Crock Pot Texas Pork Chops

I’ve traveled to Texas with Barry a few times, and let me tell you something – I love it there! I’ve never been west of Texas…but that’s okay with me because Texas is where it’s AT. Barry and I have both agreed that if we had to live anywhere else besides here (and I love it here, so it would take a LOT to get me to move), it would be Texas.

Everything is bigger in Texas…so don’t buy any pansy pork chops for this dish. Go big or go home.  When Victoria Gourmet asked me to test out some more of their spices, I was tickled when I saw that one of the blends was “Texas Red Seasoning.” That’s just an obvious choice for me.

These chops are so tender…and spicy. People in Texas are used to heat – bring it! I deviated a little bit from the original Victoria Gourmet recipe, but not too far.

Crock Pot Texas Pork Chops

I love recipes that call for pantry staples and normal ingredients. I don’t want recipes that call for weird stuff. I just don’t keep weird stuff around here. Except for me – I’m the weirdest thing in this house.

I do like having good quality spices in the pantry. Why? Well, because good spices REALLY make the dish. They bring so much flavor – it really makes every dish you make stand out.

The best part about the seasoning blends from Victoria Gourmet is that they can be used for anything…I love using them on my Crock Pot Whole Baked Chicken – it makes them SO good!

So, what happens if you don’t have any Texas Red Victoria Gourmet seasoning? Well first, be sad. Because it’s awesome. But then wipe your tears away and make a substitute. It’s not as awesome, but it will still work for this recipe.

Crock Pot Texas Pork Chops

I used pork chops for this recipe – bone-in. Why? Well, because they’re cheaper. I prefer boneless chops – but when the budget calls for bone-in, that’s what Stacy buys. Feel free to use whatever you like…except maybe fish. Fish would not be yummy. All my fish crock pot recipes have bombed ROYALLY. A nice pork loin would be a good choice too.

So, what have we learned? Buy what your budget affords…and don’t make this recipe with fish. Fish and houseguests stink after three days. <– Tweet This I know you’re probably scratching your head about that phrase, but I just like saying it so I try to stick it in any time I mention fish.

Crock Pot Texas Pork Chops

The original recipe called to brown the chops before putting them in the crock. I’ll just be honest here – I’m too stinkin’ lazy for that. I don’t want to brown my meat before putting it in the crock…unless it’s ground meat. Otherwise, why bother? I’d just finish browning the meat in the skillet and fix dinner. So, I just put these puppies straight in the crock. Booya.

This really is a fix-and-forget type dish. Slap it all in the crock, put on the lid, walk away and slobber until dinner time.

Note: this is really hot. Annie wouldn’t eat it and we were wiping our noses. So, if you’d prefer a milder dish, just cut back on the seasoning. And don’t move to Texas. There are no pansies in Texas…except the flower.

Crock Pot Texas Pork Chops

Crock Pot Texas Pork Chops

  • 2 pounds pork chops
  • 3 tablespoons Texas Red Seasoning (or make your own)
  • 1 onion, sliced
  • ½ cup chopped green pepper
  • 1 can chopped green chilies (4 ounce size)
  • 1 cup black beans (I used Spicy Black Beans)
  • 1 can (28 ounce size) diced tomatoes with basil (or plain if you prefer)
  1. Place chops in greased crock (I used a 4 quart). Salt and pepper chops and sprinkle with 1 tablespoon of Texas Red.
  2. Place sliced onion and chopped pepper on top.
  3. Dump tomatoes, chilies, and beans on top. Don’t stir.
  4. Sprinkle with remaining 2 tablespoons of Texas Red.
  5. Cover and cook on low for 8 hours

Yield: 5 large servings

    HAHA! I have to say… There really are food pansies in Texas. I’m one of few native Texans left, but I’m a wimp when it comes to spicy food.

    Thanks for the recipe for the seasoning substitute. I have to “wimp down” quite a few of my recipes when I find spicy versions, though we are getting better. On this one I’d just skip the cayenne. A few years ago I would have subbed all the chili powder with paprika. =o)

    Oh, my hubby would love these, especially the Texas Red! He is a pure West Texas farm boy transplanted to Chicago and misses the heat, at least the spicy kind. He likes nothing better than to eat stuff so hot that it makes him break out in a sweat. Love your blog. You at least SOUND like Texas lady with a big heart and attitude to boot, even if you don’t live there yet! You would fit right in with most of the ladies I know from there. : )

    Well I was conceived, born and raised in Texas. Still living here, but haven’t tried any of these spices so I would be anxious to try them. My first would be the Kansas City, simply because I have never been there. When we have everything we need in Texas we don’t venture far. You are right we Texans like hot. My daddy, rest his soul, made his own chili powder and when you ate his chili you started sweating from the first spoonful. My husband would have so much sweat drip in his bowl that I was always afraid he was gonna mess up a good bowl of chili watering it down. LOL

    Hi Stacy – first I’d try the Texas Red on this recipe which sounds delicious. Then I’d have a beef night so I could try the steak rub. But I’d be flipping through my recipes while the steak was grilling to find a recipe where I could try the toasted onion herb seasoning the next day!

I have been wanting to try some new spices in my cooking and you make everything sound so delicious describing how you use them. I am not a fan of onions, but it would be nice to try that in my meatloaf.

    I need me some TEXAS RED! I lived in Texas for 9 years, I love Texas! When I lived in Arkansas, I drove 50 miles to a hospital in Texas to deliver my daughter. I couldn’t have my daughter in Arkansas, my child had to be born a Texan!

    Hard choice but I would probably try the Texas Red first. We lived in Texas for 10 years and definitely learned to love heat during that season!

    I just signed up for the Victoria blog updates for my extra entry–and was I surprised by how gorgeous their spice packaging is! The first spice I would try is the onion, because I basically love onions/onion spice and use it breakfast lunch and dinner. I just ran out of my Tastefully Simple one and since I am also a fellow spice a-holic would love to try the Victoria Gourmet one.

    I think I would try the Texas red, I am from Texas and really miss it. I would use it on a brisket in my slow cooker!

    Stacy – my first try would be the KC Steak Rub! I have been able to visit friends in KC a few times and love, love, love the flavor of all the food there. It would be so fun to see if it brings back some memories!

    I’d try the Texas Red Seasoning first. We got an electric smoker last week and I’d love to use this seasoning on some pork hone smoked.

    I would like to try all the seasonings in the 3 pack you got stacy but the ginger citrus is calling my name and living in Charleston, South Carolina. The seafood seasoning would be great to try as well !! I can’t wait to order some of these seasonings myself !!

    Well I would definitely try the Texas blend first on your pork chop recipe. Of course it looks delicious and easy, which is also my motto. And since I AM from Texas we are used to spicy stuff!

    Good Morning, Stacy,

    I’ve been to Texas (Plano/Dallas), we relatives there – they feel the same way you do. Fortunately for me, I have been further west than Texas. My husband had a business trip to Honolulu, Hawaii. I know, right – sign me up 🙂 Loved it there and the people were fantastic and none are nicer anywhere.

    So going to try your recipe and these spices. We love trying new things. So in honor of Texas – let’s go there 🙂
