There is a new love in my life – Cauliflower. Cauliflower doesn’t leave white starchy spots all over my counter when I chop. We’re getting along quite well, thank you.
Cauli is so versatile that I can make rice with it.
Crock Pot Jalapeno Bacon Mashed Cauliflower
- 1 head cauliflower (or two frozen 12 ounce bags)
- 1 teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon minced garlic
- 2 jalapenos, seeded and chopped (or 2 tablespoons chopped, canned jalapenos)
- ½ cup sour cream
- ½ cup shredded cheddar cheese
- 6 pieces bacon, cooked and crumbled
- Salt to taste
- Chop cauliflower into florets.
- Place cauliflower, salt, pepper, garlic, and jalapeno into 5 quart crock pot.
- Add water to almost cover.
- Cover and cook on low for 6 hours or HIGH 3-4 hours or until tender.
- Drain water and mash using a food processor or blender.
- Mix in sour cream, cheese, and bacon. Let cheese melt. Salt to taste.
- Serve hot.
Yield: 6 servings
Is this okay to have when on the THM (Trim Healthy Mama) plan?
Stacy, have you ever tried to freeze this recipe? I would think it would freeze well.
No, I don’t think it would freeze well. I think it would get too runny.
Been there. Done that.
Oh, wow! I made this tonight and it was so good that I licked my bowl!
You’re welcome! I hope it fills the potato need. 🙂
This is so cool, I have been craving mashed potatoes for the last week. Thanks for the recipe
Both! 🙂
Your good bye to potatoes was truly touching LOL. Cauliflower is definitely healthier and lower in calories… love this dish. Thanks for sharing it with us on foodie friday.
Yes, it was a very deep and heartfelt note. 😉
I am not sure what my favorite part of this recipe is – the jalapeño or the use of a slow cooker! Fantastic recipe!
Thank you for sharing this great recipe at the In and Out of the Kitchen Link party! See you next week!
It’s okay to eat cauli for breakfast…I said so. 😉
Um, YUM! That looks pretty amazing. I’m clipping that puppy into my Evernote right now.
Barry loves Evernote! I can’t get into it.
Try using it to clip and organize recipes. It might just blow your mind! I’m playing with it because I hear that you can use it to actually create meal plans and grocery lists, but right now, it’s a little too smart for me. 🙂
That’s why I use Pinterest! 🙂
Stacy!!!! this makes me want cauli for breakfast!!! I am going to link to this for sure.
French Fry – that dirty little booger.
Potato’s evil twin, French Fry, did the same thing to me and my butt…we’ve had to break up as well. I like the idea of throwing it all in the crockpot.
I have that SAME problem.
I hope you cried because you were laughing. LOL
I’m always talking to things…might as well write it down. 😉
Hahahaha! Love the running commentary you had through the post.
Stacy..I cried, this was so good.
I could eat the whole mess of it!
Someone stop me!
This looks so awesomely delicious! I, too, have given up with potatoes but…I never really was a potato person in the first place. Your break up letter cracked me up!
🙂 Good…I’m glad. It cracked me up writing it.
I always get a kick out of comments like this. “I made your recipe, except I didn’t. I changed everything but kept the general idea. Great recipe!” BHAHAHAHAHAHA! 🙂
I just got the book in the mail today and will start reading it this weekend. I think potatoes will be one of the hardest things to give up. I like my potato soup, mashed potatoes and French fires. It took me forever to find a good soup recipe. Here’s hoping it makes a difference (and that I can convince my husband to eat healthier too)!
There are so many options for no potatoes! Jicama, radishes, turnips, etc. 🙂 You won’t be missing out. I promise.
Nah – I embrace my hermitude. 🙂
Oooooooh! I hope this wins him over!
I’m still working on it. 🙂 Salsa Lime Beef.
🙂 Yeah, well….I do have a funny streak.
I can’t wait to eat it again!
I don’t think you’re being serious. lol
Sigh. Nobody ever does.
I made this for dinner, with some slight variations, and it was delicious! My hubby really liked it with the jalapeno, bacon, and cheese. Thanks for sharing a great recipe!
Amazing meal! Never thought to cook cauliflower this way. Thanks for stopping by and for your lovely comment.
If it can be made in the crock, I’m gonna do it. 🙂
What are you serving with the cauliflower? It looks delish 🙂
A recipe that I’m working on – Salsa Lime Beef. 🙂
Oh, and I forgot to mention that leftover cauli-mashies make great loaded fotato soup!!
Yes it does! Yummo!
Oh, looks yummy! I may have this tonight with grilled steak and a salad. And yeah, the potatoes can hang out with the kids tonight while hubby, oldest daughter (almost 18), and I have these.
🙂 Hope you love them too!
This recipe looks delicious~except the halapeno, but I’ll just leave that out. Is there any calorie or health info? Also, doesn’t the bacon, cheddar and sour cream make it high fat?
Yep, it’s high in fat. But in a setting with no carbs, we’re not worried about that. We eat plenty of healthy fats and still lose weight. 🙂 Have you read my Trim Healthy Mama post? It’s linked at the bottom of the recipe.
No, I haven’t read it. I’ll do that. This recipe does look delicious!

I will be trying this recipe, for sure! But I can’t quit potatoes. I *like* my butt fat. 😉
Yum! I can’t wait to try this!
Haha, this post is pure awesome. Sounds delicious too!
Yummy looking recipe, Stacy! I can’t wait to try it! Do you have a recipe for the beef that you are serving it with?
This might be the way to get my husband to eat cauliflower 🙂 He loves bacon, so this would be perfect!
What is it saying about me (or you, ha!) that I had tears rolling down my cheeks from reading about cauliflower and potatoes? I need to get out more.
Will be trying this. It looks amazing!
