Creamy Chicken Noodle Soup

There’s just something about Chicken Noodle Soup that makes you feel good…..not sure if it’s the yummy noodles or the chunks of chicken. It’s easy to make and it’s very comforting. It’s good to eat if you’re sick! Recently we were sick and our neighbor, Jane, brought us some Chicken Noodle Soup. We got better the same day! It’s miracle soup! Okay, so not really…..but it is good to eat when you’re sick. Why? Well, I looked it up because we all know that what the internet says is true. It’s easy on your digestive system and the steam is good for your sinuses. And there you have it! Let’s get steamy.

Ingredients are: chicken bouillon, water, cream of chicken soup, noodles, frozen peas and carrots mix, sour cream, and cooked chicken. I just boiled some chicken thighs and chopped them up for this particular recipe. You could do the same with chicken breast. Even a rotisserie chicken from the deli would work! I don’t normally care for dark meat chicken, but when it’s mixed up in something I don’t really mind. Yeah, I know it’s all in my head.

Grab your big soup pot and bring mix your water and chicken bouillon. Bring it to a boil. You could use chicken broth, but this is a cheaper route.

Once the water is boiling, add your pasta. It really is boiling in this picture even if you can’t see it. I hate waiting for water to boil……seems like it takes an eternity, especially with a big pot. A watched pot doesn’t boil……walk away.

Oops! Before you walk away, you might want to also add your frozen peas and carrots. They need to cook while the pasta is cooking. Bring the whole thing back to a boil (walk away) and let it boil for 10 minutes so the noodles and veggies can get done. I used rotini for this recipe but you could use egg noodles……or any other noodle for that matter. It says Chicken NOODLE – anything goes.

Once the pasta is done, add the condensed soup. Do not drain the pasta! Isn’t that strange? If you do, it won’t be soup…..it will just be chicken and noodles. Not that it’s a bad thing! I love those too…..but this is soup week, so let’s stick with it. Mix up the soup until it’s not in a big blob.

Go ahead and add the chicken now. Yum! This just keeps getting better and better. Do not boil this mixture, but do let it cook over low heat until it’s warmed up.

Once it’s warm, add the sour cream. DO NOT LET IT BOIL. If you do, it’s going to do this weird curdled thing. Ew. It’ll taste good, but look really icky. I don’t know about you, but it’s hard for me to eat something that looks icky – even if it tastes good. Yeah, I know it’s only in my head. You can actually pull the pot off the stove at this point. The soup is going to be hot enough to warm up the sour cream mixture. Give it a good stir to mix it all up.

And there it is! How easy was that? You don’t need to eat the stuff out of the can! Well, maybe you do – I like it too. It’s quite tasty. But this, this is really special. I served this when we had company and it was a big hit. Everyone kept refilling their bowl……except Annie. She was not about to be fooled with those noodles. I tried to sneak in a noodle or two, but she spit them back out. She’s a funny little booger….she just ate and ate the juice part. More noodles for me!

Creamy Chicken Noodle Soup by Taste of Home

  • 2 quarts water
  • 8 teaspoons chicken bouillon granules
  • 6-1/2 cups uncooked wide egg noodles
  • 12 ounce bag of frozen peas and carrots
  • 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
  • 3 cups cubed cooked chicken
  • 1 cup (8 ounces) sour cream
  1. In a large saucepan, bring water and bouillon to a boil.
  2. Add noodles and veggies; cook, uncovered, until tender, about 10 minutes.
  3. Do not drain.
  4. Add soup and chicken; heat through.
  5. Remove from the heat; stir in the sour cream.
  6. Sprinkle with minced parsley.
