When I came home from the hospital with Annie, I was hungry. I stayed hungry the entire time I breastfed her. I ate more when I breastfed than when I was pregnant. When my mom asked what I wanted her to bring over to eat, this was the dish I asked for. And I wanted to eat it all……but I shared with Barry. Now, that’s love. This isn’t your normal Salisbury Steak. It’s topped with barbecue sauce and I LOVE it! It makes great fixings for a sandwich too. Yum. I’m hungry. |
We’ll need cornflakes, egg, barbecue sauce, salt, pepper, ground meat, and milk. I’m trying to use up my barbecue sauce stash, and when I’m done I’ll make my own….which really does taste better than store-bought. Here is a great recipe for that. You can use any type of ground meat that you like. Of course I’m using venison……you should know that by now. 🙂 |
You need to crush your cornflakes. I just put mine in the bowl and crush them with my hands. I know we’re on the path to more whole foods, but I do still buy cornflakes for this dish. I’ve tried using breadcrumbs and oats, but the corn flakes really make this dish stand out. So, I’ll most likely buy corn flakes just to make this. Surely they make whole wheat organic corn flakes…right???? When I was little, I used to eat corn flakes with marshmallows. Nutritious. Ha, ha! |
To the corn flakes, add the egg, part of the barbecue sauce, salt, pepper, and milk. Give it a good stir. |
Add the ground meat and mix it all together……with your hands. I just like mixing it with my hands. It feels good. Yes, I know that’s weird. My mom sometimes mixes meatloaves and such with her stand mixer, but she says to make sure you don’t over-mix the stuff or it’ll be REALLY stiff and dry – not what we’re looking for. But if that happens to you, just cover it with ketchup. Problem solved. |
Pat your mixture out into 5-6 patties. I grabbed this pan and then realized it was too little. Oops. I didn’t want to wash an extra dish, so I made this one work…..my patties are weird shaped. Bless their heart. |
Smear a little barbecue sauce on the top of each patty. How much you use depends on how much you like. Remember you can always dip them in sauce later. Don’t over-do it or it’ll run all over your pan. Oh, and I’m really sorry for the blurry photo. I think a child was trying to climb up my leg. I’m not sure WHO that could be. Ahem. |
Bake them at 375 for about 20 minutes. After the 20 minutes I usually broil mine for 5 more minutes. That helps them get nice and browned on the top. Serve by themselves or put them on a sandwich. This post is linked at Good (cheap) Eats and on What’s On The Menu Wednesday at Dining With Debbie. |
