Bundt Pan Frittata

***UPDATE: See this post about our new eating habits. (7/10/11)I’m notorious for finding different uses for things in my kitchen……it keeps me from buying all sorts of what-nots to crowd up my cabinets. I saw this recipe on Saveur and had to try it. Frittata in a Bundt pan?! Not to mention that I just like saying Bundt…..there are so many fun kitchen words. Have you seen My Big Fat Greek Wedding? “Oh! It’s a cake!” Not this time, baby. Saltine Toffee

*UPDATE – See this post about our new eating habits.(7/10/11)

I’m sure you’ve probably had cracker candy. It’s delicious! It’s a perfect balance between sweet and salty. Barry just loves when I make a batch. I love to make it too because it’s just so dang easy! Plus, people oooo and ahhhhhh over it like you’ve spent a great deal of time on it. I just love fooling people like that! It makes me giggle…..I giggle a lot. Let’s giggle together! Then afterwards we’ll jiggle together. [Read more…]

Ode to Thanksgiving – Sweet Potato Biscuits

*UPDATE – See this post about our new eating habits.(7/10/11)

I feel eternally sorry for people who aren’t from the South. Biscuits just aren’t biscuits unless they’re southern-style. This year at Thanksgiving I think I’ll say “I am thankful for biscuits. Amen.” Ya know, biscuits aren’t a traditional bread for a Thanksgiving table. But why not mix it up a little this year? These Sweet Potato Biscuits are so moist and delicious, you’ll be eternally sorry if you don’t make them. I’m eternally sorry that we ate them all already. If you’re not from the South, follow these directions and you can pretend that you’re visiting. Now, practice saying “Please pass the butta y’all.” [Read more…]

Ode to Thanksgiving – Pumpkin Spice Bars

*UPDATE – See this post about our new eating habits.(7/10/11)

Ya know, I don’t like pumpkin pie…..at all. However, when I really think about it, it doesn’t make any sense. I love everything in it – but I don’t like the pie. Ew. I’ll have a cookie, thanks. I realize that my logic is flawed. I like these bars…..I like the pumpkin dip…..but not pumpkin pie. So, this is my Thanksgiving alternative to Pumpkin Pie. Yes, we’ll still have Pumpkin Pie, but I’ll eat these instead. Let’s make some spice bars! [Read more…]

Ode to Thanksgiving – Sweet Potato Praline Swirl

I LOVE sweet potatoes. I can’t think of a single way that I’ve had them and not liked them. So, when I started thinking about a side dish to post, I knew it would be sweet potato related. I didn’t want to post a traditional casserole recipe, so when I saw this one from Taste of Home I knew it was going to be the winner. And boy, is it a winner. Shew! Even Annie gobbled this down. I can tell it’s going to be a fight for the leftovers……unless my dad is here. He doesn’t like sweet potatoes. One time I made sweet potato fries and he said “Are these sweet potatoes?” I said “Noooooooooooooooooo dad.” He ate them. Man, I am such a liar. [Read more…]

Ode to Thanksgiving – Pumpkin Pie Dip

Thanksgiving is my favorite holiday; Barry’s too. It’s a nice, relaxed day when you just sit back, eat until you think you might have to go to the emergency room, and watch football. I’m not really a football watcher, but I do look forward to the Macy’s Thanksgiving Day Parade. So, in honor of my favorite holiday, we’ll dedicate this week to Thanksgiving. I’ll cover an appetizer (today), a side dish, a bread, a dessert, a centerpiece, and place cards. What fun! Have some fun with me….and you might want to look into renting a dolly.

I knew this recipe was a winner when my brother-in-law enjoyed it. Let me just take a minute and tell you about Brian – usually when I cook something and I ask him if he wants some he says, “maybe later.” That’s code for, “not ever gonna happen.” When I made this the first time he was eating and eating it…….and he LOVED it! We’re talking about a man who won’t eat anything unless it also includes ketchup and/or cheese. We were all chowing down on it before the main meal. When the meal came, I was full of dip. Oops. To make this, you’ll need pumpkin puree (go here to read how to make your own), powdered sugar, cream cheese, pumpkin pie spice, vanilla, ginger, and cookies. You can tell it’s for Thanksgiving just by the ingredients!

You’ll need your cream cheese to be a little soft. I stuck mine in the microwave for about 20 seconds to soften it up……make sure you take it out of the wrapper first. It is NOT microwave friendly. Don’t ask how I know that. Add your powdered sugar and beat the mixture until it’s smooth with no little lumps.

Oh, by the way this recipe makes a big mess. Most of the time my kitchen is covered by a thin layer of powdered sugar. I like to imagine it’s snow and move on with my day.

