Tuna Melts
Okay, I realize that most people shudder when they think of tuna……..I, on the other hand, LOVE tuna. My mom used to make tuna salad for me all the time when I was growing up, so I just love it. When the doctor first told me I could feed Annie fish, I immediately came home and fixed tuna for lunch. Bingo. She loved it too! Like mother, like daughter – except for that whole hard-headed part. I have NO IDEA where she gets that one. Tuna is quick and versatile. You can make a lot of quick dishes using it, so it obviously fits in with this week’s theme. Add that it’s Fishy Friday in the Myers household and this was an obvious choice. Before you write it off, just make it and try it…….you might surprise yourself. Cheese covers a multitude of sins. Skillet Pizzas
I’ve been on a pizza kick recently. I want it all the time. We fix these tortilla pizzas a lot in our house. You can vary the toppings depending on how you’re feeling. Feeling especially frisky today? Use hot salsa and jalapenos. Feeling bland and blah? Plain cheese works too. It’s ok if no one in your house likes the same toppings…..if usually that makes you travel somewhere like CiCi’s Pizza (be still my heart!) then today you’re in luck! Each pizza can be customized to your pickiness. There won’t be a recipe at the end, as this is just to give you a general idea. Then I’ll unleash you and let you go. If you love something, let it go! Meatloaf in a Mug
See this plate? It was ready in 15 minutes. Ok, so my mom had already made the sweet potato casserole, but that doesn’t count. The veggies and the meatloaf were ready in less than 15 minutes. Wait! Doesn’t meatloaf normally take an hour? Who wants to wait an hour for a delicious hunk of meat? Add some ketchup and I definitely don’t want to wait! This meatloaf is made in a mug….in your microwave……in about ten minutes. Are you shocked? If you want a fast dinner, just go to your microwave. What did we do before the microwave? Gosh. I don’t want to think about it. It was the dark ages. Scary! Take away everyone’s microwave and we’d all pretty much be up a creek without a paddle. Jiffy Jambalaya
When I put this on the table, Barry said “Did you make this from scratch?” When I said yes, he said, “it’s really good.” I’m wondering if he was surprised that I made it from scratch or that it was good? Ha, ha! Then I told him it was a 15 minutes or less meal and he said “No way!” How’s that for a dinnertime play-by-play? This meal is really quick and easy…..and hot. Our noses were running at the end. That’s how I know if something is hot enough. If my mouth just burns, but my nose doesn’t run, then I didn’t add enough pepper. It must not have been too hot though because Annie ate her’s……Dottie was disappointed. She was sure that Annie wouldn’t want it. Poor Dottie. Cake Balls – The Red Velvet Version
***UPDATE: See this post about our new eating habits. (7/10/11) I had no intention of doing this post. I know that cake balls (also called Cake Truffles) are very popular……at least I thought so. When I had a coffee party here recently, I found out that several of my friends had never made OR had cake balls. After I picked my jaw up off the floor, I knew my mission in life had been set before me…..I would tell the oblivious world of cake balls! Breakfast Pizza
You know when you mix crescent rolls, sausage and eggs that magical things are going to happen. There are lots of breakfast pizza recipes out there, but I never found any that really floated my boat, so I sorta made this one myself. Is nothing sacred? I mean, really? Now we have to go and healthify our chocolate chip cookies? No, that’s just wrong. But if your kids just won’t eat beans then maybe this is how you can really get them good. Yes, beans. I said beans. Are you still listening? When I saw this recipe I knew it would be one of my six for this week……cookies with beans? Yeah, right. This one calls for a can of chickpeas (garbanzo beans). Now, I’m a BIG fan of chickpeas. I can eat them by the handful. YUMMO! They’re delicious on a salad…..but in my cookies? Stay away from my cookies, man. It’s been said that I’ll believe anything. Yes, when I was first married to Barry he told me that Affordable Dentures was named that because they sold them used. I believed him…..it was the last time. Anyway, Barry’s Aunt Judy told me that garbanzo beans can make you crazy if you eat too many. If that’s true, bring it on and lock me up because I love ‘em! Let’s make some bean cookies! Deceptively Delicious – Creamy Potato Soup
I love soup on cold, rainy days. Something about them just makes me want to indulge in a big bowl. Barry chose this recipe out of the Deceptively Delicious cookbook, so when a rainy day came along I decided to try it. Barry doesn’t really care for soup during the hot months, but I can eat it just about any time. Once I tried making a cold soup and that did NOT go over well. “What is this? It’s cold. Soup should not be cold.” So, you will not be seeing any recipes for Cucumber Soup here at Humorous Homemaking. The “deceptive” veggies in this recipe are cauliflower and butternut squash. Now, I could not taste the cauliflower, but I did taste the squash. That was okay with me because I love it! Verdict? It was very good. We all enjoyed it, even Annie. Deceptively Delicious – Oatmeal with Sweet Potato
Oatmeal gets a bad rep a lot of the time. Sure, sometimes it looks like a big pile of EW. Hey, sometimes it even tastes like that. However, every once and a while you find a gem like this one. WOW! This recipe was my favorite out of all six that I tried. I groaned with each bite. I looked across the table at Barry’s and was jealous that he was eating my oatmeal. I wanted it back. I didn’t mean to put it in his bowl! Poor Annie didn’t even get a bite……she was happy with her Cream of Wheat – obliviously to my pure joy right beside her. We are breakfast eaters in the Myers’ household. If you are not, this recipe might just change your mind. The secret veggie? Sweet potato.
