Remember that kickin’ awesome recipe I posted for Jerked Beef Stew? I said that I thought it was totally awesome, but Barry was just “okay” with it? Well, now the tables have turned. I was just “okay” with this dish but he LOVED IT!!!
I have a love/hate relationship with ground turkey, like I told you in the Sausage Patties post. I like ground turkey in some stuff and in other stuff it gives me the gag reflex. I hate the smell of it cooking. And I’ve discovered that I can tolerate the 93/7 fat but NOT the 85/15. I think this possibly stemmed from a bad experience I had with morning sickness when I was pregnant with Andy. Turkey trauma.
You can actually make this with any ground meat – and if I make it again I surely won’t make it with ground turkey – sorry, honey. I think I’ll save my ground turkey for hamburgers and chili. It seems to work well in those.
This recipe is really easy to throw together and it features one of my new favorite ingredients – quinoa. I’ve been making it for several of our meals, even breakfast. One of the best things I’ve had quinoa in so far is Slow Cooker Chicken and Quinoa from Christian Mommy Blogger. And I also really love this Breakfast Quinoa from How Sweet It Is.
Now, for the most part you’ll see me using canned tomatoes for crock pot recipes. But this time I thought outside of the box and used chopped fresh tomatoes – mainly because I found them in the marked-down produce buggy. Things like that inspire me to create new recipes. I love clearance. *Shew* That gave me the shivers and I felt the Spirit!
This recipe is so easy. You just brown the turkey and mix it all together in the crock (minus the sour cream). Come back in 6-8 hours and your dinner is ready when you stir in the sour cream. Well, turn on the crock and THEN come back in 6-8 hours. Forgetting to turn your crock on makes a sad mealtime – or so I’ve heard from OTHER PEOPLE. *Cough*
Sorry some of my pictures are blurry. Did you know it’s hard to take photos with a baby on your hip? Try it sometime. It’s nearly impossible. That’s why I love posting pictures on Instagram – I can use filters to fix my photo booboos. Wish I could use filters to fix my makeup in the morning too. Now THAT would rock.
Crock Pot Creamy Turkey and Quinoa
- 1 pound ground turkey
- 3 medium tomatoes, seeded and chopped
- 1 cup chopped carrots
- ½ cup chopped onion
- 3 ribs celery, chopped
- 1 ½ cups chicken broth
- ½ cup quinoa, rinsed
- 2 teaspoons oregano
- 1 teaspoon salt
- ½ teaspoon thyme, garlic powder, and chili powder
- ¼ teaspoon pepper
- ½ cup sour cream
- Brown turkey in skillet. Drain.
- Combine all ingredients, minus sour cream, in a 4-5 quart crock pot.
- Cook on low 6-8 hours.
- Stir in sour cream and serve.
Yield: 5 servings

At the least, it MIGHT be an S helper – but we choose to leave E foods in an E setting…and you don’t need the full 45 carbs to make it an E meal….just more than 12 carbs. 🙂

Since it makes 5 servings, wouldn’t the carbs from quinoa be negligible? And make this a S meal if a fattier meat was used?

This sounds yummy! If using lean ground beef intsead of turkey, would it still be considered an E meal or would that push it into an S meal?

This would never be an S meal because of the quinoa – it’s a carb/fat collision. 🙂 So, it could be a Crossover once you’re ready for those. Hope that helps!

Ugh…I have the exact same issue with ground turkey. Usually I con the hubby into browning it for me. Then I can pretend it isn’t turkey. 😉
