![]() There are about a million different ways to cook eggs. Okay, so maybe not a million but there are lots. I’ve already showed you how to make poached eggs and baked eggs. Someone asked me if I’d show how to cook eggs over-easy, so I just decided to tackle the rest of the ways that I like to serve eggs: over-easy, sunny side up, over medium, and boiled. I won’t talk about scrambled eggs, because almost everyone knows how to make those…..right? So, let’s get crackin’. Ha, ha! Get it? Come on….that was funny. |
![]() For over-easy eggs, you’ll crack your egg into a skillet, greased with butter or cooking spray. Trust me on this one. If you forget, you’ll be spending the morning scraping egg off your skillet. Cook it until you can tell it’s starting to set a little on the top. The egg white will start to turn, wait for it……………….white. If you jiggle the pan, it should still jiggle a little bit, but not run all over the pan. This is also the time to season. I always use salt and fresh ground pepper. |
![]() When you can tell your whites are starting to set, you want to flip your egg. Do it carefully…..or you’ll burst the yellow. I’ve busted plenty of yellow in my life. I get distracted, or I’m not gentle with it. Treat your eggs like you would your adolescent teenage daughter – gentle and with care. And please do not make a comment about the shell it’s wearing today. On this side, you only want to cook a short time. A minute or less. If you cook it too long, the yellow will get firm. The only reason you flip it is to get the white to finish cooking. Sometimes I even take my pan off the stove eye after I flip it and just let it sit in the skillet a minute or two. |
![]() This is an over-easy egg. It’s runny when you cut into it. GAG ATTACK! I cannot stand eggs this way, but I have gotten pretty good at making them because they are Barry’s favorite. The way to a man’s heart is through his eggs. Oh, and see the other egg on the side? I busted it…….Annie was trying to help me turn it. I’ll blame it on her because she can’t talk yet. |
![]() If you want your egg yolks cooked firmly, like me, then you have two options. The first one is my favorite. When I crack the egg into the greased skillet, I like to bust the yellow. Then I let it cook until the egg white starts to get firm. I’ll flip and let it continue cooking until I know for sure the yellow is done. This method is a lot less stressful. You don’t stand at the oven on your tip-toes, shaking in your boots because you’re afraid of busting the yellow. Just bust it and get it over with. Bust a move! |
![]() You could also do this for over-hard eggs. Cook it just like an over-easy egg, but when you flip it over make sure you cook it longer. I know it’s done when I take the spatula and press on it. You’ll be able to tell if it’s firm or not. If it looks like it’s going to pop like a zit, it needs to cook a bit longer. |
![]() These are the eggs you always see on advertisements and on television. Don’t be intimidated! They are easy. If I can do it, anyone can do it. They are rather pretty looking – even if they do make me gag. Break your egg into a greased skillet over medium-high heat. It should sizzle the minute it hits the skillet. For the other options, this doesn’t matter…..but it does here. So you want to heat the skillet before you break the egg in. After you break it in, turn the heat to low. It’s going to have to cook a while. You’ll see it start to firm up. Jiggle the pan to test for firmness. Or have your husband stand beside you and say “it’s not done yet.” Season the egg as desired. Seasoned salt is also good. |
![]() You could also put a lid on the skillet. The steam will help the egg cook. However, if you do this it won’t look as pretty when it’s done. Sometimes the white will cover the yellow. If you’re worried about it getting done, then go ahead and do this. |
![]() See, how hard was that? The white should be firm but still moist. Again, GAG ATTACK. Barry likes them this way too. Can you tell that my man is easy to please when it comes to food? The only thing I can’t get him to eat is cottage cheese. They are very pretty and will impress people……especially your in-laws. |
![]() This is probably my favorite way to eat eggs. My mom has boiled eggs for me as long as I can remember. She mushes them up with a fork in a bowl and seasons them with salt and pepper. YUM! I know there are about a million ways to boil eggs, but this is the way I do it….and the way my mom does it. It works for us, so I stick with it. I put my cold eggs in a pan and cover them with water. I set the pan over high heat and bring it to a boil. Once it’s boiling, I time it for ten minutes. After the ten minutes, I take it off the eye and drain the water. I cover the eggs with cold water and let them sit for 5-10 minutes. I drain the water again and then take the shells off. I’ve never had my eggs turn green or do anything weirdo. Also, older eggs do better for boiling. The shells seem to come off easier. There you go! Eggs a la Stacy. Any questions? Do you remember that commercial? “This is your brain. This is your brain on drugs. Any questions?” Funny how you remember things like that……guess I’m not on drugs. Ha, ha! I’m just crazy by nature. |
