Pecan Crusted Tilapia

I’m not a huge fish fan. I used to be before I got pregnant with Annie – but after that, my love of seafood tanked. Now I can tolerate salmon, tuna, and tilapia. Other than that, it doesn’t come into this house. Yuck! And all those pictures I see on Pinterest of those soups with actual seafood shells in them? No thank you – I don’t want to have to dig my dinner out of a shell before I can eat it. Unless it’s a peanut…that’s different.

As part of Cooking Through Stacy’s Stash, I made this lovely Pecan Crusted Tilapia…and we all chowed down on it! Even Annie – The Skeptical One. That’s high praise in my book.

When I saw that tilapia was on sale at Ingles, I knew I would buy some and try this recipe – and now I’m passing it along to you…no shells included.

20 Minute Meals

This week I’ve chosen one of my favorite eCookbooks EVER – 20 Minute Meals by Leigh Ann Dutton.

Wouldn’t you like to know that you could have dinner ready every night for a MONTH in only 20 minutes each night? I know that sounds like some kind of miracle, but it’s possible…and Leigh Ann has done it.

Leigh Ann even includes printable shopping lists! What more can you ask for? She’s done your meal planning for an entire month!

This eCookbook is for any person who sometimes feels that they don’t have time to make a wholesome dinner – maybe they’ve been too busy scraping boogers off the wall or rolling the toilet paper back on the roll. Dinner can still be made!

Pecan Crusted Tilapia

There will be no substitutions made in any recipe in this book – it’s all whole foods friendly…every last recipe. Booya. I made it exactly as stated – and what a wonderful recipe that calls for real butter. *Slobber*

Leigh Ann was gracious enough to let me post her recipe here – to get the other fabulous recipes, you’ll have to buy the book. It’s only $4.99 which is well worth the money…that’s a penny cheaper than my cookbook. 😉 You can visit the website and see all the book has to offer – including a video showing the recipes. Yummy! It’s better than Food Network.

We really loved this Pecan Crusted Tilapia and I can’t wait to make it again the next time I find tilapia on sale! 🙂 I have to wait for a sale…cause that’s how I roll.

Pecan Crusted Tilapia

Pecan Crusted Tilapia

  • 4 tilapia fillets
  • ½ cup finely chopped pecans
  • 1 ½ teaspoons garlic salt
  • ¼ teaspoon pepper
  • ¼ cup grated Parmesan cheese
  • 4 tablespoons butter
  1. Preheat oven to 400 degrees. Put butter in a baking dish that will fit all 4 fillets. Place in oven to heat dish and melt butter.
  2. When butter is melted, remove  from oven. Place fillets in dish – sprinkle with garlic salt and pepper. Liberally sprinkle with pecans and pat down to press into fish. Sprinkle all filets with Parmesan cheese.
  3. Return dish to oven and bake 8-10 minutes or until fish flakes easily with fork.

Yield: 4 servings

FYI: I’m an affiliate for Leigh Ann’s cookbook because it was so stinkin’ awesome I had to get in on promoting it.  But as always, you know I wouldn’t recommend anything to you I didn’t love myself.

    My family loves any kind of fish with any kind of crunchy topping!!! This one sounds scrumptious 🙂 I wonder if other types of nuts would work? Thanks for another great recipe! I have a file on my computer labeled “Stacy” where all the fabulous stuff you give us goes; recipes included!!!

    I make a very similar recipe to this but I also add panko to add a bit of crunch. Love this stuff!

    So really, you don’t like fish, but you liked this?

    I hate fish. I used to eat Swordfish, but for some reason, just the thought of it gives me the shivers. LOL

    I know I need to eat fish & I always want to try it, but then I chicken out. If it smells fishy out of the package, then I just won’t do it.
