In my opinion, This Crock Pot 5-Spice Chicken is the best way to use the unique Chinese 5-Spice Powder.

A few months back, I was at Ollie’s (a discount store kind of like Marshall’s or Ross but without the clothes and even messier) and stumbled across a little bottle of Spice Islands’ Chinese 5-Spice Powder. I don’t remember how much it was – maybe $1.99? – but I remember it was cheap. And I like cheap spices. So I bought it.

Problem was, I had absolutely no idea what to do with it! I had never before in my life made or even eaten anything (that I recall, anyway; I suppose there’s always the chance I ate it unaware) made with Chinese 5-spice powder. Crock Pot Easy, Creamy Lemon Pepper Chicken

Easy, creamy–and most definitely a comfort food, this simple and delicious meal is sure to please both guests and family alike. Without further ado, here’s today’s recipe for Easy, Creamy Lemon Pepper Chicken. I hope your family enjoys it as much as ours does! Serve this chicken over rice with a side of green beans or asparagus.

This recipe originally came from my friend Erin, over at the Humbled Homemaker.  And y’all always remember -t here’s  no reason to be scared when a recipe calls for cream of chicken soup, it is so easy to make from scratch. Good lemon pepper seasoning isn’t hard to find either. Trader Joes and several stores online (like Amazon) carry organic, MSG-free brands.

Using a homemade cream of chicken soup & lemon pepper seasoning, this Easy, Creamy Crockpot Lemon Pepper Chicken is sure to a be a winner in your family.on.

Creamy Lemon Pepper Chicken

  • 3-4 boneless, skinless chicken breasts (either frozen or thawed out is fine)
  • 1 recipe cream of chicken soup (equivalent to 1 can*)
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 2 Tbsp.+ lemon pepper seasoning*
  • 4 oz. chopped mushrooms
  1. Place chicken breasts on the bottom of your slow cooker. I don’t even grease mine, but you might if you are afraid of things sticking. Sprinkle chicken with lemon pepper.
  2. Mix soup, milk and 2 Tbsp. lemon pepper.
  3. Add mushrooms to soup mix.
  4. Pour soup mixture over chicken in the crock pot. Add chicken broth.
  5. Cook on low for 6 hours or on high for 4 hours.

Sometimes when I start out with a recipe, I have no idea where I’m going. I have a basic idea in mind….but usually my basic idea falls to the wayside. I was going with a traditional chili when I started, but then I decided to switch it up a bit and add some more color – then Calico Chili was born…..and I added the name Texas on it because I used stew beef instead of ground beef. When asked what your favorite thing is about the cooler weather, everyone in my neck of the woods starts talking about football and pretty leaves, I generally pipe off with, “I love crock pots!” I get some pretty funny looks and the occasional polite giggle. But I don’t mind. While they slave away in the kitchen, I’ll leave my maid – Miss crock pot – to do all my work while I watch the snow fall outside.

Crock Pot Sour Cream Cake Brownies with PB Frosting

Just because we’re having a cookie series doesn’t mean I can skip Fix and Forget Friday…..it just means I have to make cookies IN the crock pot. Brownies and bar cookies always rank really high on my list – especially if they’re gooey in the middle. Crock Pot Curried Sweet Potato & Carrot Soup

I’m just going to tell you, the name of this soup is really weird….and kinda gross. If I had seen it in a cookbook, I would have made a nasty face and passed it by as quickly as possible. Curried? Crock Pot Applesauce Cake

I’ve finally started delving into the world of sweets in our Whole Foods journey …and boy is it fun! Barry is relieved. I think he thought I’d never make another dessert. Now I’ve got dessert ideas churning around in my head all day long. It’s a happy place to be. Applesauce Cake has always been a favorite of mine. I like the strong cinnamon flavor and I love how it pairs so well with vanilla ice cream. Seriously – what doesn’t pair well with vanilla ice cream? I tried this version in the crock pot because I thought it would help for the holidays since it would free up your oven for doing other various things – like baking turkeys or ham. Crock Pot Stuffing

I think around here, people call this “stuffing.” That’s what I’ve called it my whole life….of course, I’ve always called it “pop” instead of “soda” too and I’ve been told that’s a Yankee thing. You can be certain that NO ONE will ever mistake me for a Yankee. *All the Yankees out there are nodding their heads* In other places, this might be referred to as “dressing.” But that seems odd to me, because dressing is what you put on your salad. I most certainly do not want a big side of salad dressing with my Thanksgiving turkey. Give me a big ole plate of this and I’m tickled pink. Actually, stuffing is my favorite Thanksgiving dish. I created this recipe to be cooked in the crock pot so that it would save some oven space on the big day. It’s not your traditional stuffing – meaning, if you were wanting Stove Top, this would not fit the bill. This is more of an old fashioned stuffing – nice and moist and all stuck together – not individual pieces of cubed bread. And man oh man, is it AWESOME! (PS – Sorry for the weird colored photo.
