Barry thinks there is a conspiracy going on here…a cottage cheese conspiracy. See, his wife LOVES cottage cheese. Oh, by the way…his wife is me, in case you didn’t know. And yes, I love cottage cheese. I’m known to put it into anything and everything. You’ll find it in shakes, smoothies, ice cream, brownies, and now even my omelets. Booya.

Before you go screaming and running from the room – hear me out. Cottage cheese is awesome. Even Barry, who is a professed cottage cheese HATER, doesn’t know when I put it in stuff. Summer Stir Fry

I love summer…and I love fresh veggies. I love being able to buy new things at the Farmer’s Market – and I love knowing that I can go to my fridge and pull out any assortment of veggies that are fresh. Yummmmmmmmmmmmmm. In the summer, I like light meals…and I like heavy meals in the winter. Probably because I hate heating up the house and the oven tends to do that. Peanut Butter Chocomole

I’m really enjoying this series of cooking through my stash – and I’m also enjoying incorporating my eBooks into it as well. This week I’m making Chocomole for you guys – and it’s a recipe directly from my friend Katie over at Kitchen Stewardship. Katie’s recipes are always delicious. I’ve already told you I love her granola bars and her White Bean Pasta…now you can add Chocomole to the list, from the cookbook Healthy Snacks To Go 2nd Edition.

What is Chocomole? It’s pudding made from AVOCADOS! I’m sure you’ve seen it all over Pinterest. I’ve tried a few recipes, but this is HANDS DOWN the best one EVAH! See, all those caps mean that I really mean it. I don’t lie.

Chicken Italiano

This Chicken Italiano is a super versatile dish that is great served over rice or even by itself.

When I see a recipe that calls for “cream of yadda-yadda” I always take that as a personal challenge. It’s like that recipe says “Hey…hey, Stacy! Think you can conquer me?! I was made for casseroles, so think again, sista!” Then, of course I have to make the recipe without the soup and then say “Booya” at least 4 times during dinner.

Vegetable Cheese Sauce

I like my broccoli plain. I don’t like cheese sauce on it. I like it roasted or steamed with some salt…and butter. Lots of butter. So, maybe that’s not plain after all. Hmmm. I’ll have to think on that one.

I do like Broccoli Casserole…and Broccoli Salad. Okay, so nix what I said earlier. I do like stuff on my broccoli – I just don’t like cheese sauce on it. I think broccoli is tasty enough you don’t need it.

Homemade Sausage Patties

I have this thing for sausage…I like it. But I only like certain kinds fixed certain ways. Is that as clear as mud? Some sausage is just…bad – really bad. Like, full of gristles and nastiness bad. YUCK! Then some sausage is so good it makes you wanna slap your mama. That’s the kind of sausage I’m after.

My favorite sausage of all time is my mama’s home-canned sausage. You fry that stuff up and scramble some eggs. SHEWEE!!! It’s some good eatin’. We like to buy a hog from someone local and get it processed – better than the stuff from the store – although I’m not above the stuff from the store. Maple-Nut Blondies

I love brownies. And that might be an understatement. Even if I know a brownie is made from a bunch of not-so-good-for-me things, I can’t turn it down. I’m weak. So weak. So, in order to keep myself on the straight and narrow, I try to make GOOD, WHOLESOME brownies for me to eat at home…so far, it’s not working. I still can’t say no to a brownie.

Oh wait. I lie. You know those brownies they sell in the box with the icing on top and the multi-colored sprinkles? Yeah – I can say no to those. Ick. No thanks. They’re a disgrace to the word “brownie.” Blech. [Read more…]
