I think I shall rename this post and call it: Don’t – stuff you shouldn’t do when trying to make a blog post.

Mama’s Homemade Pimento Cheese

Everyone has a comfort food or foods from their childhood. For you it might be Eggo Waffles…or sausage gravy…or chicken and dumplings…or circus peanuts. You know, I have it on good authority that if you eat too many circus peanuts when you’re little, that you might not be able to even look at them 30 years later. Or so I hear from OTHER PEOPLE. *Cough* Maybe that’s how I can cure all my children from wanting candy – let them eat it until they puke. Yep – good plan.

You know how you see those recipes all over Pinterest and the Internet and store magazines? Crock Pot Chicken Pot Pie Stew

All of the delicious flavors of Chicken Pot Pie without all of the hassle. It's the perfect option for an easy dinner since it's made in the crockpot.

Instead of a normal “this is how I do it” type of post, I thought I would do a more “behind the scenes” type of post. This way you can see what’s really going down around the Myers house. As you know, I’m all about keepin’ it real. I’m also all about chocolate and coffee…and sleep. But not dusting.

First off, I got the idea for this recipe when my friend Karen told me she was making it…and I said to her, “I bet I could make that in the crock pot.” And I DID. Crock Pot Roasted Red Pepper Pork Chops

When Barry and I brought home 231 pounds of pork, I was a weeeee bit overwhelmed. I mean really – I knew the pig was big, but maybe he should have been working out a bit more. My uncle raised the pig for us on the family farm – my neighbors have been cool with the chickens, but I really didn’t want to press my luck with a hog in the back yard.

We turned the 18 pounds of pork belly into homemade bacon, which is utterly fantastic. Now I’m working my way through the other 213 pounds. So…you might be seeing lots of pork recipes in the next year. You’ve been warned. [Read more…]

In the spirit of keepin’ it real, as I usually do, I’m gonna be honest. I don’t have time to write this post – but I still want to share a yummy recipe. It’s holiday time, I’m behind (better than BEING a behind), and Andy keeps chewing on wires. Soooooooooooooooo, you might see that a few posts here and there are a bit sparse – and that’s because I’m busying chasing around a 15 month old who currently likes to play in the toilet while his sister stands by and watches (partners in crime).

Crock Pot German Meatloaf

So, if you don’t have a thing for meat, this might not be the blog for you. Because really; I might be considered meat-obsessed. I get excited over different variations of meatloaf and meatballs. Sincerely excited. And yes, I realize that might be considered slightly pathetic, but that’s okay. I could be obsessed with worse things…like belly button lint or dust bunnies. And this thought just actually occurred to me, but do you realize that if belly button lint is left long enough, it could possibly turn into a DUST BUNNY? Wow. Now that will get you thinking.

But, I digress. We’re talking about meat, right? Yep. I love making meatloaf in the crock pot. If you’ve not tried out my other three versions: Traditional, Sweet Potato, and Cheeseburger, then you don’t know what you’re missing. Coconut Milk Chicken + Allergen Friendly Cookbook

There are approximately 4.5 billion ways you can cook chicken. And yet, it seems most people get in a chicken rut: chicken Alfredo, baked chicken, grilled chicken, blah blah blah. If you haven’t yet figured it out, one of my goals here is to get you out of your food rut – whether it be a side dish rut or a skillet meal rut.

Recently, I have a love affair with coconut. Not gonna lie, I’m putting it in just about everything: cake, granola, muffins, cake, eggs in coconut oil, cake, coffee, cake, and sometimes coffee cake. I’m also using a lot more coconut milk because I like sniffing it. I just like sniffing coconut in general. I think this might be getting out of hand – my mom is concerned. “It was pretty good – but there’s coconut in it again.”

Crock Pot Tuscan Chicken

This Crockpot Tuscan Chicken is really quick and easy to whip up. Just mix it all together, pour it on top of some chicken in your crockpot, walk away and come back at dinner time.

So, this recipe was born because I bought a jar of sun dried tomatoes – and then I didn’t know what to do with it. So, they sat in my basement for a while…until I almost knocked them off the shelf and broke them. Then I figured it might be in my best interest to use them so that I wouldn’t end up cleaning them off the floor.

I’ve never been to Tuscany – and I’ve never really had Tuscan food. I’m not even sure what makes it Tuscan…garlic? If you know, please tell me in the comments. And I know you do, because I have the smartest readers EVAH! But, I know that a lot of Tuscan recipes call for sundried tomatoes…and so, I call this Tuscan Chicken! Voila!
