Peanut Butter Chocomole

I’m really enjoying this series of cooking through my stash – and I’m also enjoying incorporating my eBooks into it as well. This week I’m making Chocomole for you guys – and it’s a recipe directly from my friend Katie over at Kitchen Stewardship. Katie’s recipes are always delicious. I’ve already told you I love her granola bars and her White Bean Pasta…now you can add Chocomole to the list, from the cookbook Healthy Snacks To Go 2nd Edition.

What is Chocomole? It’s pudding made from AVOCADOS! I’m sure you’ve seen it all over Pinterest. I’ve tried a few recipes, but this is HANDS DOWN the best one EVAH! See, all those caps mean that I really mean it. I don’t lie.

Kefir Resources

So, I’ve been using kefir now for about two years. My love for it has only grown – I’ve shared my love with friends and family members…I’m trying to get everyone on the kefir train! Stacy jumped off the kefir bridge, and I’m trying to get you to jump with me. Everybody’s doing it.

Okay, so not everyone is doing it. And you’ll likely get some strange looks if you start telling people you ferment milk. Kefir is essentially fermented, cultured milk. 101 Snacks For Your Husband On The Go

Y’all ask me for snack ideas all the time – and let me tell ya…I have them. Why? Because I’m a snacker at heart. I would almost rather snack all day than to sit down at a meal. I’m a grazer – just like a cow. Moo.

You also ask me what to feed your husband – perhaps he’s not really gone whole hog into your new “healthy” way of living and you don’t know what to send with him to work – and you don’t want him scarfing on Doritos from the snack machine all day…that hurts his belly AND his pocketbook. Wait – his wallet…guys carry wallets.

So, I put together a list of 101 snacks that will work for “on-the-go.” I made sure none of them require refrigeration so if your husband works on site, he won’t have to worry about keeping stuff cold.

And really, these can be used for kids too – or YOU. I’m cool with that – go ahead and make you a big ole batch of Lactation Cookies (nursing or not!) and hide them in the hall closet.

At one point in my journey on healthy eating, I thought that granola bars from the store were “health food.” Yeah. Talk about a big ole smack in the face when I learned a lot of them are chocked full of both High Fructose Corn Syrup and Corn Syrup. For real? Do we need two sides of corn with our oats? Sheesh.

Sometimes when I’m in the grocery store, I end up getting mad before I get out. I get mad because I realize what the food industry has done to “healthy” food. Why do they add needless crap to it? Makes me wanna kick a buggy (“cart” for you non-southerners). I’m sure the stock boy has looked at my face a few times and thought I was a woman possessed. Poor guy. I like to dip my food. I always have. I always will. There is just something super fun about dipping food into something and then trying to get it into my mouth without dribbling it all over myself…and for the record, I always get it all over myself.

I eat peanut butter every day. Every. Day. Seriously – I cannot tell you the last time I had a day without it…I even asked for it on my food tray at the hospital with Andy. I like it with my bananas, I like it with my pancakes, and sometimes you’ll even find me putting it on a biscuit.

Crock Pot Crab Dip

I asked my good friend, Lori, from We Pillage the Village if she would be willing to share a good seafood recipe with us. She lives up north were good seafood abounds…and most of my knowledge of seafood is tuna in a can. 😉 Thanks Lori!!

Every year I’m the “crab dip lady”.  Come September, my sister has a big band competition with her high school marching band and it’s my duty to provide the crab dip to the judges and band staff.  That’s about 150 people.  It’s a HUGE hit every year and I have to say that it’s the best crab dip I’ve ever tasted – and coming from Maryland, I’ve had lots of crab dip.  I always keep it hot and bubbly in a crock pot for the 6 hours that the competition lasts.  It holds up great and goes wonderful with crackers, Melba toast, pita and raw veggies. HealthIER Camping Food: 7 Tips for Taking Real Food With You

I am not a beach person. My idea of a good time usually involves shade and cooler weather…not sand that gets in weird places and sunshine that bakes you from the outside in.

I’ve been camping since I was 8 years old. At my request, my parents decided to try it once – and they ended up LOVING it. We’ve been every year since then.  Annie, went on her first camping trip at 2 months old.

We started out in tents but my parents graduated to a pop-up camper. However, when we camp we like to “rough it.” We usually don’t use electricity, but we do use gas for our little camping stove…perfect for our secluded mountain camping spots.

One of our favorite parts about camping is the food. For some reason, food tastes so much better outdoors! And cooking the food is most of the fun!

There are some people who think going camping means you eat cans of Beenie Weenies and pre-packaged doughnuts. That’s never really been the case with us – we enjoy experimenting with food while we camp and we try to eat a wide variety of foods.

