Mama’s Sausage Macaroni
This is a meal that my mom would make when I was growing up – I remember it very fondly…it might be one of my favorite meals of ALL TIME. Not only is it delicious, but it’s so easy and takes very few ingredients. I’ve never been able to post it before, because she didn’t really have a concrete recipe. So since we’re staying here for now, I ordered asked her to make it so I could take photos and write down measurements. It’s a thing of beauty. [Read more…]
Ice Cream: Healthier Sweetener Options for this Homemade Treat
I am a lover of all things ice cream. I dream about it…and I dream about making different flavors (hence the Butternut Ice Cream post). It’s my favorite dessert of all time – and my Cuisinart gets LOTS of use around here. But, I started wondering if there were other things that I could sweeten my ice cream with – besides turbinado sugar ( (we don’t like sucanat in ice cream). I’ll just go ahead and tell you the truth – I want to be able to eat more ice cream, so if I feel like it’s HEALTHY then I can eat more…right? Yes. Amen. So, I tried three different “healthy” sweeteners to see which ranked the highest: honey, liquid stevia, and maple syrup. [Read more…]
10 Easy Ways to Cut Costs in the Kitchen
These days, everyone is looking to cut costs…I’m always looking where to save money and cut costs, so I like this turn of events. Makes me seem more popular. Ha! I’ve been asked exactly how I operate in the kitchen to keep costs down and keep my budget on target. It’s really not that hard, it just takes a bit of thought and effort. I’m going to give you 10 easy ways that you can cut costs in your kitchen too. Chances are, you’re already doing most of these things but you just haven’t thought of them as being “frugal.” You may just need to change your mindset.
1. Use leftovers. This is almost like a “daily duh” that I post on Facebook, but you’d be surprised at how many people just don’t use their leftovers. They make too much for dinner, put the rest in the fridge and it stays in there until it grows mold. That’s money down the drain. Make plans for those leftovers – they make a great next-day lunch. If your family hates leftovers, freeze what you have left and bring it out again later for a “new” meal. Trickery works sometimes. [Read more…]
Cheesy Kefir (Buttermilk) Drop Biscuits
By now, you’ve gathered that I love my dairy kefir. You’ve probably also gathered that I love biscuits from the multitude of biscuit recipes and references on here. When I can pair the two together, I get giddy enough to dance. And let me tell you something – kefir makes the most flakey and delicious biscuits you’ll ever have. Ever. You can quote me on that. I used to make a version of drop biscuits using Bisquick. Of course, I’m not buying Bisquick now that we’ve switched to whole wheat and I use my Nutrimill. Who needs Bisquick? I can make my own, dag-nabbit. So, here is my new recipe for drop biscuits – my go-to recipe when I need a bread quickly to serve for dinner. They are good enough for company and your toddler will cry when you cut her off after letting her only eat two.

Do you have any advice on how to get my husband on board? I am a thrifter, saver, do-without-er, but he likes to spend, and doesn’t pay a lot of attention to the bottom line. He’s been unemployed for two years and let’s just say my income doesn’t cut it (we’re probably going to lose our house… any advice for that while you’re at it?) [Read more…]
Crock Pot Easy Chicken on a Bed of Root Vegetables
Today we have a guest post from LeighAnn over at Intentional by Grace sharing her delicious recipes for Crock Pot Easy Chicken on a Bed of Root Vegetables. Promise it’s as yummy as it sounds!
When asked what your favorite thing is about the cooler weather, everyone in my neck of the woods starts talking about football and pretty leaves, I generally pipe off with, “I love crock pots!” I get some pretty funny looks and the occasional polite giggle. But I don’t mind. While they slave away in the kitchen, I’ll leave my maid – Miss crock pot – to do all my work while I watch the snow fall outside.
This is one of my favorite recipes because it’s so incredibly simple, and yet, it’s full of all the goodness you would expect from a meal that’s been slaved over all day. Not to mention, it’s man friendly – meat and potatoes. The husband loves that. [Read more…]
Pumpkin Chip Cookies
Are you tired of cookies yet? Because I’m not! And I’m the one eating all of these….okay, so only part of them – most of them are going into the freezer for gifts……but several are making their way into my tummy (I lost count). Who’s counting anyway? Leave me alone, gosh! ;-)These get a 10 out of 10 from me. They rank right up there with Oatmeal Raisin cookies…..probably because they sorta taste like Oatmeal Raisin cookies, but different. The same, but different. Got it? [Read more…] |
Peanutty PB Cookies
Peanut butter cookies are my Daddy’s favorite. I really should make them more often…..but I have this problem – I eat them. Admitting it is the first step in getting well. However if loving cookies is wrong, I don’t wanna be right. Can I get an amen? These are delightfully peanutty….a tad less sweet than most other cookies since I used natural peanut butter with no added sweeteners. I actually like them better than the overly sweet version. It means they pair well with ice cream. Barry says they taste VERY peanutty….hence the name. Let’s bake! [Read more…] |
8 Ways to Use Up Leftover Produce
Do you ever have leftover fruits and veggies that you just don’t know what to do with? When I first got married, I was TERRIBLE about letting leftover produce go bad. Ahem, let me be transparent. I can be bad about letting leftover produce—or even excess produce from our lovely summer garden go bad. And I always feel so guilty. Sure, there may have not been enough leftover green beans or carrots for a side dish for an entire meal, but there must have been something I could have done with that food I let go to waste. Right? And I’ve discovered there is! Whether it be a spoonful of leftover peas or 5 lbs. or extra carrots from your garden (I wish we had that problem!), there are lots of ways to use up all those veggies without letting them get all moldy in the bottom of the produce drawer of your refrigerator!
