Crock Pot Easy Chicken on a Bed of Root Vegetables

This Crockpot Easy Chicken on a Bed of Root Vegetables is so incredibly simple, yet it’s full of all the goodness you would expect from a meal that’s been slaved over all day.

When asked what your favorite thing is about the cooler weather, everyone in my neck of the woods starts talking about football and pretty leaves, I generally pipe off with, “I love crock pots!” I get some pretty funny looks and the occasional polite giggle. But I don’t mind. While they slave away in the kitchen, I’ll leave my maid – Miss crock pot – to do all my work while I watch the snow fall outside.

This is one of my favorite recipes because it’s so incredibly simple, and yet, it’s full of all the goodness you would expect from a meal that’s been slaved over all day. Not to mention, it’s man friendly – meat and potatoes. The husband loves that.

For this recipe you will need: chicken, potatoes, carrots, green onions, pepper, cloves, garlic salt, oregano, rosemary, lime juice, and orange juice.

You start by washing all your veggies and slicing them up, and adding them the pot. You can peel your potatoes, if you want, but it’s not necessary. I have no idea why I peeled mine. It was a momentary lapse of judgment, and I’ll claim momnesia like Stacy does. Works for her.

Then, you rinse your chicken, I used whole chicken legs, but you can use whatever you want, and pat it dry. I forgot that step, but it’s good to remember, if you can. I have no idea why. That’s just what “they” say to do. Add the chicken to the pot. Right on top of your veggies. I may or may not have done this right the first time. I might have put the chicken in first and piled the veggies on top. But then when I thought about it (this can be dangerous, me thinking), I realized that the chicken is supposed to be ON the bed of root vegetables not UNDER the bed of root vegetables, and I might have dug my chicken out. Regardless of what I may or may not have done, plop your chicken on top and move on to the last step.

Finish with dousing your chicken in seasonings – garlic salt, pepper, oregano, parsley, and whole cloves – and pouring your lime juice and orange juice over the dish.

That’s all there is to it – Crock Pot Easy Chicken ON a Bed of Root Vegetables. Serve it with Stacy’s Freezer Biscuits and some fruit! You’ll have your family singing your praises  – promise.

Crock Pot Easy Chicken on a Bed of Root Vegetables

  • 5 potatoes, sliced into rounds
  • 3 green onions, diced
  • 3-5 carrots, sliced into rounds
  • Whole Chicken legs
  • Freshly ground black pepper, to taste
  • 1 Tablespoon whole cloves
  • 1 Tablespoon garlic salt
  • Tablespoon dried oregano
  • 1 teaspoon dried rosemary
  • ¼ cup of lime juice
  • ¼ cup of orange juice
  1. Layer all vegetables on the bottom of your crock pot.
  2. Rinse and pat chicken dry. Place on top of the bed of root vegetables.
  3. Season dish with pepper, cloves, garlic salt, oregano, and rosemary.
  4. Pour lime juice and orange juice over chicken. Cover.
  5. Cook on low 6 hours.

    Ever tried this with other root veggies (parsnips, turnips, rutebega?)? In my experience they are a bit thought so wondered about adjusting cook times. Seems appealing as is, but I find these other veggies are a bit more challenging to incorporate into meals so I look for ways to try.

    I love your “no-processed” recipes and have been trying a few out.
    This one I can’t make my mind up about! The chicken was very moist and delicious, mine only needed to be cooked for about 4 hours. But the carrots and potatoes on the bottom were a little too… sour? Hard to place the taste, too much citrus. A little more tweaking is needed for my taste. Do you think if I did all OJ instead of OJ + Lime it would turn out a little less sour? Good though and have been asked to make again!

      This was a guest post for me, but I can tell you that I almost always leave lime juice out of recipes because I don’t like the citrus taste. 🙂 Glad you liked the chicken part!!

    This was delicious–thank you! I really appreciate the no- or minimally processed crock pot recipe. One note: don’t wash your chicken. (Yes, I know, my mother told me to do it, too!) Washing poultry is more likely to spread bacteria around your kitchen. It doesn’t get the bacteria off the chicken, though, and the heat kills the bacteria, so skip the washing-and-patting (and no more struggling with the Thanksgiving turkey, either!). Thanks again for all your work and for sharing it.

    I’m hooked on these fix and forget crockpot meals. Recently fixed a batch of your wonderful Pizza Sauce recipe, bagged it up just like you said in individual bags INSIDE a bread bag. Now I just go to the freezer for my own instead of the canned stuff.

    This recipe sounds great too – can’t wait to try!