Oatmeal Raisin Scones

A scone tutorial is wayyyyyyy overdue here. I am so sorry I’ve let you down in such a fashion. It’s a crime really. I should be sharing scones with the whole world! Whole Wheat Vegetable Pizza

Today we’re talking about Real Party Food. I love a good party. I’m a party animal y’all! Someone says “Party!” And I say “Where at?!” Actually, I’ll be truthful. I should be called Stacy The Wallflower. I love parties, but I am usually physically attached to the wall or a corner chair. I like to be in the back and watch. My idea of a good party is when I can escape to the kitchen and help with refilling bowls and cutting up cantaloupe. For some reason, I always fear I’ll make a gigantic fool of myself in front of everyone – food down my shirt….a popped open button right in the middle of my chest…..toilet paper on my shoe…..my skirt tucked in the back of my leggings. Yeah – I dream about this stuff. It’s safer to stay against the wall where no one can see your rear.One of my favorite party foods of all time is Vegetable Pizza – made withPillsbury Crescent rolls and ranch dressing mix. Since these aren’t foods we buy anymore, I thought I would have to do without it. But then I got ornery and decided to make my own. You’re not going to take away my favorite party food, BUSTER! Healthy Snack Options

How silly is this – when I first started this journey I though “Oh my gosh! What am I gonna eat for snacks?! AHHHH! I’m going to STARVE!” Well, I haven’t starved yet……and we’re eating pretty well around here. It was suggested that I should write a post about good, healthy snacks that won’t break your budget. If you try to run to the store and buy a bunch of organic snack foods, it will eat a hole in your grocery budget really fast – sorta like that mouse who ate all my decorative corn (stupid mouse). We snack a lot around the Myers house. Especially Annie….okay, so who am I kidding? I’m a snack-a-holic. Annie talks now, so I can’t keep blaming stuff on her. Bummer. One of our favorite snacks is granola bars – which are a LOT better than the version at the store. They are so good; you won’t even know they’re good for you. And they’re really easy to make. I like easy stuff….if it’s terribly complicated, I’m probably not going to do it.

Sometimes I’ll make muffins for breakfast and use the leftovers for snacks for the week….or snacks for a few days, depending on how good they are. I’m LOVING this Banana Flax Muffin right now. Muffins and sweet breads (with whole wheat flour and natural sugars) are a great snack option! Plus, if you’re making them for breakfast then you might as well make enough for snacks. We’re bread lovers anyway. Annie always wants “jelly bread” for her snack and with whole grain bread; I don’t mind giving it to her. Let’s be honest – there isn’t much that tastes better than fresh bread with a pat of butter. Ooo la la!

I’ve always loved cereal – but not with milk. I’m not a milk lover. If I’m going to eat cereal, I eat it with homemade vanilla yogurt  or just eat it plain. Cereal isn’t something we’ve cut out of our diet. I switched to organic cereals instead (I know they aren’t genetically modified). I wait for coupons and then buy them so I don’t have to pay full price. Make sure you follow Deal Seeking Mom so that you can get a heads up on organic coupons which she posts on Thursdays. We eat a lot of cereal for snacks. I might whip up a batch of granola instead of cereal to eat with yogurt – it makes a great snack. My favorite way to eat yogurt and granola is by splitting a banana open (like for a banana split), pouring yogurt in the middle and then sprinkling with granola. YUMMO!

We eat a TON of fruit around here. It makes a great snack, plus if you buy it in season it’s very reasonable. I always keep fruit around the house, even if it’s in the freezer. I like having the option there. Annie would rather have fruit than most other things. Occasionally I whip up a smoothie for us to snack on or I make a batch of smoothie base to keep in the fridge all week. Smoothies are quick and easy….and very filling. I’m just going to be honest about veggies though – while they make a great snack, I’m not a veggie snacker. I am not going to go to the fridge, pick up some broccoli and eat it. I’m just not. It’s not how I roll. I like my veggies cooked unless it’s a salad – and salads aren’t really a snack food. But, if that’s how you roll, veggies are a good option. Watch the store salad dressing though; it’s usually full of high fructose corn syrup.

We snack on nuts……a lot. Annie loves nuts. I have to chop most of them into smaller pieces for her though – because I’m an over-paranoid mama. I try to buy nuts on sale whenever I can find them. I keep them in the freezer so they don’t go rancid so fast. Nuts are great paired with dry fruit. Don’t overdo it on dried fruit though. While a little bit is okay, it’s still full of sugar so you don’t want to inhale it. I like buying organic raisins for Annie to eat in the car……just make sure you check your rear end often to insure there aren’t any on your butt. Been there, done that. And cheese. Real cheese. I’m not talking about “cheese product.” What does that even mean? No wait – I don’t want to know. We love just eating some plain cheese – not fat free because I’m not into the whole rubber cheese movement.
