Quick Breads #1 Zucchini Bread

Today begins my week of writing about quick breads. I love quick breads! They’re so…….quick. Not to mention easy, delicious, and quick. Did I mention quick? There are about a million different varieties of quick “breads.” This week I’m going to focus on sweet breads (today), muffins, pancakes, biscuits, and cornbread.

We’re going to make Zucchini Bread today! I just love zucchini. You can do so much with it. It’s very nutritious. So that makes this sweet bread nutritious, right? Yes, right. When our family is overrun with zucchini during the summer, I make everything I can think of with zucchini in it. This just happens to be my favorite way to use it. It’s a Betty Crocker recipe. Y’all know I love me some Pioneer Woman. Every single one of her cookbooks is one of my favorites! When I first read this recipe, I started to drool and I knew I just HAD to make it. And there is no maybe about it. These potatoes are delicious. This is the way potatoes were meant to be cooked! Throwing a Bubble Party

For Annie’s first birthday, my mom and I decided that we wanted to do a bubble theme. Mainly because we’re kids at heart and we like bubbles. My wheels started turning for this party when she was only 6 months old and that’s when I started planning. I’m a planner. I do things in advance……WAY in advance. Holy Guacamole!

My husband loves avocados. Annie likes avocados. Me, not so much. The texture is weird. But because I want to keep my husband happy, I buy avocados. I love to buy them when they’re in season and I can get them for $.68 each.  Did you know avocados make guacamole? It’s true! Stacy and the Crab Legs

My husband turned the big 3-0 this week! Because of this monumental birthday, I wanted to cook him something special. Something that would really stand out and say “Hey! My wife loves me!” So, I chose his favorite meal – crab legs. This is where the comedy routine begins. I  have never cooked crab legs before. Baked Eggs

Scrambled, fried, boiled, poached. I love cooking eggs! They’re so yummy and very filling. Plus, they’re cheap. We all know I love cheap things. I really like finding new ways to cook eggs. Around here, sometimes things are so busy that I don’t have the time to stand over the stove and cook eggs, keeping a watch so they don’t stick. When that’s the case, I make baked eggs.
