Today we’re talking about Real Party Food. I love a good party. I’m a party animal y’all! Someone says “Party!” And I say “Where at?!” Actually, I’ll be truthful. I should be called Stacy The Wallflower. I love parties, but I am usually physically attached to the wall or a corner chair. I like to be in the back and watch. My idea of a good party is when I can escape to the kitchen and help with refilling bowls and cutting up cantaloupe. For some reason, I always fear I’ll make a gigantic fool of myself in front of everyone – food down my shirt….a popped open button right in the middle of my chest…..toilet paper on my shoe…..my skirt tucked in the back of my leggings. Yeah – I dream about this stuff. It’s safer to stay against the wall where no one can see your rear.One of my favorite party foods of all time is Vegetable Pizza – made withPillsbury Crescent rolls and ranch dressing mix. Since these aren’t foods we buy anymore, I thought I would have to do without it. But then I got ornery and decided to make my own. You’re not going to take away my favorite party food, BUSTER! Let’s party! |
First, I needed a crescent roll recipe. Instead of trying to make my own, I just decided to use my friend Erin’s recipe from The Humbled Homemaker. In your stand mixer bowl, combine some yeast and warm water. Let it proof (get all mixed up and poofy) for about 10 minutes. Add softened butter, milk, honey, eggs, and salt – mix until combined. Gradually begin adding your flour. I used hard white wheat that I ground up in my Nutrimill, but you could also use white wheat flour. I ended up adding about 4 ½ cups of flour. Once you have a kneadable dough, knead on speed 1 for about 6 minutes. It should look like this when you’re done. |
While my dough is in the air like that, I grease my bowl with oil and then put the dough back in it, turning it over to grease all surfaces. Cover the bowl and let it rise until it’s doubled…..or in my case, let it rise until it’s doubled and then has begun to shrink back down. Hey, I have a good reason. I put it in the oven with the light on because it was cool in the house – and then I got distracted with very important things like laundry and dusting. *Cough* |
Punch the dough down (that’s so much fun!) and divide it into two pieces. I always use my bench scraper for that….it gets regular use. LOVE it! You’re only going to use one piece of dough to make a 9×13 inch pizza. If you want two pizzas, then you’ll be all set. I only wanted one so I knew I would just make rolls with the other half to have for another dinner. |
Butter down a cookie sheet and begin to press your dough into it. This will take a bit of elbow grease…….and don’t make anyone named Barry do it or he’ll whine and complain about how much he hates patting out pizza dough. Pansy. |
Cover with a cloth and let this crust rise for 10 minutes. And yes, those are burn marks on my towel from a freak microwaving accident in which I learned that towels can indeed catch on fire in the microwave. This has been a public service announcement. |
After 10 minutes, transfer your pan to a 350 degree oven and bake it for 10 minutes. It will look nice and poofy – minus the finger indention in the center that happened purely by accident. There are always accidents in my kitchen. Oops. Cool your crust completely. |
While it’s cooling, it’s a good time to prepare your toppings. You can use whatever veggies you have on hand….within reason. Don’t use a veggie that might break your teeth out because it’s not going to get cooked. For example: don’t use uncooked butternut squash or raw potatoes. I used lettuce, carrots, red onion, and tomato. I made sure to squeeze all the juice out of my tomatoes so that they wouldn’t make everything soggy. Bacon pieces would be good – cooked of course. See potato comment. Also, I put some grated cheddar cheese on top – because everything tastes better with cheese. Amen. |
In a small mixing bowl, mix up your sauce: 4 ounces softened cream cheese, 1/3 cup sour cream, ½ teaspoon dried dill weed (it’s always weird to say weed), 1/8 teaspoon garlic powder, and 1/8 teaspoon onion powder. Mix until all the lumps are gone. Taste. YUM! |
Spread the sauce over the cooled pizza dough. Top with your vegetables and cheese. Leave a corner without red onions so Annie doesn’t cry. See how pretty it is?! I just love it. Eat immediately or refrigerate….how long? Mine was fine for 3 days in the fridge – but if you didn’t squeeze your tomato juice out, it might not last that long.Verdict? SO GOOD! I won’t ever miss the old version. Now, the crust was rather thick – which I like. If you wanted a less thick crust, you could use an 11×15 inch pan instead of a cookie sheet. |
Now, to finish off the other half of the dough, roll it out into a circle. With a pizza cutter, cut it into 8 large piece or 16 small pieces (as though you were cutting pizza wedges). I went for 16…..because then I can eat more without feeling bad because they’re small. *Cough* Roll each piece up; rolling from the wider end toward the tip. |
Place each piece on another cookie sheet. Cover and let rise until they are doubled. Bake at 350 for about 8-10 minutes (depending on size) or until browned. |
Yum! So good with butter. *Slobber* If you didn’t want these right away, they would freeze splendidly for another meal.Party! Whole Wheat Vegetable Pizza

I laughed my butt off about the towel. It sounds like something I would do! I’ve made an amish version of this before and it was really good. Not as healthy..but good. I am going to give your version a try. Hey about those rolls..if you place chocolate in the middle..it would make a nice snack….just saying…but use dark chocolate because that is healthier right? hm..oh well I normally use canned crescent rolls and chocolate chips..its french…or at least I made them in french class. Let’s call it a French luxury dessert. If you still have reserves..teach your kid about france, that way education will cancel our calories….that’s my story and I’m sticking to it!
