thank you SO MUCH for such an easy to follow, tasty recipe!

      My husband has Celiac Disease, so we use 100% corn tortillas. They are naturally gluten-free. There are also some great GF tortilla options available today (teff is a common flour used for them), that may not have been a year ago.

    I’ve made this before and it’s in the crockpot again for dinner. Oh my word is it DELICIOUS! Yes, it is a bit soupy, but if you use a slotted spoon it works great! Plus, with the broth and extras you can just eat it as soup. So yummy! Thank you for the delicious meal!

    Really? With all that seasoning it was bland? That’s odd. Hmmmmm. Yes, frozen breasts would definitely make more liquid. I always serve mine with a slotted spoon. 🙂

      Had an awesome meal thanks to you Stacy. I found that adding 2 spoonfuls (not heaping ones, enough to coat the spoon) of salt really brings out the flavor of the seasoning. It’s all there but, there’s just not enough salt. MAKE SURE TO TASTE WITH EACH ADDITION OF SALT! This should help Laura’s and Kristina’s problem. As for Kristina’s cumin tasting like dirt issue, have you tried cumin seeds in place of ground cumin? Not sure if that would help but, worth a shot. Also you could maybe Oregano? The dried leaves that come in a little packet. My mom usually adds that when working with cumin.

    Tried this tonight for the first time and i am not sure what i did wrong(im assuming its me since this has so many great reviews!!!) but it was very bland! And soupy….so i think i will try again but not use any broth. I did use frozen chicken breasts so i am sure that added to the soup part!

      I agree. It was rather bland. I didn’t use frozen, only fresh. Cumin doesn’t really do it for me though. It tastes like dirt… which isn’t really a commentary on this recipe, but more about the spice itself. I use cumin in my chili recipe, but it doesn’t have that dirt flavor since there are so many other flavors working there. This needs some other flavors as well. Not sure what though. I chalk it up to personal preference since clearly there are many here who really enjoy it!

        I agree I found this recipe soupy and bland . I think frying up the shredded meat in butter with more lime might do the trick. …and mix in cilantro . I see all the positive reviews and I’m surprised by them. Alone the meat is not bad and soft but it does not have a intense flavour that you expect in fajita meat …

          Oh I’m sorry you feel that way! It is true that you can’t truly get a real grilled fajita taste from a crockpot, but I think with all the cumin and paprika – these do have a strong smoky flavor! And there is a note in the recipe to leave the chicken broth out if you prefer a drier fajita filling. Thank you for taking them time to comment 🙂

      The very first time I made this I panicked because after going in to shred the chicken, it was VERY white and, my worst fears were confirmed when I went for a taste. Super bland. IT’S OK THOUGH! I remember it having too much liquid. So I dumped some out and, mixed in the shredded chicken, still no taste. That’s when I added a little salt, mix, taste. There’s some flavor starting! Salt, mix, taste. Don’t add a lot! Just small amounts till that flavor starts to peak through. Then keep the chicken sitting in that now flavorful juice. Yummmmm! I’ve got some cooking now.

    I made this recipe last night and my husband and I both agreed – it was wonderful! It was not over spiced – but perfectly spiced! I love how easy it was! BTW, I added a tsp. of cinnamon to the spices. (I love a hint of cinnamon with chicken.) I am going to be making this again and again. Now I must look at your other crock pot recipes and see what else I can find. Thank you so much for sharing this recipe.

    I stumbled across this recipe several months ago, and it’s been in the back of my mind to make it since then. I recently moved back in with my family, and now that I have a lot of people to cook for, I figured today was the day to make this!!     Thanks so much for the recipe! I have never had my peppers and onions turn out as perfect as they did in the crock pot in these Chicken Fajitas. I did have less time to cook it so I used chicken tenderloins and cooked it on high for 2 hours, but it still turned out great! I look forward to trying some of your other recipes!

    Hi Stacy-

    I’ve been trying to use my crock pot more so I can’t wait to make these tacos! They look awesome! I used to use the “two fork” shred method too but I want to pass along a trick that I learned recently. Just to save you a bit of time and effort, if you put the cooked chicken in your stand up mixer with the paddle attachment – it will shred it beautifully!!! I haven’t tried it with other meats but I’ll bet it would also work just as well. Happy cooking.

