Tuna Melts

Okay, I realize that most people shudder when they think of tuna……..I, on the other hand, LOVE tuna. My mom used to make tuna salad for me all the time when I was growing up, so I just love it. When the doctor first told me I could feed Annie fish, I immediately came home and fixed tuna for lunch. Bingo. She loved it too! Like mother, like daughter – except for that whole hard-headed part. I have NO IDEA where she gets that one. Tuna is quick and versatile. You can make a lot of quick dishes using it, so it obviously fits in with this week’s theme. Add that it’s Fishy Friday in the Myers household and this was an obvious choice. Before you write it off, just make it and try it…….you might surprise yourself. Cheese covers a multitude of sins. And if you hate it, just smother it in ketchup. Problem solved.

You’ll need hot sauce, mustard, mayo, canned tuna, bread, cheese, butter, and salsa. Sound pretty easy huh? You probably already have this stuff at home – except maybe for that hot sauce. It’s from Louisiana. Someone brought it to me who knows I love to cook. You can use any hot sauce you have – or leave it out if you’re a pansy. Annie ate it, so it must not be tooooo hot.

Grab a small bowl and put your drained tuna, mayo, mustard, salsa, and hot sauce in it. Mix it up well. It shouldn’t be too runny, but it should be thin enough to spread.

Grab a piece of foil or wax paper for this part. It makes things easier to clean up. Butter one side of all the pieces of bread. Flip over the buttered side so that it’s facing down on the foil. You’ll lose a little bit when you pick it up, but not too much.

Divide your tuna between the pieces of bread. Smooth it out and make it look all nice and pretty. Actually, it doesn’t really matter. No one is going to see it. I’m just weird and like mine to look nice. I also like to match my PJs when I go to bed. No one sees that either……..Barry doesn’t care.

Lay a cheese slice on top of your tuna. I think this is Kraft Deli Selects, so it’s pretty thick cheese. You want a pretty good amount of cheese……trust me. Don’t skimp on the cheese, man. You should also use shredded cheese if you like. It would melt faster.

Assemble your sandwiches with the other side of the bread, making sure the butter is facing out. Plop them into an already warmed skillet. I cook my sandwiches on medium. It’s not a good time to walk away and do something else……you’ll get distracted and your bread will burn. I speak from experience.

See, I walked away. This side got too dark…….I fed it to Barry. Again, he doesn’t care. In my defense, I was attempting to get Annie away from the toilet. She had decided that she’d like to clean it, so she was splashing the whole bathroom with the toilet brush. I think she takes my cooking time to be a period when she can explore and get into messes.

This is more like it. Barely browned, nice and crispy. You just want to cook it long enough on each side for the bread to get toasted and the cheese to melt. It usually only takes a couple minutes.

There ya have it! How easy was that? If eating tuna is against your religion, you could also use canned chicken and call this a Chicken Melt…..if you’re a chicken.*See below recipe for this week’s giveaway.

Tuna Melts

  • 2 cans (6 ounces each) tuna, drained
  • 3 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon salsa
  • 2-3 drops hot sauce
  • 3 pieces sliced cheese
  • 6 bread slices
  • Butter
  1. In a bowl, combine the first five ingredients. Mix well.
  2. Butter one side of all 6 pieces of bread. Flip bread over.
  3. Divide tuna mixture between three slices. Assemble sandwiches with butter facing out.
  4. Cook sandwiches in a skillet over medium heat, until lightly toasted on each side and cheese is melted.

Yield – 3 servings

    These. Were. Glorious. I didn’t use margarine but the butter was delish…and for my dairy free kiddo I put olive oil on the bread instead of butter, took out her portion after the mustard and salsa were put in (she loves those) and then left off the cheese. She was in heaven!

    Never tried it with salsa. I’ve always used sweet pickle relish instead. Add a little onion and this really looks good 🙂

    I made these for supper last night and Harrison and I loved them!! However, Jason and Wyatt did not. Of course, Wyatt hasn’t been eating much here lately and Jason isn’t exactly picky, but he doesn’t usually like “new” or “different” stuff. He usually gets afraid when I experiment, too! LOL!
