By now, you’ve gathered that I love my dairy kefir. You’ve probably also gathered that I love biscuits from the multitude of biscuit recipes and references on here. When I can pair the two together, I get giddy enough to dance. And let me tell you something – kefir makes the most flakey and delicious biscuits you’ll ever have. Ever. You can quote me on that. I used to make a version of drop biscuits using Bisquick. Of course, I’m not buying Bisquick now that we’ve switched to whole wheat and I use my Nutrimill. Who needs Bisquick? I can make my own, dag-nabbit. So, here is my new recipe for drop biscuits – my go-to recipe when I need a bread quickly to serve for dinner. They are good enough for company and your toddler will cry when you cut her off after letting her only eat two.
This is one of my FAVORITE sweet breads of all time – Chunky Apple Bread. It’s got the perfect balance between bread, fruit, and nuts and it’s not overly sweet.
When you smear some butter on this bread while it’s warm and take a bite, you’ll find yourself trying to strategize ways so that no one else can have any. “Sharing is caring” does not apply here. Kidding y’all. But in all seriousness, this is also a special bread in our house because we love to have it for Christmas breakfast. It’s one of those traditions that I look forward to it all year. I’ve tried several different recipes for homemade hamburger buns, but we didn’t really like any of them. They weren’t light and fluffy. They were solid and dense – almost like me sometimes. Hahahah! Oh come on. You know that was funny.
I found a recipe that was okay, but I needed to switch the method around and the ingredients….and it was AWESOME! I’ve been wanting to have my “own” bread recipe for a while now. I’ve dabbled here and there with several recipes, but I wasn’t completely crazy about any of them. I liked certain things in this recipe and certain things in that recipe……so I dabbled a little myself in my kitchen and came up with this bread. And man oh man – it’s a winner!
But I should tell you, before you have a winner you have several flops…..or in this case, several flat loaves of bread. Disks. Hockey pucks. Door stops. Croutons. And then came this glorious Honey Oat Bread. It makes the house smell wonderful. It makes me smell wonderful. It is just stinking GOOD. This is now my “go to” bread recipe. |I put off making English muffins for a long time. I figured they’d never taste like the ones from the store. And I was right. They don’t. They taste SO. MUCH. BETTER! I’ll never look back now. They really aren’t difficult and the taste is amazing. I was making sourdough English muffins, but I’ll be honest……my starter kicked the bucket. Bit the dust. Went to be with Jesus. Yes, I killed it. Of course this has absolutely nothing to do with the fact that I kill all living plants. Ahem. I was super busy with teaching at a local college and doing tons of workshops…..I just sorta forgot about it. Oh well. Meet my new kitchen “tool.” Hi Nutrimill! I say “tool” loosely because it’s currently still a toy – I like playing with it. I get giddy……I wake up early and I get giddy with excitement over a mill – I think I was born after my time. So, I thought all of you should get acquainted with our new family member since you already know everyone else. The Nutrimill grinds grain into flour. Remember I said we were making all our own bread products now? This is just the next step in Healthy Eating for us. I did tons of research before I bought this baby. I read everything I could find and I picked my friend Stephanie’s mind. I’m sure that she’s wishing Stacy would just go away. I’m like a boomerang that keeps coming back. We decided on the Nutrimill instead of the other various mills on the market because it was supposed to be the quietest, have the biggest storage container, and you can turn it off while it’s grinding (unlike some of the other models). I feel eternally sorry for people who aren’t from the South. Biscuits just aren’t biscuits unless they’re southern-style. This year at Thanksgiving I think I’ll say “I am thankful for biscuits. Amen.” Ya know, biscuits aren’t a traditional bread for a Thanksgiving table. But why not mix it up a little this year? These Sweet Potato Biscuits are so moist and delicious, you’ll be eternally sorry if you don’t make them. I’m eternally sorry that we ate them all already. The final yeast bread I’ll cover is pizza crust. No, there is no throwing in the air involved…..unless you want to throw it in the air. I’m afraid to do that because my dog, Dottie, is a little too quick. Dottie would be having pizza for dinner and we’d be having sandwiches. There are some of you out there who aren’t weird like me. You don’t enjoy kneading bread. This recipe is for you! I got this recipe from my friend, Angela. Angela is a super-mom. She can do anything. This is how she makes her bread, and I have to admit – it’s nice. It lets you do other things in the kitchen while the mixer is doing all the work! Too bad I can’t hire the mixer to dust my house. It makes nice, big loaves that are great for sandwiches. So, let’s get mixing!
