Simple, Healthy, and Delicious Banana Bread
I used to think that when we started our healthy eating journey that I would have to give up all my favorite foods. Boy was that dumb. Just because you want to eat better doesn’t mean you only eat locusts and wild honey like John the Baptist. It just means you have to tweak your favorite recipes and make them work for you. This was another one of my acts of culinary genius – mostly out of desperation one morning for breakfast. As you know, I love oatmeal and we eat a lot of it around here…but some mornings, a girl needs to get her chocolate on. So, Snickers Oatmeal was born.
Did you know that I love Snickers bars? Mostly those little miniature ones you get at holidays. That way I can eat a couple and not feel any guilt – unlike if you eat a WHOLE bar and then you’re like, “Whoa, what just happened here?” Eating mini ones means, “I only ate a few of those little ones.” And you can’t tell me I’m the ONLY person that does that. I’ve been making this recipe for fruity baked steel cut oatmeal for several years now…and it’s become one of my go-to breakfasts. For us, it ranks right up there with Baked Oatmeal and Sweet Potato Oatmeal. We all LOVE it! It’s so easy to customize to your desire and it works with whatever is in season. I found the general idea online and made my own version. 😉
Steel cut oats can be a little tricky…if you don’t cook them just right, they’re crunchy. I’m not sure about you, but crunchy oatmeal is just not cool – not cool at all. If you expect them to taste like regular oatmeal, you’re going to be sadly disappointed. They do have a bit of a bite to them, but they should not be crunchy when cooked. For us, we had to learn to like them – and buddy, do we like them!

Barry, my kids, and I all love homemade waffles! It’s one of their favorite meals – and they’ll enjoy them any time of day. I have a really large double-side waffle maker. It’s a Waring Pro. But then I found this cute, smaller one for four waffles. I only paid $15 for it and I know it’s not the best quality, but I’ve had so much fun with it! So…let’s make waffles!
Whenever I make waffles, I either make the Lemon Honey Flax Waffles from Jessica Fisher’s cookbook or I modify the waffle recipe from the red Breadbeckers cookbook. I have practically all their cookbooks, but I love the recipes from the little red book. I modify one called Basic Pancake recipe and convert it to waffles. The only real change between pancake and waffle batter is that you add more oil to the waffles.

Years ago, there was an awesome blog called Tammy’s Recipes. She had the absolute best ever blueberry muffins recipe on there. Seriously, best EVER. Sadly, Tammy is no longer blogging and her blog has gone away (sadness).
Honestly, her blog’s disappearance has given me some kind of Recipe PTSD. Friends, this is EXACTLY why you should print ALL recipes that you find online…the ones that you enjoy, anyway.
You never know when recipe Armageddon will occur and they’re all be gone in a flash. I once had an AMAZING recipe for ciabatta bread. It was my fave…and then POOF! See – Recipe PTSD. It will NOT happen with these blueberry muffins!

I previously shared with you my 10 easy go-to breakfast recipes and today I want to share another helpful breakfast idea. For a while now, our family has been using a method that has really revolutionized life for us. It just might be the solution to your breakfast woes!
You all know I love to cook. More than anything, I love to cook breakfast. Breakfast is my favorite meal of the day. I love me some breakfast, girl!
Butter, syrup, butter, muffins, butter, coffee, butter, butter in coffee. My first thought in the morning is – I’m so glad it’s almost breakfast time!
I’m definitely not one of those people who’s like, “Rats, I just forgot to eat breakfast today!”
Or you guys that wake up and say, “No thanks, I don’t eat breakfast.” I don’t understand you. I mean, we can be friends, but I don’t understand you.
My kids are the same way – they want to know all about what they’re gonna have for breakfast the next day as they climb into bed.