    I make these all the time. I use 1/4 can chicken broth and 1/4 can enchilada sauce as wella as cumina and garlic salt and they are super yummy. Great as chicken tacos :)I love your site thanx

    Love this! I bought two packs of chicken breast which amounted to 6 breasts. ( I have two teenage boys). I left other ingredients the same. It was great! Chicken shredded perfectly. I made a rice,corn, black bean, and cilantro as a “fix in” and refried black beans and sour cream, my 17 year old said it was better than Chipotle!! Thanks sooo much! God Bless!

      That’s not a dumb question at all. 🙂 I prefer to freeze it AFTER I’ve cooked it…because then I just have to thaw and eat – and sometimes I need a quick meal. But you could likely freeze it before with all the spices and just add the peppers fresh.

    Wow, I can’t believe all the complainers! Lol. Cooking is an art, ladies! Recipes are meant to be guidelines, not rules. If it didn’t work the first time, tweak some amounts and try it again! 🙂 I didn’t measure anything, and I baked it in the oven at 375 for ab an hour and I have to say, I’ve never made anything quite so delicious before! I don’t know what could really even go wrong w this dish. It’s the easiest recipe, it took maybe 5 mins to prep and everyone at my house loved it! Thanks for sharing! Making it for the second time tonight and I can’t wait till dinner time! 🙂

    I have these in the crock pot right now, and it smells SO GOOD! I have a feeling it will be well worth the tears I got while cutting the onions. I also didn’t have cumin, but I used regular black pepper and chili powder. I did have fresh limes, too.

    I cannot wait to eat these for dinner!!!

    many of the comments indicate that 4 hours is the perfect time frame for this recipe. is that 4 hours on high or low setting? also wondering if using frozen chicken breasts would change the cooking time?

      The time really depends on if you use thawed or frozen and/or chicken breasts, thighs, or tenders. I think tenders cook in 4 hours on low. 🙂

    cook for less time guys. if you like your veggies still crisp/not mush it’s obvious that you wouldn’t want to put them in the crock pot for 8 hours. put in veggies closer to when the chicken is done. duuurrr.

    For once I read that an Old Crockpot is where it’s at. YaY! Because mine is at least 15 years or older. Knowing that I will have to try these. They look & sound Delish! Usually only drag my crockpot out to make meatballs or bar-b-q smokies for a party. I have never actually used it for cooking an all day meal. I can’t wait. 🙂

    I Love these! Super easy and good! Not very spicy at all though if you like that, you might want to add something. I usually add the veggies during the last hour of cooking, just on top of the chicken. Mine also cooks a lot faster.

    For the newer crockpots and the problem of having mushy veggies is to foil pack your veggies and put them above the chicken..then about 20 minutes before serving to unwrap and add back to the shredded chicken. Mmmmm perfect veggies.

    They were amazing!! Next time I think I’ll throw in some jalapeños to spice it up a bit. So glad I tried it!! For those saying the chicken was dry or the veggies were mushy, cook it for less time. I only did it for 4 hrs. The chicken was moist and the veggies were crisp.

    These are great and not hot at all to us. My kids love them! My husband adds jalepenos and hot sauce to spice it up a bit. I think people have a very different idea of spicy. My friend & her family think pepperoni is too hot and will not eat anything with a spicy taste at all!

    I made these tonight and the whole family loved them!!!!….well, my oldest managed to pick through the taco and find the very small pieces of red pepper and freaked out, but everyone else was very satisfied! I loved the flavor. Loved that it was so easy to put together, although I added the seasonings before the chicken broth….no biggie. I checked on it about 4 1/2 hrs in and there was a lot of liquid, so I scooped some out. Thanks so much for this recipe! We will definitely be making it on a regular basis in my house:)

    I absolutely LOVE, LOVE, LOVE this recipe! It is a staple meal at my house for everyone in it- my husband, myself, our little girl (17 months), and our dog, too, when she finds scraps on the floor 🙂 The first time I made this, my husband thought it was my personal recipe and even though I wanted to take credit, I told him Stacy made it. I guess this is why Stacy is his favorite cook. Ha! 🙂 I’ve followed the ingredients step by step and have found it to be easy to make and can’t believe how great it tastes!     I was not impressed by this recipe at all. It was easy but thats about it. The liquid was wayyy toi much and i couldnt eat them in a tirtilla because it just got soggy and dripped like crazy. I even pressed the chicken to get as much moisture out as i could but by then all the spice flavir was gone. It tasted like bland chicken and mushy veggies. Definately not reusing this one.. sorry.

