If you search Pinterest or Swagbucks for pumpkin recipes, you will encounter approximately 1 trillion options…maybe more. My pumpkin recipes are but a drop in the bucket. This time of year, a pumpkin recipe starts to look kinda BLAH after you’ve seen a couple hundred of them. I even hesitated to use this cookbook.
But then I smacked myself and got over it. Why do I care if there are one trillion recipes for pumpkin already? There isn’t THIS one. And even if you don’t care, I do. Let’s cut to the chase here. Since I figured out how to make oats in the crock pot using a water bath instead of cooking them directly in the crock, it’s made my wheels turn a bit. I’ve been dreaming up all sorts of flavors to make – since I can actually get up and eat them instead of using the mixture as wallpaper paste.
This one came to me because, frankly – I like pumpkin stuff. That should be evident by the amount of recipes I post with it…soooooooooooooooo, being frank again (Frank and Pete must be related), if you don’t like pumpkin, you might want to zone out for the next few months and come back to me in the spring. ‘Round these parts, we really like pancakes. You’ve probably noticed that by all my pancake posts. Why do I like them so well? Honestly – they’re easy and everyone will eat them. I can’t say that about everything. Add to that fact that they’re stinkin’ delicious and you’ve got a winner without a chicken dinner.
We eat a lot of pancakes around here, so I’m always scouring for new and fun recipes. It’s nice to have a dish that everyone will eat so I don’t turn myself into a short order cook. I never wanted to be a cook in a restaurant – I have been a waitress and that was good enough for me, thank you. Actually, now that I think about it, I am a cook…and a maid. And I enjoy it. So, nevermind about that cook stuff. Forget I said it.
Barry thinks there is a conspiracy going on here…a cottage cheese conspiracy. See, his wife LOVES cottage cheese. Oh, by the way…his wife is me, in case you didn’t know. And yes, I love cottage cheese. I’m known to put it into anything and everything. You’ll find it in shakes, smoothies, ice cream, brownies, and now even my omelets. Booya.
Before you go screaming and running from the room – hear me out. Cottage cheese is awesome. Even Barry, who is a professed cottage cheese HATER, doesn’t know when I put it in stuff. Granola is one food we eat in massive quantities. One of my favorite breakfasts of all time is a big bowl of granola with yogurt and berries. I knew one day I would tackle making granola without all the honey and maple syrup in it – because let’s face something here…I like a challenge. [Read more…]
When I was pregnant with Annie, I went hog wild and pig crazy over apples. I ate them every day. Yes, plural. Sometimes three a day. I couldn’t get enough. Now, apples and applesauce are one of her favorite foods. With Andy, it was bananas. I would have attacked you over eating my banana – and he LOVES them now too. It’s a good thing I didn’t gorge myself on Skittles and Doritos.
I still love apple dishes. If I come across a recipe with “apple” in the title, I’m always gonna read it. As much as I love them, I don’t care for traditional apple chutney. It usually includes chopped onion and vinegar. I’m sorry, but I just cannot do that with my apples. It seems wrong to me – like I’m cheating on caramel or something. [Read more…]
Y’all know that I like to save a buck here and there. Some call me cheap. I call me frugal. Okay, so sometimes I call myself cheap too. But the first time I made these freezer smoothies, I was just tickled pink with myself. Making them at home is SO EASY!
If you use fruit that’s in season and homemade yogurt or yogurt you found on sale, this is a very cost effective breakfast/snack. Who needs to buy a pre-made bag of smoothie when these are so quick and easy? Not me, says I.
Plus, I know what’s in it….no weird ingredients or food colorings added. I still have no idea why the food industry feels like they need to put food coloring in everything. But before I get on a soap-box, maybe I should direct my thoughts elsewhere. You’re welcome. [Read more…]
