-Breakfast: Leftover Baked Oatmeal, bananas -Lunch: Bologna and cheese sandwiches, chips -Dinner: Tuna Quesadillas, Rice-A-Roni Spanish Rice 2 cans Tuna, Drained 6 ounces, weight Cream Cheese, softened Minced Onion Garlic Powder Salt and pepper Flour Tortillas Cheese -Mix drained tuna and cream cheese until smooth. -Add minced onion, garlic powder, and salt and pepper to taste. -Spread tuna mixture on one half of the tortilla, sprinkle generously with Swiss cheese, then fold over. -Heat 1-2 tbs. of olive oil in a skillet and fry tortillas until golden brown on both sides. |
