I never tire of seeing you guys meet your goals. As a financial counselor, I thrive on seeing people who have lost hope gain a new insight and ability to beat their debt. I love watching a family who has no clue what’s going on with their money decide to change and start to take control of their finances. I am energized by the man or woman who realizes it is more important to be debt free and have money in the bank than it is to have lots of unnecessary stuff. From Bowl to Freezer – Good Freezer Meal Options
Y’all ask me all the time, “Hey Stacy, can you give me a good list of freezer meals?” The truth is, I don’t have such a list. Here’s how freezing food works for me – I make it and then I freeze it. I don’t really do too much advance planning.

Debt Free College – It Just Makes “Cents”!

In general, two main perspectives exist when it comes to going through college without taking on debt. On the one hand, Perspective A says it’s normal or even good debt, because you’re improving yourself and your value in the marketplace. Perspective Z says, “what a relief! Kicking Out The Microwave
When we bought this house it came with a microwave. It had its own little cubby hole and everything…and I determined that I was NOT going to use it. Now it’s sitting in our basement waiting for a yard sale. We’ll probably contact a residential electrical contractor or a residential electrical services company like the Dewaard & Bode appliances beforehand, just to repair some electrical problems it has, but if the electrical problem is coming from your home then you may need to get an inspection done so you know if you have to buy circuit breakers or not because yours could be generating more power than needed or maybe even not enough for your needs.
All along our healthy eating journey I’ve tried to make a few changes at a time, so that I wouldn’t lose my mind. I’ve switched to grinding my own flour, I’ve cut out caffeine (except chocolate), and I switched to healthy fats. But, I did these things one at a time.
I knew that eventually I would stop using a microwave. I didn’t really like them and they sorta give me the heebie jeebies…plus, you can blow things up in there – or so I hear from OTHER PEOPLE. *Cough*

Crock Pot Chicken and Whole Wheat Dumplings
There are a few things in life my husband is passionate about: woodworking, Christ, not touching the computer screen with your finger, and Chicken ‘n Dumplings.
I knew when we got married that he was crazy about them…and that kept me from making them. I was afraid I would bomb it royally and he’d wonder, “why did I marry this sorry excuse for a woman who can’t make dumplings?”
See, my Mama didn’t teach me to make this dish. She doesn’t like it, so she never made it.
I didn’t even eat them for the first time until after Barry and I were married. I’ll be honest – they’re not my favorite.

Veggie Tuna Pasta Salad
(Note: I forgot to post this before I went on maternity leave..and now it’s autumn – so bear with me. Ha!)
In the summer months, I have a hard time making hot food. I just don’t want to eat it. I want to eat ice cream and pudding…sandwiches and watermelon. I hate heating up the kitchen. This year it’s worse since we’re still saving up for a heat pump – so when I cook, the entire kitchen warms up to a balmy 95 degrees. When you’re 8 months pregnant, that feels more like 150 degrees.
I try to make salads and sandwiches when I can. We survive on them in the summer. I created this delicious salad using veggies I had in the fridge. Yes, you do have to cook it but then you eat it chilled – and since you only use the stovetop, it doesn’t make the kitchen too hot. Nice. [Read more…]
Andrew’s Birth Story – A Daddy’s Perspective
We had it all planned out. We had prayed for God to allow us to make two important journeys before Andy’s arrival in the world. First, we wanted to go to Lexington, Kentucky to see Stacy’s sister walk across the stage so we could officially refer to her as “Dr. Walker” with pride in our voices. Second, we wanted to visit Virginia Tech to see Stacy’s sister walk down the aisle so we could officially refer to her as “Mrs. (Dr.) Heath” with pride in our voices. Neither of these trips would be a problem under normal circumstances and we would have never thought to tackle these excursions, even with Annie in tow. But having an extremely pregnant Stacy makes everything a little more adventurous. Nonetheless, we were bound to try these adventures with glee in our hearts.
We left for Lexington on Friday, August 24th. I got off work at 5:00 and we hit the road. We arrived in Lexington about 10:15pm, fell into the bed around 11:00 and I went to sleep, excited that I could get 6 or 7 hours before we got up early to have breakfast the next morning with some friends we know from the blogging world. Crock Pot Baked Potatoes or Sweet Potatoes
We LOVE baked potatoes in this house…even Annie chows down on them. However, I find that I don’t make them very often. Why? Well, for some reason I just hate heating up the whole oven to make potatoes. I know that’s weird. In the summer, it makes sense to avoid it because of heating up the house, but in the winter I have no excuse.
But then I came across a genius idea…to “bake” potatoes in the crock pot! I’m not sure why I didn’t think of it…we’ll chalk it up to sleep deprivation and Momnesia. But, there were a few problems I was seeing with all the posts out there about crock pot potatoes.
- They used aluminum foil. We try not to use aluminum foil much in this house and I really hate it touching my food…so I sure didn’t want to cover my potatoes with it for 8 hours in high heat. You can call me paranoid – as long as you call me for dinner.
- If you didn’t use foil, some people reported that the potatoes ended up all brown and grody looking. I’m not sure about you, but there’s something about eating food that looks ugly and gross…I’d be hard pressed to eat a potato that looked like doody – because I see enough doody in my day.
