Peanut Butter and Banana Pancakes

Am I the only one who does this? Goes to the store and her stomach is bigger than her belly? So she ends up getting about 10 more bananas than she really needs…and they all turn brown and her toddler won’t eat them because “eeeeee! They’re brown!” Does that happen to anyone else? So, I’m always looking for ways to use browned bananas. And yes, sometimes I even buy them already brown to stick in the freezer so I can make banana bread any time I want – and who can know when that craving might hit?

Anyway, I had some browned bananas and I wanted pancakes, so this is what I came up – and I have to say, they’re SO good. Then again, peanut butter would probably make dirt edible.

A Food For Togetherness – German Pancake

German Pancake. Since it’s eaten by tearing pieces from one big pancake, it encourages sharing from start to finish.

Sometime before last Christmas, I read about making a Dutch baby, or German Pancake. While the name did not appeal to me (who wants to eat a baby?), the idea of a giant pancake did, so I made one. It was a great hit with my family and a way for me to use up eggs before we went out of town. 

We’ve made it several times since then. It is a simple dish that is easily made by both parents and children, a great activity to ease into the morning after a long Winter night. Since it’s eaten by tearing pieces from one big pancake, it encourages sharing from start to finish.

Overnight Cinnamon Rolls

I have a love of cinnamon rolls. Actually, it might border on obsession. When Barry and I were first married, we would bake and eat an entire roll of Pillsbury Cinnamon Rolls. Yes, I know you’re doing the math – that’s 8 rolls….four each. And I’m not ashamed. I even licked my fingers to ensure I had eaten all the topping that was to be found.

I’ve only made them from scratch a few times because it’s a lot of work to get up and make dough, then let it raise and THEN make the cinnamon rolls. Yes, I’m a morning person but 5am is just a tad bit early for me to be making noise in the kitchen. But, then I had a revelation….and I was in the bathroom. For some reason, I seem to have my biggest revelations in the shower. It’s because I don’t have any paper to write it down. What if I could let them raise overnight in the refrigerator and THEN bake them in the morning! *Hallelujah chorus!* Almost wants to make you take a shower, doesn’t it? [Read more…]

Oatmeal Raisin Scones

A scone tutorial is wayyyyyyy overdue here. I am so sorry I’ve let you down in such a fashion. It’s a crime really. I should be sharing scones with the whole world! Scones are my favorite breakfast pastry – they beat out muffins, pancakes, and even…..doughnuts. GASP! Cinnamon PB Granola

I’m back today to complete my More Than Alive baking challenge! Today we’re making granola. Granola is one of the top 5 foods in this house. We all LOVE it! I’m always looking for good granola recipes, my favorite one being Maple Granola. This Cinnamon PB Granola is a Stacy original……a Stacy original that didn’t bomb. I have bombs regularly. Without a doubt, one of the most popular recipes on this site is my Baked Oatmeal….and rightly so. It’s deliciousness on a plate. It makes your taste buds sing. It makes your kids scream OATMEAL! It makes your dog beg. It makes you…well, it makes you regular. What more can you ask for in a breakfast food? Nothing I tell ya!

Well, I wanted to update my old recipe because of the quick oats and sugar issue. I only buy rolled oats in bulk now (they go through less processing) and I don’t use brown sugar anymore.

So, I played around in the kitchen a bit….okay, so I played around in the kitchen a lot. Let me just tell you, I made about 123,981,273 flops with this one. Why mess with something that’s already good? Well, to make it better. Except, my better was a long time coming.

Homemade English Muffins

I put off making English muffins for a long time. I figured they’d never taste like the ones from the store. And I was right. They don’t. They taste SO. MUCH. BETTER! I’ll never look back now. They really aren’t difficult and the taste is amazing. I was making sourdough English muffins, but I’ll be honest……my starter kicked the bucket. Bit the dust. Went to be with Jesus. Yes, I killed it. Of course this has absolutely nothing to do with the fact that I kill all living plants. Ahem. I was super busy with teaching at a local college and doing tons of workshops…..I just sorta forgot about it. Oh well. I could go ahead and make another one, but I’ll be honest – I don’t really have the time right now to feed it and keep it all bubbly. RIP starter. [Read more…]

Homemade Yogurt

If you’ve never made homemade yogurt before, you’re going to be astounded at how easy it is……really. It’s super easy. You might have tried the recipe I have on here for Crock Pot Yogurt from Heartland Renaissance. I thought it was pretty awesome……until I made this. Now I won’t look back. The thickness and creaminess of this recipe is GREAT! The crock pot is nice if you need to make yogurt and you won’t be able to stick around, but this has become my method of choice. It’s a lot thicker than the version in the crock pot. I looked around at several recipes and finally settled on this one. It’s very easy and makes some really great yogurt. Peanut Butter Kefir Smoothies

We love smoothies here at the Myers house. If I’m going to be making a lot of them, I make a smoothie base and keep it in the fridge (thanks Brandy!). I am always looking for good ways to use up my kefir and get the great benefits of all the probiotics……especially as it’s getting closer to the time of year when sickness abounds. This is one of my favorite smoothies – probably because it has peanut butter in it and I’m a peanut butter fanatic. I’ve used kefir in this smoothie, but feel free to use plain yogurt in its place. You’ll need kefir (or yogurt), a ripe banana, honey (I used raw), wheat germ, peanut butter and vanilla. [Read more…]