    I just would like to say that this is a favorite in our home. My toddler and my 7 year old eat it up like nobody’s business. My husband has an unusually sensitive stomach and even he can eat this with no problems. We usually have leftovers and the next morning I toss it in the skillet with some eggs and BAM! awesome breakfast burritos! Thank you for a totally tubular recipe 🙂

    I came across this recipe this morning, and I happened to have a lot of sliced peppers left over from NYE. I threw all of the items together in the croc pot before church, and it was ready for lunchtime! It was a hit, and it cooked rather quickly, since I used little breast tenderloins.

    Unfortunately this was way, way too hot for our family. I stirred through a cup of sour cream and it was just bearable for me and my husband, but the children had fish tacos instead 🙁 I had only used half the chilli and cumin suggested. Did no-one else find it hot??

      I’m sorry you guys found it too hot. We like hot food, but I’ve never particularly thought this dish was hot – maybe I’ve just trained myself. 🙂 But my 3 year old eats the meat happily.
      Maybe next time use homemade taco seasoning instead?

    Way, way too hot for my kids, I can still feel my mouth burning! Had to throw some fish on the barbecue as there was no way they would eat this. Very disappointed. And that was with just half the spices you recommended!

    These were flippin’ AWESOME!!! Splorped everything into the crockpot around 10am and had delicious delicious chicken fajitas (or were they burritos?) at 7. I accidentally left out half the cumin but they were still delicious, and to make it even easier on myself I used a bag of pepper stir fry veggies I found tucked away in the freezer (score!). The chicken just fell apart when I tried to take it out, it was beautiful. Served it with my copycat Chipotle lime-cilantro rice, plus fajita/burrito fixins of course. This one got moved over on Pinterest from my “recipes” board to my “favorite recipes” board. YUM!!!

    I’m laughing because I just made 8 batches (7 to freeze) of chicken fajitas for the crockpot, very similar recipe. I’m crying because I sat around and sliced up the chicken for an hour rather than tossing in the breasts whole & shredding them. Oh, bother. Thanks for sharing!!

    I read all the great reviews and was sooo disappointed in this dish. The spice combination made a broth that tasted rather bitter and unappetizing. The veggies were just a mushy mess. I ended up making a queso sauce to drown the chicken in to make it palatable. Maybe my expectations were too high but I believe I can do better than this.

    Made this for dinner last night on the recommendation of a fellow Pinterest-obsessed co-worker. Husband and I loved it although the recipe generated a lot of liquid. I used about 1/3 c. of chicken broth and will definitely reduce that to 1/4 c. next time. The chicken could easily be served over some brown rice in place of the tortillas. A definite keeper!

    Do you really need to cook it for 8 hours? I’ve been lowering the cooking time on my chicken recipes in the crock pot because I’ve found that 8 hours is just way too long. It’s usually done in 4-5 on low(if not less…I use only breasts that are not frozen). Thanks!

      No, it will usually be ready before that – depending on the thickness of the chicken. 🙂 Just cook it until it shreds. I usually cook things for 8 hours because it’s that long before I can get back to it (and most people who work) – in those cases, it’s fine after 8 hours.

    I made this a few nights ago and it was a big hit! Instead of searving on tortillas I did a Moe’s/Chipotle style “Burrito Bowl.” I served it in a bowl of rice, pinto beans, corn, cheese, lettuce, sour cream and cilantro. We are only a house hold of two adults but we had dinner two nights in a row and had enough meat to freeze for another dinner in the future.

    Awesome! I made it and served it initially the way your recipe instructed w/tortillas etc. Served it with beans and rice. Next day I ate it in a bowl with beans and rice (like chili), today for lunch I heated some of the chicken and threw it in my salad — I could eat this all the time!

      I would assemble it all the night before minus the liquid…then put it in right before you turned the crock on. 🙂 Several people above said they used fajita seasoning and it worked great.

    Looks sooo good! I do something very similar with whole chicken breasts, a jar of salsa, and a taco seasoning packet. In the crockpot on low for 6 hours, then shred the chicken. We make tacos out of it, or put the chicken over white rice. Delicious!

    I made this last week, and made a mexican lasagna with the left overs. It was delicious! I drained the liquid off the meet, added an egg to help hold it together. Poured some of the chicken in the bottom of 9X13 pan. Layered 2 tortillas over the top. spread refried beans on the tortillas, added another layer of chicken and some shredded cheese. I repeated this until I had 3 layers total. Covered the top with shredded cheese. IT WAS AWESOME! Such an easy way to use ingredients I already had in my cupboard! Thanks for sharing your recipe so I could discover this awesome way to use my leftovers! Trying it again this week without the onions and peppers and then using the meet to make enchiladas.

