Honey Bran Muffins

…the long lost recipe

I have been making this recipe for Honey Bran Muffins for the longest time – it’s one of our favorites! But in the last year, I when I tried to share it with someone, I realized the blog it was posted on was gone!

PSA: if you enjoy a recipe, always always make sure to print it!! You never know when that blog might disappear.

As I was making these today, I took some notes and a photo so I could post the recipe here and share it…because it deserves to be shared! One of my life’s mission is to feed the world more fiber. Hard to have a good day when you don’t poop. 😉

I will post the recipe as-is and then the way that I make it.

I prefer to use the Trader Joes bran cereal, but All Bran will also work – basically any bran cereal can stand in! The trick for me is to let the cereal and “buttermilk” stand for 30-60 minutes so the cereal softens.

Bran Muffins (original recipe)

Ingredients

  • 1 1/4 cups buttermilk
  • 1 egg
  • 1/3 cup oil
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1 1/2 cups 100% bran cereal
  • 1 cup raisins
  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg

Instructions

  • Beat buttermilk, egg, and oil together.
  • Add vanilla and honey and mix well’; stir in cereal and raisins.
  • Add the rest of the dry ingredients: flour, brown sugar, baking soda, baking powder, and nutmeg and stir just until combined.
  • Pour into greased muffin tins and bake at 400 degrees for 15-20 minutes.

Bran Muffins (Stacy style)

Ingredients

  • 1 1/4 cups milk
  • 2 teaspoons vinegar
  • 1 1/2 cups 100% bran cereal
  • 1 egg
  • 1/3 cup applesauce or oil, both work
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 1/2 cup brown sugar NOT PACKED
  • 1 1/2 cups all purpose flour I use fresh hard white wheat
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Instructions

  • Add vinegar to milk – stir. Add bran cereal and let stand 30-60 minutes or until cereal is softened.
  • To cereal mixture add: egg, applesauce, honey, vanilla, and brown sugar. Stir well.
  • To the liquid mixture add: flour, baking soda, baking powder, and cinnamon. Stir only until combined.
  • Spoon into muffin tins – greased or use silicon cups.
  • Bake at 375 degrees for 20 minutes. Let stand 10 minutes before turning out to cool completely.

    Thanks for your take in these. I may try them with plant milk and gf flour and see how they turn out!
