Southwestern Frittata

Am I the only one around here who wakes up about to eat her arm off? My eyes open and I immediately think “Must. Have. Food.” Maybe that’s why breakfast is my favorite meal of the day – I love a huuuuuuuuuuuuuuuuuuuuuuuuuuuuuge breakfast. All of you sad people out there who don’t eat breakfast – I just can’t understand you. You make no sense to me. Maybe you should seek professional counseling – or make this Frittata. That might fix it.

I spend the majority of my meal planning time trying to decide on breakfast. I spend a majority of my Pinterest time pinning breakfast recipes…and I even have a board totally dedicated to oatmeal. I’m serious about breakfast – it is not a laughing matter. It IS the most important meal of the day…even if there are likely 1.5 million studies about how eating breakfast can kill you slowly. Everyone is a critic.

Breakfast Pizza

Raise your hand if you like cold pizza. Lame. Cold pizza is grody. No. Thank. You. Guess what? I’m married to a man who likes cold pizza – God is funny like that. But, on the flip side, I don’t like my pizza piping hot. I kinda like it warm…so that the cheese doesn’t burn the roof of my mouth. I have issues with waiting until food cools down…that’s normal, right?

Lots of people like pizza for breakfast. They grab a leftover piece out of the fridge and head to work…or class. When I was in college, lots of my friends ate cold pizza for breakfast. Not me – no way. I had higher standards than that – Toaster Strudels, baby…they are classier than Pop Tarts. 😉 [Read more…]

Tropical Island Pancakes (GF)

Pancakes are a sure win in this house. I can’t say that about everything I make…because some things have crrruuuuuuuuuuuuuuuuuuuust, Mama! Or black specks. Or burned edges. But pancakes? Everyone likes pancakes. And they’re easy. And I like flipping them.

These days my favorite way to make pancakes is with coconut flour. I love the flavor and texture. If you’re not a huge fan of coconut flour, you probably won’t like these. Sorry – just thought I would clear the air right now. And yes, these do taste like coconut. I’m on a roll! [Read more…]

Crock Pot Apple Stuffed Acorn Squash

I decided that this year I was going to stock my basement with squash for the winter. So I did. And I’ve been working my way through using them already…and I’ve determined this: they won’t last long. Why? Because I stinkin’ love squash, that’s why. I’m barreling through these babies like a crazy woman. No squash left behind! No squash left unturned! No squash for you! [Read more…]

Pumpkin Breakfast Cake (GF)

If you search Pinterest or Swagbucks  for pumpkin recipes, you will encounter approximately 1 trillion options…maybe more. My pumpkin recipes are but a drop in the bucket. This time of year, a pumpkin recipe starts to look kinda BLAH after you’ve seen a couple hundred of them. I even hesitated to use this cookbook.

But then I smacked myself and got over it. Why do I care if there are one trillion recipes for pumpkin already? There isn’t THIS one. And even if you don’t care, I do. I love this recipe and I’m sure glad I made it for my tummy. And guess what? Like I already told you, this isn’t the last pumpkin recipe you’re going to see. You’ve been warned. 😉 Make that 1 trillion and ONE. [Read more…]

Crock Pot Pumpkin Gingerbread Steel Cut Oats

I love everything with pumpkin in it, so this crockpot pumpkin gingerbread oatmeal is perfect! It cooks overnight, so breakfast is ready when you wake up!

Let’s cut to the chase here. Since I figured out how to make oats in the crock pot using a water bath instead of cooking them directly in the crock, it’s made my wheels turn a bit. I’ve been dreaming up all sorts of flavors to make – since I can actually get up and eat them instead of using the mixture as wallpaper paste.

This one came to me because, frankly – I like pumpkin stuff. That should be evident by the amount of recipes I post with it…soooooooooooooooo, being frank again (Frank and Pete must be related), if you don’t like pumpkin, you might want to zone out for the next few months and come back to me in the spring. Or when I run out of pumpkin – which isn’t likely to happen. [Read more…]

Grain Free Dutch Babies

‘Round these parts, we really like pancakes. You’ve probably noticed that by all my pancake posts. Why do I like them so well? Honestly – they’re easy and everyone will eat them. I can’t say that about everything. Add to that fact that they’re stinkin’ delicious and you’ve got a winner without a chicken dinner.

Cottage Pancakes

Cottage Pancakes. These grain free pancakes use almond flour and coconut flour along with my secret ingredient to make the most delicious breakfast evah!

We eat a lot of pancakes around here, so I’m always scouring for new and fun recipes. It’s nice to have a dish that everyone will eat so I don’t turn myself into a short order cook. I never wanted to be a cook in a restaurant – I have been a waitress and that was good enough for me, thank you. Actually, now that I think about it, I am a cook…and a maid. And I enjoy it. So, nevermind about that cook stuff. Forget I said it.

Cottage Cheese Omelet

Even if you have a cottage cheese hater, they'll never even realize it when they try this Cottage Cheese Omelet. Make your tummy happy today.

Barry thinks there is a conspiracy going on here…a cottage cheese conspiracy. See, his wife LOVES cottage cheese. Oh, by the way…his wife is me, in case you didn’t know. And yes, I love cottage cheese. I’m known to put it into anything and everything. You’ll find it in shakes, smoothies, ice cream, brownies, and now even my omelets. Booya.

Before you go screaming and running from the room – hear me out. Cottage cheese is awesome. Even Barry, who is a professed cottage cheese HATER, doesn’t know when I put it in stuff. It gives a lovely, light and delicious flavor…even in your omelets. Even Barry thought these were very good – so did I! I think they’ll be a regular around here. 🙂 [Read more…]

Crunchy Coconut Granola

This sugar free Crunchy Coconut Granola will knock your socks off! It's so good. Mixed up with some Greek yogurt and berries, and this is a total win.

Granola is one food we eat in massive quantities. One of my favorite breakfasts of all time is a big bowl of granola with yogurt and berries. I knew one day I would tackle making granola without all the honey and maple syrup in it – because let’s face something here…I like a challenge. [Read more…]