Add the pumpkin pie spice, ginger, and vanilla. Mix well. It’s going to look pretty and speckledy. Did you know that speckledy is not a word? Who cares. I like it.

I added some pumpkin from my freezer stash, but if you don’t have any you can just use one can of pumpkin puree…..NOT pumpkin pie mix.

I noticed that mine was a little runny this time. So, I covered it with plastic wrap and stuck it in the fridge for a bit to see if it would thicken up. Normally that wouldn’t bother me because we just eat it out of the bowl…..without double dipping! Ew! But this was for a Coupon Workshop event, so I didn’t want it running all over everyone’s plate. That wouldn’t be very pretty. Tasty, yes. Pretty, no.

After a few hours, it was still too thin for me. Guess what? It’s an EASY fix!

I added more powdered sugar. Do you know I had to add about 4 more cups? Good grief! My mentor, Lori, told me what I did wrong with this batch. When you freeze pumpkin puree, it gets a tad bit watery, so you have to let it drain a little bit before you use it….in a colander with really teeny, tiny holes. Oops. My mistake keeps you from looking like a doofus. I don’t mind to take one for the team.

See! All better. It’s thick enough for me now. If yours is too thin, just add powdered sugar until you’re pleased with the consistency. But, if you’re just going to dip out of the bowl, it wouldn’t’ matter if it was a tad bit runny. This batch is sweeter than usual, but it still tastes yummy. I prefer it less sweet, but this batch will NOT go to waste.

Pour it into a pretty bowl and cover. You’ll want to refrigerate it a bit so it can let the flavors blend. Could be that this will get really thick overnight and I’ll be cutting my dip out. Ha, ha! If it does happen, I can just beat it again and thin it with some milk.

You can serve this with vanilla wafers like me or with cut up fruit. It’s also tasty with gingersnaps or graham crackers. This makes a pretty big batch. Especially if you have to add 4 cups of sugar. I was happy with that because now I have some for the workshop AND some for Thanksgiving Day. I killed two birds with one bean…..or something like that. So, learn from my mistake and use canned pumpkin for this recipe…..don’t be a doofus.

Jelly Biscuits

I love cooking breakfast…..I love EATING breakfast. If you don’t eat breakfast, you’re really missing out. Really. I’m not a liar. Now, I love sweets for breakfast. I am tickled pink with a bagel and banana. Barry, on the other hand, likes a hearty breakfast. If I want a hearty breakfast, I cook it for dinner. Biscuits are usually on the menu – homemade or canned. We like them both…..do you know what makes a biscuit even better? Cinnamon Sugar. Doesn’t cinnamon sugar make everything better? Preach it! Anyway, I came to a happy medium with this recipe – I had my sweets and I served it with eggs so Barry would be happy. I’m a peace keeper. This recipe is so easy you’ll start making it all the time. Whew! [Read more…]

Yoplait Smoothies

When I first started my blog, I became a member of My Blog Spark. This is a program for bloggers that allows them to take surveys to see if they qualify to test certain products. I was invited to join when I was asking companies for coupons to give out to you guys.

I finally qualified to do a test! I was so excited! Annie and I danced around the kitchen. She had no idea why, but she sure did enjoy it. Yoplait wanted me to try out their new frozen smoothies. They sent me two coupons for free smoothies and Kitchen Aid sent me a NEW BLENDER to try them out on!!!!!!!!!  Thank you My Blog Spark! Y’all have read previous posts and know how I feel about my blender. Yuck. Let me just tell you that my new blender kicks butt! I love Kitchen Aid! Now I love Yoplait smoothies too! So, let’s make a smoothie and test this new puppy out, shall we? [Read more…]

How to Make a Smoothie

Did you know there are actually restaurants that only sell smoothies? I still haven’t figured that one out. I’ve never been to one, as I’ve heard they’re pretty expensive. To me, it would sorta be like drinking my money, all blended up. Do you know where that money has been? Eww! Also, I think those smoothies are supposed to sometimes stand in as your meal. What is THAT about? Only a smoothie to eat? Man, I need something else with my drink, like cereal, toast, or waffles. Man cannot live on smoothie alone. I make great smoothies at home, using whatever we have on hand. You can do it too, because it’s SO easy! I’ll go step by step, giving you ideas so you can create your own custom smoothie, and for heaven’s sake please eat a biscuit with it.
For this demonstration, I made Peanut Butter and Banana Smoothies. Those are two ingredients that are just meant to be together. Soul mates! These are the ingredients that I used if you want to make one just like me (awwww, flattery!): two bananas, two tablespoons of peanut butter, ¼ cup dry milk, two tablespoons wheat germ, one cup of yogurt, and a handful of ice cubes. This made enough for two smoothies, so if you only want one you’d cut it in half – genius, right? [Read more…]
