How I Feed My Family Well As a Busy Mom of Littles

Guest post by Lisa Mullen, author of the recently-released “The Every Mom’s Meal Solution Handbook,” available now!

There are many challenging parts of being a wife, mom, and homemaker, but one of the most difficult can be figuring out what in the world to feed them day after day after day. And feeding them isn’t one of those things you can put off for a few days (or weeks) like laundry or windows, either. Oh no, they’ll hunt you down if you forget for even a few hours!

Easy Meals for Busy Seasons

easy meals

We are in a very busy season of our life right now. We’re sometimes tired – and constantly have a lot going on. But the things that are keeping us busy are ALL good things! Being busy is not something that we don’t want to do. This is the good kind of busy. Hence the inspiration for this post on easy meals for busy seasons.

It’s really easy, when you’re busy, to compromise on food.

Breakfast On-the-Go… for Kids!

easy kids breakfast

Today’s post is quick but hopefully something that y’all find helpful! I actually saw the idea for muffin tin lunches in a magazine when I was pregnant with Annie. She is 9 so that means I’ve been doing this little technique for easy lunches for years. The kids and I both love it.

Now, I don’t know about y’all, but whenever I have to be someplace in the mornings, I always seem to be running late. It seems impossible to get someplace on time if I have to get everyone fed and clean up the kitchen after breakfast! I was browsing ideas for a kid-friendly breakfast on-the-go when it hit me… [Read more…]

How to Handle Kitchen Day When You Have Little Kids

Kitchen Day saves my behind ALL. THE. TIME. But that doesn’t mean it’s always easy! Especially with kids, a productive Kitchen Day sometimes takes longer than normal. Lately, school with Annie is taking more time from me than it use to. So how do I make it work…and can you? I say yes! Let’s talk about how. [Read more…]

Peppermint Latte

peppermint latte

On cold, wintry days nothing quite hits the spot like a nice, hot latte to warm you up from the inside out! But y’all, a Homemade Peppermint Latte – ahhh-mazing! Nothing tops that.

To make my homemade peppermint lattes, I prefer to use my blender, but you can also totally use a hand held milk frother for this, too. I found mine on Amazon pretty cheap. I think this would make a great stocking stuffer or birthday gift for the foodie (do people still call them that?) or coffee lover in your life. [Read more…]

Kitchen Day: Food Storage

food storage options

Y’all probably know by now that Wednesday and Saturday are my preferred Kitchen Days, which means on those days, you can usually find me in my apron doing some cooking, baking, and prepping up a storm! To see just what I make each week, on by checking out my Kitchen Day escapades on Instagram and Facebook. And today I’m sharing some of my thoughts and tips on food storage.

We eat most of our meals at home and my kids are hungry a lot, so I always make a ton of food. I get asked often what in the world I do when I cook all this bulk food! Where and how do I store it all? I realize that not everyone will be able to cook as much as I do or have room to store it all! But because bulk cooking and buying health foods in bulk are some of our family’s priorities, I’ve always found a way to store it all.

Jumping right in – here are a few quick food storage tips: [Read more…]

Stacy’s Top Ten Kitchen Gadgets

top kitchen gadgets

For those of you who don’t follow along with my videos on Facebook, this post was actually a part of a recent Facebook Live series about my top 10 lists. My Top 10 Favorite Online Stores was a big hit – as was my Top 10 Kitchen Gadgets – so I wanted to share this with y’all too! One thing you should know about me…

Hi. My name is Stacy, and I am a kitchen gadget and appliance hoarder.

Even when I Konmari-ed my house and got rid of ALL the things, I kept most of my kitchen gadgets because you know what…I love kitchen appliances. I’m not ashamed; I’m not embarrassed. And you know what? I plan to keep on adding.

But I do not keep my kitchen gadget and appliance collection on my counter.

That drives me crazy! Counter clutter makes me nervous. I keep them all down in the basement on a special shelf that Barry built me. Before I get going on the key top ten kitchen gadgets list, I am going to shock you by mentioning what DIDN’T make the list this time…my crock pot! You know I use my slow cooker ALL.THE.TIME. However, this list is a little less obvious than that. 😉

In no particular order, here’s my top ten kitchen gadgets and appliances:

Is there Such a Thing as Healthy Fried Food?

healthy fried food

Let me start by saying I love fried food. You can go anywhere and find fried food. Fried oreos, onion rings, french fries, etc. I’m sure if someone could figure out a way to fry Coke they would! But healthy fried food? I’m sure the wheels are already turning in your heads…

Is there such a thing as healthy fried food?

Kitchen Day: Prepping Meats in Advance

preparing meats in advance

I have spent some time chatting all things Kitchen Day over on my Facebook page using live videos. I am really enjoying sharing what’s happening in my kitchen on these days with y’all! And apparently, y’all love it too, because I have gotten so many comments and emails about how helpful it is. And can I just tell you – nothing makes me happier! This past week, I talked about prepping meats in advance and y’all had a lot to say! But before we dive into that…

When is Kitchen Day?

Crock Pot Chicken Enchilada Casserole

I think I enjoy Fix and Forget Friday as much as you guys do. It seems these days my schedule is totally full. It’s nice to have a meal in the crock pot so that I know when I get home dinner is ready to go…..as long as I have remembered to turn the crock pot on. In my defense, that only happened ONCE. And maybe it wasn’t even my fault. Maybe the cord somehow wiggled itself out of the outlet. It could happen. Today we’re making Crock Pot Chicken Enchilada Casserole. Yum! Barry gave this a 9 out of 10 (and that’s impressive ladies. Usually I only get an 8). Barry saves his 10 for Tiramisu and Berryhill Baja Grill in Texas.

You’ll either love this tip or hate it. 🤣⠀ You’ll either love this tip or hate it. 🤣⠀

If you hate it, just scroll on by. 🤍 But it was helpful to us. 🥰⠀
⠀
Often, I have a hard time getting my kids to remember things I’ve taught them, like how to properly clean a toilet or clean mirrors. “I forgot.”⠀
⠀
You know what they don’t forget? Stuff they watch on You Tube. 🤪🤪⠀
⠀
So I went to You Tube and sourced kid videos about cleaning the bathroom. The kids all watched them. ⠀
⠀
Now they’re all cleaning their own bathrooms. Boom. 🤷🏻‍♀️ Worked for us. ⠀
⠀
** Just search on YT for “kid cleaning videos” and see what you find. Different parents have different parameters for what they allow. Barry and I screened videos first but each person can find their own. ❤️🤍

Hard times can make us or break us.

Our family experienced some big changes and shocks and pruning (removing) in 2021. Some days I didn’t want to get out of my house or my bed.⠀
⠀
But already we are coming out of darkness into His wonderful light and I can see - I can see the benefits of hard times. ⠀
⠀
New beautiful growth and hope. ❤️⠀
⠀
What is one benefit YOU have experienced from hard times?
This culture has nothing to offer our family.⠀
⠀
I lived for too long believing that hustle was to the benefit of this family. ⠀
⠀
God’s call upon our life isn’t to hustle and grind our days away while we prove our worth and see our success. ⠀
⠀
No, friends. It’s God’s desire that when people look at you and me, they don’t see US or what WE accomplished but instead say:⠀
⠀
Wow, only God did that. ⠀