    I love fajitas so I just knew I had to try this and I’m so glad I did because it was AWESOME! This was out first time using our Crock Pot and my family loved them. We made a few adjustments to the recipe like using lower sodium broth and adding some garlic and the flavor was still amazing! I’m excited to try other Crock Pot recipes on your blog.

    I made this recently for a group gathering and it was soooooo good! I did have quite a bit left over, so I drained all the juices and put the leftovers in the fridge. The next day I threw it back into the crock pot, added a jar of homemade salsa and a large stick of velvetta cheese, let it warm up and served it with chips. It was a HUGE hit!     This is truly one of those dishes that makes everyone at the table mumble “ohmygoodness!” the whole time they’re eating. Which, in my house, is remarkable. My kiddos are super picky and my husband hates onions, so I figured he’d turn up his nose before even trying it. I did brown the onions first and they turned into caramelized bite of wonderfulness, so he might not have even noticed them. I also used my electric pressure cooker for this and it was done in 30 minutes flat. Bravo!!!

        Pressure cooking is fast, easy and most of all healthy. Learning to use your pressure cooker is all about using it over and over until you are comfortable, you might find someone in your area( church, moms group etc.)to show you and assist you the first few times you use your pressure cooker. You will be surprised at how quickly you become a pro.

    i made this tonight and i loved it! More importantly, my picky eater daughter loved it as well. I can’t wait ’til the other one gets home from swim practice to try it. I cooked on high for 4 hrs. and only used one red pepper out of fear someone would complain about too many peppers. I also added one drained and rinsed can of black beans half-way as my daughter said that would be ok. The only bad thing is that i did not double or triple the recipe!

      🙂 It’s not something you buy…it’s just personal preference on how you “fix” your fajitas. Do you use sour cream? Cheese? Lettuce? Those are “fixings.” So, it will vary with each person what their “fixings” are.

    On pintrest I discovered you can shred chicken using your Kitchen-aid mixer. Put the cooked chicken in the mixer bowl and use the regular beater attachment. “Mix” on low in no time you have shredded chicken! I’ve tried it several times and I’m amazed each time how quick and easily it works! This recipe looks amazing. Can’t wait to try it.

    I have mine in the crockpot right now. I added fresh roasted tomato salsa as the liquid instead of the broth, so we will have to see how that turns out :). I also added a jalepeno. Love the crockpot since I’m in Texas and it’s hot EVERYDAY, and any great recipe to put in it. Thanks for the great post. I think I’ll try the black beans as well.

    Made these tonight and they were very yummy! Put it all together in the crock pot the night before, then took it out of the fridge and turned it on the next morning, and had dinner ready when we got home! My husband (a very picky eater) said they were very good and went back for seconds!!

    Great recipe! I plan to make it as you direct, but add the peppers/veggies in the last couple hours since I like crisp veggies. I like to toss in shredded carrot, chopped zucchini &/or yellow squash, or corn (whatever I’ve got on hand) when I make fajitas. (Husby doesn’t eat enough veggies, so I sneek them in anywhere I can, plus it makes the meal go farther!) Thanks for the nice blog!

      It really depends on appetite and how much meat you use….my husband eats two but I only eat one. I usually get around 10 fajitas from a batch. I’d give it a trial run first and see what you think. 🙂 Happy Birthday to your daughter!

      I have also used a hand/cheese grater for shredding pork and I imagine it would work with chicken as well. I want to try out the potatoe masher as it is probably cooler and cleaner on the fingers.

    These are “amazing”, and so easy to fix. Whole wheat tortillas,and my fixins included shredded lettuce, diced tomatoes, avocado, and shredded Swiss cheese. (I have to be mindful of salt, and Swiss is lower in sodium than most cheeses, so I usually have it on hand). It’s a keeper recipe. Wonderful flavors.

    So I have tried this twice now the first time I followed the recipe exactly and it was way tooo watery for us, So the second time I didnt put the chicken broth in it and it turned out much better! It is a great recipe will make this a regular recipe in our house!

