Surprise French Toast

Do you like surprises? I don’t. Okay, so let me rephrase that – I don’t like surprises that I know are surprises. Does that make ANY sense? I don’t mind if Barry surprises me with something…but I don’t want him to say, “Hey honey, I have a surprise for you and you don’t get it for a while.” That’s not a surprise. That’s TORTURE.

We love French Toast in this house – I really should make it more often. It takes something that is already awesome (bread) and makes it awesomer. Awesomer is not a word. Lame. I’m getting pretty good at telling you all things that are NOT words. [Read more…]

Banana Walnut Oatmeal

As we continue on with Cooking Through Stacy’s Stash, we come to another eBook in my collection.  I’m trying to tackle one eBook per month – first we saw 20 Minute Meals and then Easy Homemade. And this week we’re talking oatmeal…why? Well, because I have a love for all types of oatmeal, whether it be cooked on the stove or baked.  The only type of oatmeal that I hate is the kind cooked overnight in the crock pot so that it turns into glue. Blech.

Hamburger Pie

So, my mom makes a dish called Hamburger Pie. It’s got meat and veggies on the bottom with a mashed potato “crust” on the top. And I love it. This dish is not that recipe. Bummer. This dish has a cottage cheese-type “crust” on the top. I love cottage cheese.

I’m always looking for good recipes to use ground venison in. If I make something and call it “hamburger,” you can be about 99% sure it’s really made from ground venison – because that’s how I roll.

As we continue with Cooking Through Stacy’s Stash, I’m making Hamburger Pie…which is really Venison Pie. Which could also be called Deer Pie. But you can use hamburger – or turkey – or chicken. We can still be friends. [Read more…]

Baked Parmesan Chicken

It's not fried, it's baked! But it's soooo good! Go out and make this Baked Parmesan Chicken TODAY!

What is up with people calling stuff “Oven Fried?” No, honey. Just, no. Do not tease me with hopes of fried chicken and then shoot me down with the word OVEN. You do not fry a chicken in the oven. You don’t. Just no.

Today, I revolt. I will no longer fix something called OVEN FRIED. Don’t mess with my fried food. It’s BAKED. You baked that sucker in the oven. It doesn’t even remotely taste like fried chicken. You can say it does…but you lie. Revelation 21:8 – look it up. Baked chicken does NOT taste like fried chicken. Amen.

But, here’s the thing. I like baked chicken…a lot. However, I don’t want to be misled into thinking that it’s fried. If it’s baked, that’s cool. I like baked stuff. So, today I bring you BAKED Parmesan Chicken…formerly known as “Oven Fried Parmesan Chicken.” As if. [Read more…]

Vegetable Casserole

Casseroles are true comfort food. Something about a delicious, warm, creamy food just makes you want to feel better. And if you’re feeling fine already, you can still eat it – because there is no such thing as feeling TOO good.

BUT, down here in the south almost every casserole calls for multiple cream-of soups…and French fried onions…and Velveeta. So, when I see a casserole recipe, I make it my personal mission to whole food-ize that thing…and food-ize is not a real word. Whatever.

Sometimes I just go with the recipe and use homemade cream-of soup mix instead. But then sometimes I turn into a rebel and I totally remake that recipe. I live on the edge. I’m really enjoying sharing this new series, Cooking Through Stacy’s Stash, with you guys. It lets me look through all my cookbooks and pretend like it’s work. “Well gosh – I guess I’m just going to have to spend part of the day reading my cookbooks…again. Sigh. This is such a hard job. Peanut Butter Fruit Dip

I like to dip my food. I always have. I always will. There is just something super fun about dipping food into something and then trying to get it into my mouth without dribbling it all over myself…and for the record, I always get it all over myself.

I eat peanut butter every day. Every. Day. Seriously – I cannot tell you the last time I had a day without it…I even asked for it on my food tray at the hospital with Andy. I like it with my bananas, I like it with my pancakes, and sometimes you’ll even find me putting it on a biscuit.

Pecan Crusted Tilapia

I’m not a huge fish fan. I used to be before I got pregnant with Annie – but after that, my love of seafood tanked. Now I can tolerate salmon, tuna, and tilapia. Other than that, it doesn’t come into this house. Yuck! And all those pictures I see on Pinterest of those soups with actual seafood shells in them? No thank you – I don’t want to have to dig my dinner out of a shell before I can eat it. Unless it’s a peanut…that’s different.

As part of Cooking Through Stacy’s Stash, I made this lovely Pecan Crusted Tilapia…and we all chowed down on it! Even Annie – The Skeptical One. That’s high praise in my book.

Today we have our second installment of Cooking Through Stacy’s Stash. I’m tackling muffins today. Why? Because muffins are just delicious. And why should you have to give up muffins just because you want to eat healthy? Well, you shouldn’t.

I agree with Bill Cosby – muffins are just a way to eat cake for breakfast without feeling guilty. Amen brother, amen.

I hate making pie crust. I hate rolling it out and keeping it from sticking…and I hate trying to get it rolled even and trying to make it into a circle. I just hate all that. Blech. If I come across a recipe that calls for TWO pie crusts, I just skip it. If that makes me lazy…well, then so be it. 🙂

But this pie crust, I make it ALL. THE. TIME. It’s so easy. I’ve been making it for almost 10 years now. It’s my go-to recipe for a single-crust pie. You just mix it up, pat it in the pie dish, and you’re all set. It’s a pie-crust miracle. Thank you, Betty Crocker! [Read more…]
