It seems to me like Fix and Forget Friday rolls around awfully fast……good thing I have an over-obsession with my crock pot. Anyway, today we’re fixing chicken. This dish is super easy and very tasty….of course it’s tasty. I sure wouldn’t post a nasty recipe on here – I have my reputation to think about. I save my nasty recipes for Barry who has to love me even if he wants to yak at dinner. I digress. Onward! [Read more…]
Crock Pot 5-Spice Chicken
Fix and Forget Friday comes to you today from my friend, Anne.
A few months back, I was at Ollie’s (a discount store kind of like Marshall’s or Ross but without the clothes and even messier) and stumbled across a little bottle of Spice Islands’ Chinese 5-Spice Powder. I don’t remember how much it was – maybe $1.99? – but I remember it was cheap. And I like cheap spices. So I bought it.
Problem was, I had absolutely no idea what to do with it! I had never before in my life made or even eaten anything (that I recall, anyway; I suppose there’s always the chance I ate it unaware) made with Chinese 5-spice powder. It was one of those random spice mixes that seemed non-essential to my life. [Read more…]
Crock Pot Curried Sweet Potato & Carrot Soup
I’m just going to tell you, the name of this soup is really weird….and kinda gross. If I had seen it in a cookbook, I would have made a nasty face and passed it by as quickly as possible. Curried? Sweet Potato and Carrot curry? EWWW! My great friend, Erinn sent me this recipe with the recommendation that it was awesome. I trust Erinn. I trust her enough to make her nasty sounding Curry Soup – that’s love. And guess what? I loved it! It has an amazing blend of flavors and they all pair together wonderfully! [Read more…] |
Crock Pot Chicken Cacciatore
I’m a lover of all foods Italian….unless they include fish. Or cabbage. Or bleu cheese. So, let’s just say I love all Italian foods except Italian Fish Bleu Cheese Cabbage Casserole. Moving on! Chicken Cacciatore is a delicious dish. Putting it in the crock pot can only make it better….and easier. It’s a win-win. That’s Amore! [Read more…]
Easy Baked Oatmeal
Without a doubt, one of the most popular recipes on this site is my Baked Oatmeal….and rightly so. It’s deliciousness on a plate. It makes your taste buds sing. It makes your kids scream OATMEAL! It makes your dog beg. It makes you…well, it makes you regular. What more can you ask for in a breakfast food? Nothing I tell ya!
Well, I wanted to update my old recipe because of the quick oats and sugar issue. I only buy rolled oats in bulk now (they go through less processing) and I don’t use brown sugar anymore.
So, I played around in the kitchen a bit….okay, so I played around in the kitchen a lot. Let me just tell you, I made about 123,981,273 flops with this one. Why mess with something that’s already good? Well, to make it better. Except, my better was a long time coming.
[Read more…]Homemade Yogurt
If you’ve never made homemade yogurt before, you’re going to be astounded at how easy it is……really. It’s super easy. You might have tried the recipe I have on here for Crock Pot Yogurt from Heartland Renaissance. I thought it was pretty awesome……until I made this. Now I won’t look back. The thickness and creaminess of this recipe is GREAT! The crock pot is nice if you need to make yogurt and you won’t be able to stick around, but this has become my method of choice. It’s a lot thicker than the version in the crock pot. I looked around at several recipes and finally settled on this one. It’s very easy and makes some really great yogurt. I’m still astonished that I’m making yogurt.Me. I’m making yogurt. At home. Boo yah (do people still say that?). [Read more…] |
Mom’s Egg Salad
I love my mom’s cooking. It’s caused me to be a food snob. I am known to turn down food just because I know it won’t be as good as my mom’s. I’m spoiled. One of those specific things happens to be my mom’s deviled eggs. I can’t eat ANYONE else’s deviled eggs. I just can’t do it. I’ve tried……but it’s bad. Especially those deviled eggs that are runny. You know what I’m talking about. The filling is about to just ooze over the side of that puppy. Uh. No thanks. I run by them in the potluck line, trying not to look directly at the oozy egg. Anyway, today I’m going to share with you the recipe for my mom’s egg salad. Before this, she didn’t have a recipe. I bugged her until she made it while I was around so I could measure. Now I’m happy. This will make you happy too. It’s not your normal egg salad – it’s got a little bit of sweetness to it. Just like me. Ha, ha! [Read more…] |
Healthy Baked Oatmeal Muffin Recipe
We LOVE Baked Oatmeal around here. In fact, it’s one of the most popular recipes on this website. We eat it at least once a week…..sometimes more if we’re lucky. I like to make it in advance sometimes, especially if it’s going to be a hectic morning and I know I won’t have 30 minutes to wait for something to bake.
We also have to eat on the run occasionally and it would be nice to be able to take Baked Oatmeal with us on those days. It’s pretty easy to eat in its original state, but I thought I could make it even easier……so when I knew I needed a meal on the go, I decided to try muffin cups for the oatmeal. It worked GREAT!!! I’ll be doing it more often. It is very easy to eat in the car.
I used the same recipe, I just poured it into 8 muffin cups instead of the 8 inch pan. The recipe makes 4 servings, so each person could have two…..or like Annie, just one. Actually, I could eat them all myself. I might regret it later though. I used cup liners for ease of toting, but you wouldn’t have to do that if you didn’t have any.
Crock Pot Stuffed Peppers
I love stuffed peppers – Barry tolerates them – Annie only eats the middle. So, when I was thinking about dinner, stuffed peppers seemed like a logical choice. Ahem. The original recipe was from Taste of Home, but I tweaked it just a little bit. They were SO GOOD! Barry said they ranked about an 8 in the “stuffed pepper” category, but not that high in the “food” category. Everyone’s a critic. The peppers were so tender after being cooked in the crock that they just melted in your mouth – pure yumminess. Ahhhh. Leftovers are bliss. [Read more…]
Crock Pot Beans and Rice
We really love beans and rice……rice and beans. And it’s not because they’re cheap either. We just really love beans…..and rice. It’s just a nice perk that they’re cheaper than meat. We have beans at least one night per week and sometimes more than that. If you eat here, more than likely you’ll have beans or pasta. Wanna come to dinner? I attempted to set out and create my own beans and rice recipe just for the crock pot……and the result was good. There were a few changes I’ll make next time, but I’ll note those for you. I mess up a lot – so therefore I make lots of recipe notes. It’s how I roll. [Read more…]
