Apple Crowns = Pure Heaven

***UPDATE: See this post about our new eating habits. (7/10/11)You’re going to hate me. Please don’t make this recipe. If you do, your family will expect perfection out of you daily…..on the other hand, these Apple Crowns just might be worth it. Good grief! It’s 3pm right now and my house still smells like cinnamon apples and I made these at 7am! When I saw this recipe by Taste of Home, I had to make it. I’m an apple lover. You might as well just get used to the fact that you’ll regularly see apple recipes on Humorous Homemaking. When apples are in season, I am known to eat 2-3 per day. Yes, per day.  These are sooooooooo easy and they look like you spent all morning in the kitchen. I get the shivers just remembering how good they were. Brrrrr!!!!!!

You’ll need sugar, Grands biscuits (the 8 count package), salt, cinnamon, butter, flour, nuts, tart apples and raisins. Proof that I am NOT perfect in the kitchen – I left the flour out of this recipe. Oops. When I was putting away my ingredients I was like, what’s this for? Oh…..oops. Good news! You can leave the flour out and this recipe is still delicious. Also, it called for walnuts, but I used pecans. Why? Because pecans fell out of my baking cabinet when I opened it. I took it as an omen.

Ok, you’ll need to peel and core your apples. Now chop them up into nice sized pieces, not too big not too little. I only had to use one apple to get the amount I needed, but if your apples are small, you might need more. Or if your apples are ginormous then you might not even need a whole one – eat the rest dipped in peanut butter. Plop the chopped pieces into a microwave safe bowl and add part of the sugar, the flour (ha, ha!), raisins, nuts, salt, and part of the cinnamon. Stir it up and microwave it a little bit to get the apples soft. Don’t eat it. You’ll be tempted. I promise. But wait until the end and you’ll be glad you kept your grubby paws off it.

Now it’s time to flatten your biscuits! Open the can and wait for the pop. It scares me every time…..even though I know it’s coming. Ah!!!!!!!!!  Flatten each biscuit until it’s about 5 inches wide.

Mix up the rest of your cinnamon and sugar. I love cinnamon toast! Just throwing that out there.

Sprinkle about one teaspoon of cinnamon sugar on each biscuit. I tried to get mine only on the biscuit, but I got a little sprinkle happy and some ended up on my counter…..and my floor…..and myself. Oops.

Now put some apple mixture on there. It says to use ¼ cup, but I didn’t quite use that much. If you do, you’ll run out and that would be very sad. Very, very sad. A lonely, appleless biscuit.

Bring up your sides and pinch them together like so. Make sure you pinch it good so your filling won’t fall out. Remember your elementary school days when someone didn’t wear green on St. Patrick’s Day.

Put each biscuit in a muffin cup, with the pinched side down so it’s rounded on top. It says NOT to grease the cups, but I did anyway. I live in eternal fear of food sticking to pans. It happens to me too much……so I greased them anyway. Rebel!

Brush some melted butter on the top of each biscuit and sprinkle with the rest of your cinnamon sugar mixture. Butter and cinnamon sugar? This recipe is really going places!

You’ll need to make a criss-cross pattern on top to expose the filling. The recipe says to use a knife, but I wanted to use my kitchen shears. Just two little snips in opposite directions did the trick!

See how wonderful the scissors worked? You can use a knife if you want too though. I’m not here to judge you.

I baked mine about 20 minutes. Look how divine! Oh baby, oh baby! They’re gooey. Anything gooey is good.

When you put them on your plate and open them up, they’ll look like this. They were SO GOOD! I can’t wait to make them again. I think I’ll make them and take them to MOPS so I can be the popular Mommy. Below is the recipe if you want to have a happy family.

 

Criss-Cross Apple Crowns

  • 1-1/3 cups chopped peeled tart apples
  • 1/3 cup chopped walnuts
  • 1/3 cup raisins
  • 1/2 cup sugar, divided
  • 2 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon, divided
  • Dash salt
  • 1 package (16.3 ounces) large refrigerated flaky biscuits
  • 2 teaspoons butter, melted
  1. In a large microwave-safe bowl, combine the apples, walnuts, raisins, 3 tablespoons sugar, flour, 3/4 teaspoon cinnamon and salt. Microwave on high for 2-3 minutes or until almost tender.
  2. Flatten each biscuit into a 5-in. circle.
  3. Combine remaining sugar and cinnamon; sprinkle a rounded teaspoonful of sugar mixture over each.
  4. Top each with 1/4 cup apple mixture. Bring up edges to enclose mixture; pinch edges to seal.
  5. Place seam side down in ungreased muffin cups.
  6. Brush tops with butter; sprinkle with remaining sugar mixture. With a sharp knife, cut an “X” in the top of each.
  7. Bake at 350° for 18-22 minutes or until golden brown.
  8. Cool for 5 minutes before removing from pan to a wire rack.
