I love my mom’s cooking. It’s caused me to be a food snob. I am known to turn down food just because I know it won’t be as good as my mom’s. I’m spoiled. One of those specific things happens to be my mom’s deviled eggs. I can’t eat ANYONE else’s deviled eggs. I just can’t do it. I’ve tried……but it’s bad. Especially those deviled eggs that are runny. You know what I’m talking about. The filling is about to just ooze over the side of that puppy. Uh. No thanks. I run by them in the potluck line, trying not to look directly at the oozy egg. Anyway, today I’m going to share with you the recipe for my mom’s egg salad. Before this, she didn’t have a recipe. I bugged her until she made it while I was around so I could measure. Now I’m happy. This will make you happy too. It’s not your normal egg salad – it’s got a little bit of sweetness to it. Just like me. Ha, ha! [Read more…] |
Homemade Crock Pot Pizza Sauce
Well, I know y’all love pizza. No, I don’t have ESP……every time I ask on Facebook on Friday what y’all are eating, about 80% of you say pizza. Is Friday National Pizza Day and someone forgot to tell me?
Anyway, we love pizza too……but I checked out the label on the pizza sauce at the store – and then I put it back on the shelf. I’ll spare you what’s in it. It’s not pretty.
So, I decided to make some myself to put in the freezer to have whenever we wanted pizza…..and it was EASY! I thought to myself: “Self, why not do this in the crock pot?” So, self did it in the crock pot.

Crock Pot Cajun Roast
I’ve made this dish several times and I think I love it better every time I make it. It’s delicious and it makes great leftovers for lunch. I love things that are leftover for lunch…..it just makes my day a lot easier. Leftovers ROCK! This was originally a Pillsbury recipe, but I tweaked it a little like usual…..okay, so I tweaked it a lot. I have to do that now with our new eating habits. Beef. It’s what’s for dinner. Homemade Cream of Chicken Soup
When we started out on this new journey of eating healthy, I knew a lot of things would have to change…….like canned soups.
They are chock full of MSG. I’ve known MSG wasn’t really good for you for a while. Barry’s grandmother would always get sick if she ate it.
BUT, even knowing that I held on to my little cans of condensed soup. I thought you’d have to pry them out of my cold dead hands……they are the base of so many of my recipes that I was having a very hard time parting with them.
And then, here comes Tammy with a great recipe for a homemade version. Tammy puts out some fabulous recipes and I’m thankful to her for that. After making her soup, I know I won’t look back.
It’s DELICIOUS! And easy. Have I ever told you that I like easy stuff? Bye, bye MSG. Hello creaminess. [Read more…]
Crock Pot Stuffed Peppers
I love stuffed peppers – Barry tolerates them – Annie only eats the middle. So, when I was thinking about dinner, stuffed peppers seemed like a logical choice. Ahem. The original recipe was from Taste of Home, but I tweaked it just a little bit. They were SO GOOD! Barry said they ranked about an 8 in the “stuffed pepper” category, but not that high in the “food” category. Everyone’s a critic. The peppers were so tender after being cooked in the crock that they just melted in your mouth – pure yumminess. Ahhhh. Leftovers are bliss. [Read more…]
Crock Pot Beans and Rice
We really love beans and rice……rice and beans. And it’s not because they’re cheap either. We just really love beans…..and rice. It’s just a nice perk that they’re cheaper than meat. We have beans at least one night per week and sometimes more than that. If you eat here, more than likely you’ll have beans or pasta. Wanna come to dinner? I attempted to set out and create my own beans and rice recipe just for the crock pot……and the result was good. There were a few changes I’ll make next time, but I’ll note those for you. I mess up a lot – so therefore I make lots of recipe notes. It’s how I roll. [Read more…]
Mom’s Salisbury Steak

When I came home from the hospital with Annie, I was hungry. I stayed hungry the entire time I breastfed her. I ate more when I breastfed than when I was pregnant. When my mom asked what I wanted her to bring over to eat, this was the dish I asked for. And I wanted to eat it all……but I shared with Barry. Now, that’s love. This isn’t your normal Salisbury Steak. It’s topped with barbecue sauce and I LOVE it! It makes great fixings for a sandwich too. Yum. I’m hungry. [Read more…] |
Crock Pot Pizza Pasta

![]() Annie has never been a big fan of pasta…..which is really sad because Barry and I are VERY big fans. However, the older she gets, the more she will eat. When she was young, I’d try to trick her and put some in her mouth when she wasn’t looking. After one puke, I stopped that. I’m glad she’s getting more into eating it. When we have company, I usually make pasta. It’s relatively cheap, crowd pleasing, and usually pretty easy. Combine that with a crock pot and you’re really saving some time and money! Let’s make some Pizza Pasta (P.S. – Annie did eat several bites!). [Read more…] |
Crock Pot Cowboy Beans
I love beans. Sometimes, I think beans get a bad reputation. Sure, they make you musical and you can start your own band, but they also have the magical power to clean you out and fill you up. Not many foods are like that.
If I eat a big bowl full of beans, they keep me satisfied for a long time. We’re a bean-loving family. When I ask Annie what she wants to eat for dinner, (just for fun) she always says “Bean!” Beans, beans, good for your heart. *Cough* [Read more…]
Crock Pot Whole Baked Chicken
I have a confession – I used to be afraid of whole chickens…..whole dead chickens. Well, I guess I might be afraid of a live chicken too if it was to run after me, trying to peck me to death.
I mean, in the packaging it looks so…..chickenish. It really looks like a chicken. I mean, there are legs and wings and body parts. When I open a pack of steak, it doesn’t look like a cow. With the chicken, I feel like I need to apologize while I’m fixing it. Sorry bird, but you are quite tasty. Not to mention I have this weirdness about meat on the bone that I’m trying to overcome.
So, I set out to teach myself to cook a whole chicken in the crock pot. I read tons of recipes, and this method suited me the best. And guess what? It’s EASY! I love it! The meat is so tender and it just falls off the bone. This is my method for cooking chicken forever! This particular chicken is from Earth Fare.
After watching Food, Inc I can’t buy any more Tyson chicken. This chicken was $10, but let me tell you…..it was GOOD. Totally worth the $10 and knowing it came from an okay source – and plus, I got 3+ meals out of this 3 pound bird. It did not die in vain…..it died somewhere, but not in vain. [Read more…]
