I love a good meatloaf. Notice I said, GOOD meatloaf. Honey, I’ve been to some potluck suppers where meatloaf was served and it could have been a hockey puck…..a door stop……a fruitcake. My Mama makes the BEST meatloaf. It’s also so nice and dense, yet perfectly moist.I like trying different recipes, so I don’t think I’ve ever tried the same meatloaf recipe twice…..but I have made them this way several times – in muffin cups. They make a nice little serving size so there is no cutting required. Nice!For some reason, some kids are scared of meatloaf. I have no clue why. I guess any food described as “loaf” could be scary. But, I think if you make them this way and each child has their own little loaf, then it might not be so bad……especially since there is salsa and cheese involved. Or ketchup. Easy Ground Beef #3 – Hamburger Stroganoff
You can do so much with ground beef. My mind is just full of all the possibilities! This original recipe called for strips of beef, but I decided to change it up a bit and use ground beef instead. The result was amazing. Even Annie liked it! She isn’t much for ground beef, so that made it especially exciting to me. Isn’t it funny how your life changes when you have a child? Easy Ground Beef #2 – Mac and Cheese Pizza
***UPDATE – See this post about our new eating habits. (7/10/11) If two things are awesome and you put them together, it equals maximum awesomeness. Macaroni and cheese…….pizza. Glory! Put them together and it must equal wedded bliss. And it was, oh my it was! I should start pairing more things together. If I like both things, then it should work out, right? Peanut butter and banana, cereal and yogurt, ham and cheese, green beans and ketchup. Ok, something just came to mind that cancelled out that previous thought. Easy Ground Beef #1 – Creamy, Meaty Rotini
I was asked to do some recipes for ground beef that were easy and quick. So, I’m taking this week and dedicating it to ground beef. Beef! It’s what’s for dinner! Where’s the beef? This is sort of a Stacy original. I used a recipe from Taste of Home as a base, and went from there. I didn’t have all the ingredients that it called for, so I improvised……I didn’t follow the recipe. Don’t shoot me or turn me in to Martha Stewart. If you shoot me, you may end up in prison WITH Martha Stewart. You can do so many things with ground beef. I grew up on a cattle farm, so we’ve always had beef in abundance. I’ve never had to buy it at the store, but I hear it’s pretty cheap as far as meat is concerned. If you do, your family will expect perfection out of you daily…..on the other hand, these Apple Crowns just might be worth it. Good grief! It’s 3pm right now and my house still smells like cinnamon apples and I made these at 7am! When I saw this recipe by Taste of Home, I had to make it. I’m an apple lover. Cake Mix Cookies

These are about the simplest cookie you can ever make……well, except for those you get at the store and place on the cookie sheet to bake. Those are good too – but these, THESE are homemade. Doesn’t it make you feel like Suzy Homemaker when you tell your friends, “Here are some homemade cookies I made you.” Then they feel really special…..and you feel special knowing you didn’t waste all day making them. Let me just tell you that when I made these cookies, I was having a bad day. A very, very bad day. First thing in the morning I couldn’t get my computer to work. Then Annie locked herself in the car at the post office and it was raining. Then the cashier at Walgreens wouldn’t take my coupons. At CVS I left my coupon binder in the buggy and didn’t realize it until I got home (Don’t worry! It’s safe…..I know the manager there….thanks Tammy!) I came home only to let Annie fall butt first down into the clothes hamper. So, as you can tell I really needed some cookies. Actually, I made these cookies to say “Thanks!” to those who helped me get back into my car and also to take to Tammy at CVS. I like telling people I appreciate them. It always seems to pack an extra punch when you say it with cookies. So, to kill two birds with one marshmallow (or something like that) I decided to say thanks AND show you how to make them. Homemade Breadcrumbs
I know I’m not the only one out there with a lousy bag boy….am I? The bag “boy” at my Kroger thinks he’s Elvis. He wears his collar up and his hair greased back. I have not heard him sing……but I have seen him high tail it! Apparently he doesn’t like me anymore because when he sees me coming, he tries to find something else to do – get buggies…..sweep……clean up the broken pickle jar in aisle 4. Well, that’s just fine with me because I hate getting home to find my bread smashed and all my frozen stuff in individual bags instead of together. Is this rocket science? That being said, we all end up with smashed bread sometimes. I will usually make homemade croutons (https://www.humoroushomemaking.com/?p=205), but this time I decided to make breadcrumbs. You can buy these at the store, but it’s usually cheaper to make your own. Plus, they just taste a lot better. If you can get some reduced bread, even better! Any kind of bread will work. Also, sometimes it’s just nice to pulverize something to smithereens. You know you want to. |
My favorite way to make breadcrumbs is using my food processor. I love this kitchen appliance! If you don’t have one, you should really consider getting one……I see them at yard sales all the time. It’s such a great tool to have – it makes a lot of kitchen tasks a LOT easier. I think it does lots of cool stuff, but I haven’t read the manual yet. Manuals intimidate me. It’s not too hard to make your own strawberry rhubarb jam. It’s even easier to eat your own jam…super easy, especially if there are biscuits just lying around with nothing else to do with their leftover life. They’re just begging you to make jam…come on, you know you want to.
