Crock Pot Ugly Chicken Dinner
Sometimes I just throw things in the crock pot to see if they turn out. This was one of those recipes – and it turned out just fine. Except for one thing…it’s ugly. U-G-L-Y, it ain’t got no alibi, it’s ugly.
Have you ever noticed that some crock pot meals are just nasty looking? Yeah sure, they taste utterly delicious, but they look like something your dog dragged in. This is one of those recipes. So, don’t let the ugly pictures turn you off.

Pecan Crusted Tilapia
I’m not a huge fish fan. I used to be before I got pregnant with Annie – but after that, my love of seafood tanked. Now I can tolerate salmon, tuna, and tilapia. Other than that, it doesn’t come into this house. Yuck! And all those pictures I see on Pinterest of those soups with actual seafood shells in them? No thank you – I don’t want to have to dig my dinner out of a shell before I can eat it. Unless it’s a peanut…that’s different.
As part of Cooking Through Stacy’s Stash, I made this lovely Pecan Crusted Tilapia…and we all chowed down on it! Even Annie – The Skeptical One. That’s high praise in my book.

Crock Pot Vegetable Beef Soup
Is there a particular recipe that you’ve ALWAYS tried to make and it never, ever tastes as good as your mama’s? You can follow her instructions to a T, and something is still missing? And it makes you stamp your foot and swear off making the recipe? Yeah…well for me, that recipe is Vegetable Beef Soup.

Crock Pot Lentil Vegetable Soup
I love lentils. I love soup. Therefore, I love lentils in soup. I also love lentils buttered. But then again, I love anything buttered. Bread. Muffins. Veggies. Dirt. Babies. Etc. Butter makes things better. And as Pioneer Woman says, “If some is good, more is better.” Amen.
Anyway, this is a good, cheap meal. Lentils are excellent for replacing the meat in recipes. They’re high in fiber and they still give you the protein you need to be full. They also give you something else…buy Beano. Ahem. [Read more…]
Easy Crock Pot Ribs
Some of my family members are going to be shocked out of their mind to see this recipe on here. “What?! Stacy HATES ribs!” And yes, my friend…it is true. Ribs make me want to yak.
BUT, I love cooking for my man. And my man loves ribs. For the same reason I made myself learn how to make Chicken and Dumplings, I occasionally cook ribs – for Barry. The way to a man’s heart is through his ribs…medically and emotionally. Ha!
There are lots of different ways to prepare ribs, but I like the ease of this recipe. No boiling and then baking and then basting. Nope…none of that mess. Just plop these babies in the crock and then thicken the sauce later. That’s it. You’re welcome. [Read more…]
Crock Pot Spanish Rice with Sausage
This is one of those tricky recipes. I almost didn’t post it, but Barry bullied me into it. Why? Because he LOVES it! I have to admit, it’s pretty tasty.
And spicy. Man is it spicy! I took a cold a few days after I had made a crock full and I would eat this for lunch to open up my nasal passages.

Crock Pot Spicy Black Beans
I love beans. They’re good for your heart. The more you eat them, the more you….uhhhhh. Yeah.
I always try to keep beans on hand in the freezer. It’s nice to have them at a moment’s notice for recipes like nachos or soup. I’ll make up a big batch in the crock pot and then freeze them in 1 ½ cup portions (the equivalent of one can).
But we also like having beans with cornbread on Meatless Monday. I served these fresh out of the crock with cornbread for dinner – and then I froze the rest for use at a later date. They are SO GOOD. I love beans…they’re good for your heart, remember? [Read more…]
Crock Pot Pumpkin Soup
You didn’t think I’d leave pumpkin out of my crock pot day, did ya? No. I’m up to the challenge. I accept!
I’m usually a meat and potatoes kind of girl when it comes to soup. I don’t really like weird things in there – like those soups that call for clams and they leave the shell on? Ew. Totally not for me. I don’t like to have to work around a shell to get to my food, but thanks anyway.
This might qualify as a “girly” soup…it’s pureed. BUT, my manly man who doesn’t like his food pureed (weirdo) liked this soup just fine. And so did I. And so did Annie – she ended up eating out of my bowl. And for those of you who know me, you know this is a BIG step for me. Normally someone who eats out of my bowl or off my plate loses a finger. Crock Pot Moroccan Chicken Stew
If you’re anything like me, you’re like, “What on earth is Moroccan seasoning?” Well, I gotta tell you – before I made this recipe, I didn’t know either. So, I looked it up. Moroccan seasoning is a blend of nutmeg, cumin, coriander, allspice, ginger, cayenne pepper, and cinnamon. Yummy, right? If you like those seasonings, you’ll LOVE this recipe. Trust me.
Victoria Taylor’s Gourmet Spices sent me a sampling of their spices to try and review. I asked them to also send me a crock pot recipe that I could try. This one arrived in my inbox…and I’ll admit I was skeptical. It calls for cubed butternut squash and Moroccan seasoning – which I had never used before…and chickpeas.
