Peanut Butter Chocomole

I’m really enjoying this series of cooking through my stash – and I’m also enjoying incorporating my eBooks into it as well. This week I’m making Chocomole for you guys – and it’s a recipe directly from my friend Katie over at Kitchen Stewardship. Katie’s recipes are always delicious. I’ve already told you I love her granola bars and her White Bean Pasta…now you can add Chocomole to the list, from the cookbook Healthy Snacks To Go 2nd Edition.

What is Chocomole? It’s pudding made from AVOCADOS! I’m sure you’ve seen it all over Pinterest. I’ve tried a few recipes, but this is HANDS DOWN the best one EVAH! See, all those caps mean that I really mean it. I don’t lie.

Peanut Butter Chocomole

Katie is already a whole-foods-recipe-creationist (I learned most of what I know about whole foods from her), so I didn’t really have to tweak this recipe. I did add PEANUT BUTTER. Holy cow. Anything with chocolate should include peanut butter. It was the bomb.com.

I really love Healthy Snacks To Go. It’s great to have on hand for those times when I need snacks for trips and other things out of the house. I love that I can fix goodies for Annie from this book and have no reservations about feeding them to her. And she has no reservations about eating them either. Especially those granola bars.

The addition of peanut butter really put this recipe over the top. And I did use stevia instead of honey. In the recipe box, I’ll put Katie’s original recipe and my tweaks. 🙂 Yummy. I didn’t share with Annie either. I waited until she was in bed to eat it. But that silly Barry was hanging around and wanted a bowl…with some Chocomole in it. What’s THAT about?

This will be a staple around this house for SURE.

Peanut Butter Chocomole

Peanut Butter Chocomole

Adapted from Healthy Snacks to Go

  • 1 medium avocado
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla
  • Stevia to taste
  • Pinch salt
  • 2 tablespoons peanut butter
  • 3 tablespoons almond milk

***Katie’s original recipe calls for: 1 medium avocado, ¼ cup cocoa powder, ¼ cup honey, 1 teaspoon vanilla.***

  1. Scoop the avocado out of the shell and discard the pit.
  2. Dump it, along with all the rest of the ingredients, into your food processor.
  3. Give it a whirl until it’s creamy and smooth. Then stick your finger in and lick, BUT NOT WHEN THE FOOD PROCESSOR IS ON – you gotta make sure you added enough stevia. 😉
  4. Stick it in the fridge to get cold – or eat it right away from the food processor bowl because you have no shame. Delicious with almonds sprinkled on top!

Yield: 2 servings

    Absolutely LOVED this!!! I am always craving sweets so today I decided to start off my day with this just to get that craving out of the way and it worked! Kept me full for hours! Do you happen to know that nutritional facts on this? I ate the whole recipes and I am just wondering if it’s still on plan of I do so? Thank you so much for all you do!       No, I don’t know the nutrition facts. You might try plugging it into My Fitness Pal to see if that lets you know. I’m glad you liked it!

    Oh my GOODNESS this is delicious!!! I am astounded at how yummy it is. You don’t taste the avocado at all, it was just chocolatey creamy goodness. I didn’t use peanut butter, since I have none, but used almond butter instead. Also, I was unsure how much stevia would equal 1/4 c of honey and I have heard people complain about stevia’s bitterness. I used about 2 T of honey instead of stevia, and this turned out just perfect for me. Would you please give us an idea of how many drops of stevia you used, or how many spoonfuls?

      Pamela, I wish I could but it varies from brand to brand. Some might say 5 drops…while in some brands I’ve tried that’s WAY TOO LITTLE. I actually use Kal powder stevia and just give a couple dashes. 🙂

    I am not a fan of the taste of avocados. Do you taste the avocado in the regular recipe and/or your tweaked recipe? Esp. with your PB addition. I just got the THM book, but I have not started it yet.

    Love Katie, love THM, love avocados, love chocolate! Haven’t thought of combining all three. But then I’m not a pudding person so this is probably why. I’m stuck on Katie’s chocolate chip cookies which are not THM friendly but still yummola. Thanks for sharing. I’ll have to bookmark.

    So I would LOVE to do this, but we still use sucanat instead of stevia due to adverse reactions in myself. Is it ok to post what I make if I note that a plan-approved sweetener would work? I am really loving THM and am losing weight even though we use sucanat. Reading the book was like the light-bulb moment taking my WAPF diet to the healthiest level! 🙂

    Now to go add more avocados to the grocery list…

      Yes, that is fine as long as in the recipe you say “3/4 cup sucanat OR _____ stevia.” How does that sound? 🙂

    I love all of Katie’s recipes I’ve tried. I have her Healthy Snacks to Go, her Sweets e-book and Everything Beans e-book. I haven’t tried this recipe yet. My favorite part of her cookbooks is all the variations she provides.