    Oh my goody goodness! This was delicious! I saw this recipe on pinterest and couldn’t wait to make this! I finally made it a week later on my rainy day off and my dad smelt it cooking when he went to check the mail (my parents live next door) he in turn told my mom how amazing it smelled and guess who showed up for dinner?!     It was absolutely phenomenal!!! I served it with warm
    Tortillas and sides of sour cream, salsa, guacamole, cheese, rice and corn. I even gave some of the shredded chicken to my almost one year old!

    If you have a stand mixer, it will shred chicken – just take the cooked chicken breasts out of your crock pot at the end of the day, throw them in the mixer for a minute, and they’ll be completely shredded. It saves time, lets me get other parts of dinner ready while it shreds, and saves my wrists from getting sore from the shredding!

      Sometimes cooking meat or veggies from a frozen state can add more moisture…so it’s a good idea to cut back on the amount of liquid. 🙂 I’m so glad you enjoyed them!!

    Trisha and Stacy, I am on a diet and have a recipe calculator that totals up the calories for me. Without the tortilla’s and fixings, and based on 4 servings total, ( although I’m pretty sure it makes more than that, lol) its approximately 132 calories per serving, 0.7 grams fat. Excellent recipe by the way. I am trying it tomorrow! It’s one of the few enjoyments I can have on my diet. Thank you!

        Yea! This was so yummy. I made a double batch, and there is a lot left over… everyone liked it, from my 18 month old on up. I hope it freezes well. I used Mission brand artisan tortillas. The muligrain were better than normal tortillas, and the ancient grain version was even better. Not sure if I’ll ever buy normal tortillas again.

      I think they’d be just fine! I wouldn’t re-heat in the microwave though…sometimes it makes things a bit soggy. I’d try using the oven. 🙂

      Sarah, I’ve never tried that but it should work…..since it uses about 4 tablespoons total of the other ingredients (salt, cumin, and chili powder), I might start with three tablespoons of fajita seasoning and see how that is. If it’s not strong enough, you could always add more after it cooks. Good luck!

      It really depends on the size of your crock. If you’re using a larger crock pot, it should take the same amount of time. I used a 5 quart crock…hope that helps! If you’re using a 5 quart too, go ahead and check it after 8 hours to see if it’s done – it might be! The chicken has to be very well done in order to shred. 🙂

      You know, I’ve never tried to freeze it. I just fix it as we want it…which is often. LOL 🙂 I’m not sure how the already cooked peppers would hold up. But you could try one batch and see…I’m pretty sure it would still be edible even if it wasn’t pretty. 🙂

    Great recipe, I want to try it out tonight! Just a quick question, how spicy is this? I’m not accustomed to cooking with chili powder and have no idea if it’s mild or not.

      It’s not too spicy…you can add heat or take it away based on your preference. 🙂 I like hot food, but have to keep it semi-mild for my toddler.

    I know you posted this a while ago, but I just found it this weekend on Pinterest. Put it all in the crockpot yesterday morning and had it last night. It was delish!!!!!!!!!!!!! I love fajitas anyways, but these were, by far, the best fajitas ever. THANK YOU so much for sharing this recipe!

    Just finished eating this and it was pretty good (cooked on high for 4 hrs and it did great). For our own taste we may add more seasoning next time, and more peppers- they really reduce down. Thinking about using leftovers for Chicken Fajita Soup…any suggestions?

      Yes…cooking for long periods in the crock makes them very soft. If you wanted them crunchy, you could just add them in the last hour of cook time. 🙂

    This looks so tasty and i am sure my family will love love love this! I am really interested in freezer meals and was windering if you think this would be a good “crock pot freezer meal”? I would hate for something this yummy to turn to mush.

      I’m not sure how the peppers would do once they were already cooked and then frozen….but you could just do the chicken part and then add the peppers when you were thawing to make for dinner – that might work. 🙂

        I’ve never done it that way – it would require longer cooking time and might be hard on the peppers…but maybe not. 🙂

    So you use liquid to make these juicy buttttt I actually don’t like juicy. Can I omit the stock and just let the natural juices of the veggies make it slightly juicy? I plan to use a can of Rotel tomato and chilies with lime in lieu of the lime juice? Thoughts on how your experience might dictate how my tweaking might turn out or better yet, thoughts on how to make it less juicy but yummified?

      🙂 I like my chicken very juicy, so that’s why I cook it with a bit of stock. However, I serve it with a slotted spoon or spaghetti spoon to get rid of most of the juice for serving. I think it would be just fine if you omitted the stock, especially if you are using a can of Rotel. Good luck!
