Crock Pot Chicken Pot Pie Stew

All of the delicious flavors of Chicken Pot Pie without all of the hassle. It's the perfect option for an easy dinner since it's made in the crockpot.

Instead of a normal “this is how I do it” type of post, I thought I would do a more “behind the scenes” type of post. This way you can see what’s really going down around the Myers house. As you know, I’m all about keepin’ it real. I’m also all about chocolate and coffee…and sleep. But not dusting.

First off, I got the idea for this recipe when my friend Karen told me she was making it…and I said to her, “I bet I could make that in the crock pot.” And I DID. I love it when I get ideas from friends. So, go ahead…you can always ask me if there is a new recipe you’d like to see in the crock pot. I like getting fresh ideas – I also like getting a haircut. My college major was Random 101. [Read more…]

Crock Pot Roasted Red Pepper Pork Chops

When Barry and I brought home 231 pounds of pork, I was a weeeee bit overwhelmed. I mean really – I knew the pig was big, but maybe he should have been working out a bit more. My uncle raised the pig for us on the family farm – my neighbors have been cool with the chickens, but I really didn’t want to press my luck with a hog in the back yard.

We turned the 18 pounds of pork belly into homemade bacon, which is utterly fantastic. Now I’m working my way through the other 213 pounds. So…you might be seeing lots of pork recipes in the next year. You’ve been warned. [Read more…]

Crock Pot Stuffed French Toast

What do you do on Christmas morning? Do you sleep in? (Not if you have kids, you don’t.) Do you plan a huge breakfast? Do you eat Toaster Strudels because you’re too busy doing other stuff to think about cooking breakfast?  Either way, I’ve got you covered today. If you hate spending Christmas morning cooking, this dish is prepared the night before – before you start assembling all the, “some assembly required” toys that will take approximately 4 hours of what would otherwise be your precious slumber.

But, if you LOVE cooking then this dish is great for you too – because it can cook in the crock while you prepare other things…like scrambled eggs, bacon, and hot cocoa. And while the kids make sure to ask you approximately 1.5 million times if you’re finished yet. Oh wait – maybe I was the only person to ever do that. [Read more…]

Monster Cookies

Why do they call them Monster Cookies? I’ve made them several times and my mom used to make them occasionally when I was little, but I still don’t know the answer. Is it because it makes a monstrous amount? No – that can’t be it…4 ½ dozen isn’t exactly a monstrous amount (at least not to me). Is it because they’re large in size? Well, maybe…but I make mine in tablespoon amounts – so it’s only a monster sized cookie if you’re a dust particle.

I know the answer. It’s because when you make these, you feel like Cookie Monster. Shoving one after another of these into your face, “NomNomNom!!!” But don’t forget there are raisins and oatmeal in there! These are HEALTH FOOD! [Read more…]

Pancake in a Mug

I love muffins for breakfast. I’ve recently become obsessed with all sorts of different single serving Muffin in a Mug recipes – they abound on Pinterest! There’s a muffin for every occasion. Sad? Eat a muffin. Happy? Eat a muffin. Hungry? Eat a muffin. Bored? Eat a muffin. Full? Eat a muffin but don’t tell anyone. Plus, single serving muffins mean you don’t have to share. “No, you can’t have a muffin. This is the only one – go eat some carrots or something.”

Most of the time I use nut or seed flours for single serving muffins. Why? I don’t know – it just seems easy because I only need a small amount and don’t want to mill only two tablespoons of flour with my Nutrimill. Maybe I should start looking for more flour based muffins and start pinning some of those – you’re welcome. I love Pinterest. [Read more…]

Crock Pot Honey Ham

Deck the table with plates of pork! Fa, la, la, la, la, la, la, la, la!  Tis the season, to eat hammmmmmmm! Fa, la, la, la, la, la, la, la, la! Don we know our body bibs! Fa, la, la, la, la, la, la, la, la, la! While I tell of left-o-VERSSSSSS! Fa, la, la, la, la, la, la, la, la, la!

Barry has done this thing to our family. He takes normal songs and remakes the words. He’s ruined a ton of good Christmas songs. So, just for you I’ll give you his #1 hit…and if you are offended by the word fart, do not read ahead.

Cranberry Orange Tea Bread

Ever had one of those times when you decide on making a certain recipe, based on what’s in your pantry? So, you get everything ready and you’re all set – and then you go to get said ingredient and it’s either hard as Plymouth Rock or growing mold? Yeah, that’s never happened to me either.

It seems to be the season for sharing Cranberry Orange stuff, because I see it all over Pinterest. So, because I’m the type of person who goes with the flow, I decided to bring you one myself. Actually, no, I never go with the flow. When I see the flow, I swim as hard as I can the other way. I’m terribly hard headed. Y’all, pray for Barry. Amen.

Crock Pot Pepperjack Chicken

What's better than cheese & chicken? Letting the crockpot do all the work for you. Add this Crockpot Pepperjack Chicken to this week's menu and your family will love you!

In the spirit of keepin’ it real, as I usually do, I’m gonna be honest. I don’t have time to write this post – but I still want to share a yummy recipe. It’s holiday time, I’m behind (better than BEING a behind), and Andy keeps chewing on wires. Soooooooooooooooo, you might see that a few posts here and there are a bit sparse – and that’s because I’m busying chasing around a 15 month old who currently likes to play in the toilet while his sister stands by and watches (partners in crime).

So, it is what it is. Here’s a post full of pictures with a recipe at the bottom. This is a great way to fix chicken if you like hot food. Ciao baby! [Read more…]

Granola Munch Mix

What says “Merry Christmas, I love you,” more than a quart full of granola? Well, not much I tell ya, not much. Money says, “I love you.” But granola says, “I love you and want to fill your tummy.” Now, if I could figure out how to get someone to give me granola AND money, I’d be all set.

Let’s be honest here for a minute. If you would like someone to give you a gift that requires dusting, please raise your hand. Anyone? Anyone? Well, then how can YOU in turn go out and buy someone a little doodad and call it quits? Unless that doodad also comes with a lifetime supply of dusting services, I probably don’t want it. Amen and amen. [Read more…]

Rock Your Crock with Plan to Eat

Y’all know how much I love Plan to Eat. I am a meal planning junkie, and Plan to Eat just fills my need of order and list making. When I first confessed my love of this program, I told you I had been a hard sale, because I like my lists on PAPER, not online. But the great thing about Plan to Eat is that you CAN print your stuff out on paper. So, I’m organized and I have my paper. God bless America.

If you’re scared of Plan to Eat, never fear – I’ve even got a video tutorial showing you how I meal plan…and another post about how I use Pinterest and Plan to Eat together for meal planning. [Read more…]
