Chicken with Cream Sauce

This recipe started out as a remake of the Pioneer Woman's Linguine with Clam Sauce and then morphed into its own thing... its own delicious thing. Drop what you're doing and go make this Chicken with Cream Sauce.

Embrace cream. Really. Try it. The jar is cold, but it feels good to make nice with your cream. It does such wonderful stuff: it makes ice cream; it makes BUTTER; it tastes good in coffee, and it makes THIS…Chicken with Cream Sauce. Go ahead. I’ll wait. Hug it. I dare you.

Y’all have requested more lentil recipes…and I can understand why. Lentils are just stinkin’ delicious…pun intended? Ha, ha! Beans, beans, the magical fruit! The more you eat the more you…uh, yeah. I digress.

Crock Pot Southwest Chicken and Rice Chowder

The first time I ate Southwest Chicken Chowder, I’m pretty sure I cried because it was so wonderful.

I’m not usually this dramatic about my dinner, but at the time, I was three days post-partum with my second son, exhausted, weepy, and starving. And this yummy chowder was a gift from my friend, Kate, who knows that bringing dinner to a new mom is about #3 on the list of ā€œNicest Things You Can Do for Anyone.ā€

I have made this many times since then. I don’t always shed tears of joy eating it, but almost. I love that this dish is yummy and allergy-friendly, as we manage multiple food allergies. It’s perfect for rainy days, cold days, hot days, basically any day you need dinner. Which here, is every day. We do not skip dinner. [Read more…]

Baked Chicken Salad

I like this Baked Chicken Salad hot, but my husband likes it cold. That means it's delicious no matter what!

When I was younger, I was stupid and didn’t like chicken salad. Silly how dumb you are about food when you’re little – makes me want to go back and smack myself. Chicken Italiano

This Chicken Italiano is a super versatile dish that is great served over rice or even by itself.

When I see a recipe that calls for ā€œcream of yadda-yaddaā€ I always take that as a personal challenge. It’s like that recipe says ā€œHey…hey, Stacy! Think you can conquer me?! I was made for casseroles, so think again, sista!ā€ Then, of course I have to make the recipe without the soup and then say ā€œBooyaā€ at least 4 times during dinner.

Crock Pot Red Chicken with Spinach

I dreamt this recipe up in my sleep. Actually, I probably wasn’t asleep. It was probably 3:30am and I was nursing. I do a lot of thinking while I nurse – and reading. But it’s hard to read in the dark, so I think about food instead.

This is a take off an Italian dish that my roommate Niki used to make in college – except it involved beef….and cream cheese. So, yeah – maybe this is way different, but still it’s where the idea started. Does anyone else’s thoughts start in one place and end up somewhere else? Barbecue Chicken Dinner Packets

We interrupt my usual Friday crock pot recipes to bring you another quick and easy dish from Meredith Kimelblatt of Ready Set Eat.

If you think of spring the prime season for fresh produce and salads, you’re completely right. But the warmer weather indicates something else too; the beginning of grilling season! As soon as it gets nice outside, cookout foods come right back into season, making spring the perfect time to whip out the grill and cook outside.

Grills are great for a few reasons: not only do they add amazing flavor to whatever you throw on them, but grilling is also one of the healthiest cooking methods out there. As opposed to pan frying, sautĆ©ing or deep frying, you don’t need loads of oil or butter to cook most meals on the grill. Many grilled recipes call for marinades, too, meaning you won’t have to add as many extras to chicken or steak since your meat will already be packed with flavor!

Crock Pot Creamy Turkey and Quinoa

Remember that kickin’ awesome recipe I posted for Jerked Beef Stew? I said that I thought it was totally awesome, but Barry was just ā€œokayā€ with it? Well, now the tables have turned. I was just ā€œokayā€ with this dish but he LOVED IT!!!

I have a love/hate relationship with ground turkey, like I told you in the Sausage Patties post. I like ground turkey in some stuff and in other stuff it gives me the gag reflex. I hate the smell of it cooking. And I’ve discovered that I can tolerate the 93/7 fat but NOT the 85/15. I think this possibly stemmed from a bad experience I had with morning sickness when I was pregnant with Andy. Turkey trauma. [Read more…]

Crock Pot Jerked Beef Stew

I’m gonna be honest – this is gonna be a quick post…because after all, aren’t you mostly here for the recipe? At 7 months old, we’re still struggling to find a routine for Andy – mainly, he won’t sleep. Naps are like 30 minutes and he’s up a lot during the night. Mama tired, y’all. Any minute now he’s going to wake up…so, let’s do this thing.

I love tender chunks of beef. So, Beef Stew ranks pretty high in my book…but I like to defer for normal recipes and try new things. Barry thinks I should just leave good food alone, but I can’t help it.
