UPDATE (4/12/12) See this new post about Why I Don’t Soak Grains I am not an expert. Well, I’m not an expert at healthy eating. I am however an expert at shaving fingers off with a box grater……and an expert at falling down stairs…….and an expert at pronouncing words incorrectly. But, I do a lot of reading. A lot. If I have down time, you can bet I’m reading. So, when I got my new Nutrimill I began reading everything I could get my hands on……and I came across soaking. What? Seriously. You’re telling me that not only do I need to grind my wheat to get the best nutrition, now I have to SOAK it? You’re joking. You jest. I brushed it off. Good grief. I can only do one thing at a time for Pete’s sake. So, I learned how to use my mill and the flour and then I decided that I was ready to move on to something else. That’s really how it works guys. Sugar Detox Challenge – Week Four
Before we get into Week Four of the Sugar Detox challenge, let’s review. So far, we’ve kicked out High Fructose Corn Syrup, refined white flours, and all desserts. How are we doing? Very well actually. Last night was the first time I craved sweets. However, I’ll just tell you that it might happen to be in line with a certain thing that occurs on a monthly basis…….and I ate a handful of almonds instead and was perfectly satisfied. Healthy Fats
Okay y’all. Let me get something out of the way. I am NOT a doctor (except for Annie’s boo-boos). But, I do have an opinion. And of course, my opinion is right…..everyone thinks their opinion is right – it is my opinion that I am right. Right? That being said, I have done a lot of research lately in the area of healthy eating and I’ve come to a conclusion…….there are a million different opinions and trying to read them will make your head explode and you might end up yelling obscenities at your computer. My research has centered around a healthy diet based on the foods that God put on earth for us to enjoy….and eating them in their most natural state. Because of that, I’ve been able to filter out a lot of the junk that I read….and yes, there are tons of junky opinions out there. It’s my opinion that they are junk. These are the fats that I am feeding my family. And I feel confident that they are the best out there. It is my opinion that I am right – right?PS – Take a look at the food pyramid. Does it make sense to you? We should eat tons of bread….more bread than vegetables? Uhhhhhh. Okay. I love bread, but even that doesn’t make sense to me. [Read more…] |

Kefir Cream Cheese
I LOVE making things from kefir! Mostly I just love that it makes my life a lot easier and cheaper. Because I’m already making it, I have it around to use for other things – which keeps me from buying buttermilk and other various “soured” items. Now I’m making cream cheese from my kefir and it’s SO EASY! You can use kefir in tons of different ways (including ice cream) and I love sharing them with you. Sugar Detox Challenge – Week Three
So, you know we’ve cut out High Fructose Corn Syrup and white flour. We’ve really not had a problem with it. I’ve also cut out soda for myself (Barry still has one occasionally) and I’ve been soda free for a little over a month. I don’t miss it as much as I thought I would. I’m going to attempt to make my own soda when summer busyness slows down around here. J Annie has never had a soda, a fact of which I am very proud. Crock Pot Stuffed Peppers
I love stuffed peppers – Barry tolerates them – Annie only eats the middle. So, when I was thinking about dinner, stuffed peppers seemed like a logical choice. Ahem. The original recipe was from Taste of Home, but I tweaked it just a little bit. They were SO GOOD! Barry said they ranked about an 8 in the “stuffed pepper” category, but not that high in the “food” category. Everyone’s a critic. The peppers were so tender after being cooked in the crock that they just melted in your mouth – pure yumminess. Ahhhh. Leftovers are bliss. [Read more…]
Too Hot To Cook Recipe Listing
I got several entries for this recipe listing, but not as many as I had hoped. I guess everyone is as busy this summer as I am. 🙂 I’ve put some really great recipes below. Canning Peaches – A Tutorial
Okay guys, bear with me…..this is going to be a long post. I wanted to tell you that in advance in case you wanted to get comfortable, get a drink, or pitch a tent. It’s hard to do a canning tutorial without tons of pictures. So, here you go! I wanted to can peaches this year – I first thought about freezing them, but mom changed my mind. Easy Saran Wrap Alternative: Shower Caps to the Rescue!
We all have them – bowls that don’t have lids. Or maybe they have a lid but your 2 year old hid it somewhere and you can’t find it even though you’ve looked high and low. Or maybe it’s just a weird shaped bowl that a lid wouldn’t work on…..but sometimes you need to cover those bowls anyway. Enter shower caps! Yes, shower caps. They work great on any bowl that doesn’t have a lid. I like covering my bread bowls with them when I have dough rising. It keeps the bugs out….or dust….or flying magnetic letters.I love how handy they are so I always keep a good sized stash around. If one gets dirty, I might wipe it off……or I might just throw it away and get another one. Or, if I do something dumb like stab a knife through it, then I just pitch it and get a new one.
