******We’ve adapted this recipe to fit our Whole Food’s lifestyle by using rolled oats, sucanat, and leaving out the chocolate chips.********* One of the most popular recipes on this site is my Baked Oatmeal. It’s a glorious recipe all on its own……but I got to thinking. Strange things happen when I think. I lay in bed at night and think about cooking while I’m falling asleep. Sometimes that ends badly…..especially if I dream about candy all night long because then I wake up sick as a dog. True story. But sometimes it ends happily, which is what happened here. You know how much I love apples, hence the recipes for Apple Crowns and Apple Pie Muffins and several others which shall remain nameless at this time. So, I wanted to pair apples and Baked Oatmeal together. You’re gonna love me. |
This is the same base recipe as Baked Oatmeal, but with a couple additions. We’ll need oatmeal, brown sugar, cinnamon, baking powder, salt, eggs, milk, oil, chocolate chips, and apples. I used three York apples. Technically you could use any fruit for this recipe….peaches, plums, blueberries, etc. Apples are my favorite, so that’s what I used. If they aren’t your favorite, see a doctor. |
Peel your apples and core them. Then chop them into medium sized chunks. If you make them too big, they’ll be crunchy when your oatmeal is done….if they are too small, they’ll be applesauce. Mix them in a microwave bowl with some brown sugar and cinnamon. Pop them in the microwave for 3 minutes. You just want them to start to get soft. If you think they are still too crunchy, add a minute more. If you decide to use a fruit that is canned, you can skip this step because it’s already soft. Example – canned peaches, pears, or cherries. *NOTE: We no longer use a microwave because of safety concerns** |
In a big mixing bowl, combine your oats, brown sugar, cinnamon, baking powder, and salt. I go through a lot of oats……so, I usually buy them in bulk. Oats make me happy. Oats make horses happy too. Hmmmmmmmm. |
Into your dry ingredients, mix the eggs, milk, oil, and vanilla. Stir it up well to make sure you get the eggs all mixed in. A chunk of egg would not be a good surprise…..been there, done that. |
Now, walk away and leave it alone for 5 minutes. It needs to absorb some of the moisture. If you get in a hurry and don’t wait, then you’ll have a nice egg layer on the bottom of your pan…….been there, done that. |
Spread your cooked apples out evenly in a greased 8 inch baking pan. I think next time I’ll make it 4 apples instead of 3. I like lots of fruit. |
Chocolate makes everything better, so I wanted to add some mini chips. Stir them in after the oatmeal has set for 5 minutes. You can skip this step if you don’t like chocolate. If this is you, see a doctor. |
Spread your oatmeal mixture evenly out over your fruit. You won’t have a problem having enough to cover the surface. Make sure the fruit is completely covered. |
Bake in a 350 degree oven for 30 minutes. When you take it out, you might find this lovely bubbly apple stuff around the edges. YUM! That’s good stuff right there y’all. |
All done! I usually eat mine with maple syrup, but this was so fruity and delicious that I didn’t need it. Feed this to your family. They’ll love you forever. |
Fruit on the Bottom Baked Oatmeal
Yield – 4 servings EDIT (8/12/11) I’ve changed this recipe up a bit. I don’t use the microwave anymore. I just cut the apple pieces in smaller chunks and pour them directly into the bottom of the pan. They get cooked enough without nuking them. I also use 2 tablespoons of honey in the apple mixture instead of sugar. If you want to make this dish easier for the morning, chop your apples the night before. After they are chopped, put them in a bowl and cover them with a solution of water and lemon juice. I’m not exactly sure of the ratios……I just sniff to make sure I’ve put enough lemon juice in there. Cover them and they’ll be ready to go the next morning. |

Thank you for this delicious recipe! I am looking for something to make in the crock pot while I am out exercising in the mornings. I also have 10 bushels (yes 10! crazy me) of apples to make into applesauce and pie filling. I will be taking your fruit recipe and canning it. Then on morning I am up at 5 to exercise all I need to do is dump my apples and oats 🙂 Hubby will be happy with “Apple crisp” for breakfast and I will be happy that I made breakfast while my coffee was brewing (risky!).
