Is nothing sacred? I mean, really? Now we have to go and healthify our chocolate chip cookies? No, that’s just wrong. But if your kids just won’t eat beans then maybe this is how you can really get them good. Yes, beans. I said beans. Are you still listening? When I saw this recipe I knew it would be one of my six for this week……cookies with beans? Yeah, right. This one calls for a can of chickpeas (garbanzo beans). Now, I’m a BIG fan of chickpeas. I can eat them by the handful. YUMMO! They’re delicious on a salad…..but in my cookies? Stay away from my cookies, man. It’s been said that I’ll believe anything. Yes, when I was first married to Barry he told me that Affordable Dentures was named that because they sold them used. I believed him…..it was the last time. Anyway, Barry’s Aunt Judy told me that garbanzo beans can make you crazy if you eat too many. If that’s true, bring it on and lock me up because I love ‘em! Let’s make some bean cookies! Deceptively Delicious – Creamy Potato Soup
I love soup on cold, rainy days. Something about them just makes me want to indulge in a big bowl. Barry chose this recipe out of the Deceptively Delicious cookbook, so when a rainy day came along I decided to try it. Barry doesn’t really care for soup during the hot months, but I can eat it just about any time. Once I tried making a cold soup and that did NOT go over well. “What is this? It’s cold. Soup should not be cold.” So, you will not be seeing any recipes for Cucumber Soup here at Humorous Homemaking. The “deceptive” veggies in this recipe are cauliflower and butternut squash. Now, I could not taste the cauliflower, but I did taste the squash. That was okay with me because I love it! Verdict? It was very good. We all enjoyed it, even Annie. I think any kid would like it because it just tastes like a big bowl of mashed potatoes. How could that be bad? [Read more…] |
Deceptively Delicious – Oatmeal with Sweet Potato
Oatmeal gets a bad rep a lot of the time. Sure, sometimes it looks like a big pile of EW. Hey, sometimes it even tastes like that. However, every once and a while you find a gem like this one. WOW! This recipe was my favorite out of all six that I tried. I groaned with each bite. I looked across the table at Barry’s and was jealous that he was eating my oatmeal. I wanted it back. I didn’t mean to put it in his bowl! Poor Annie didn’t even get a bite……she was happy with her Cream of Wheat – obliviously to my pure joy right beside her. We are breakfast eaters in the Myers’ household. If you are not, this recipe might just change your mind. The secret veggie? Sweet potato. Oh, and this recipe is so easy you just might start fixing it every day……warning – your family might get used to it. [Read more…] |
Deceptively Delicious – Chocolate Cupcakes
Your kids love chocolate, right? I’m sure there are kids out there who don’t like chocolate, but we can just classify them as being aliens from Mars. This recipe from Deceptively Delicious was originally for a chocolate cake, but I changed it into cupcakes……I like to keep people guessing. It’s for chocolate cake – with BEETS! Yeah, you heard me. Beets. I hate beets. ICK! ACK! BLAH! I guess I need to be deceived into eating them, but I’m just here to tell you right now that I am not going to turn down a chocolate cupcake. Your kids won’t either. However, I think I’d leave out the fact that there are beets in them. I tried to ignore the fact while I was eating them. Verdict? They’re very moist and you really cannot tell the beets are there. A healthy cupcake?! YES! Thank you Lord, we know you love us! |
Needed – flour, cocoa powder, brown sugar, salt, baking soda, eggs, oil, beets, and buttermilk. Seems pretty simple…..except for that can of beets staring at us. I felt weird even getting them at the store, sorta like I was lying to the cashier. I’m a hypocritical beet buyer! [Read more…] |
Deceptively Delicious – Turkey Chili
The second recipe I’m showcasing from the cookbook Deceptively Delicious is Turkey Chili. Please don’t run screaming from the room. I realize that a lot of people think that ground turkey is really gross – we are not among them. I use ground turkey a lot in our house…..especially when I find it marked down. My friend Kim will NOT use ground turkey because she tried it once and her family had nightmares for months. I keep telling her it was a loooooooooooooong time ago and she should try it again. Ground turkey has come a long way. It’s a great substitute for beef and pretty healthy to boot! However, if ground turkey makes you gag and fall down on the floor and have convulsions, then you can substitute ground beef. The verdict for this recipe? Not bad. I liked the finely chopped vegetables and the addition of cornmeal. Now ,it’s not the BEST recipe for chili I’ve ever had, but it’s great for sneaking in vegetables and getting your kids to eat healthy. Even my mom liked it and she’s really picky about her chili. So, let’s be sneaky shall we? [Read more…] |
Deceptively Delicious Applesauce Muffins
I’m one of the lucky parents who hasn’t had major struggle with getting my kids to eat their vegetables. Don’t get me wrong, there are some vegetables they may not like, but they almost always eat whatever I put in front of them. But y’all have asked me about how you can get your kids to eat more veggies and after doing some research I came across the book Deceptively Delicious. Author Jessica Seinfeld, shares all kinds of yummy recipes like these applesauce muffins, that have a serving of vegetables “hidden” in them, usually in puree form. [Read more…]
Favorite Breakfast Recipes
I store all of my favorite and most-used recipes in page protectors in a 3-inch binder that stays in my closet. When I make my meal plan, I choose one or two new recipes and then the rest are old standbys from the binder. I clean it out a few times a year to make room for new recipes we try and love. I’ve had several requests to talk about my favorite recipes by category, so let’s do this! Where should we start? Well…they do say breakfast is the most important meal of the day, so let’s talk about my favorite breakfast recipes.
Oh Breakfast, how do I love thee…let me count the ways.
I may have mentioned a time or two…or two hundred…that breakfast is one of my favorite meals. I could literally eat it every day for the rest of my life 😉 A while back, I shared my 10 Easy, Go-To Breakfasts and I received a lot of comments on how much y’all loved that. I’ve also let y’all in on my secret to stress-free mornings with my Solution For Your Breakfast Woes. Make-ahead breakfasts for the win! This post isn’t quite that focused – in this post, we’re focused on a lot of my favorite recipes, but what you do with them and when is all up to you. [Read more…]
Making Any Recipe Your Own
Did you know you could write your own recipe book? It’s true. You’re an author in the making….if you’d just stop following those recipes step-by-step. I come across recipes all the time that sound delicious, but I just don’t have the ingredients…..or the ingredients are expensive. I’ll just tell you right now that I’m not going to be buying cardamom any time soon…..unless I feel like selling my birthright. It’s made from gold or something…..must be related to gasoline. So, I use recipes that I find as springboards and I go from there. Sometimes I follow a recipe 100%…..I used to always follow them, but then I got a little more confident and I started taking risks. Life without risk is like baked oatmeal without syrup…..like food without salt……like Stacy without her laptop. So, be bold and try something new (yes, even you, Rebecca Cobb). [Read more…] |
Fruity Baked Steel Cut Oatmeal
I’ve been making this recipe for fruity baked steel cut oatmeal for several years now…and it’s become one of my go-to breakfasts. For us, it ranks right up there with Baked Oatmeal and Sweet Potato Oatmeal. We all LOVE it! It’s so easy to customize to your desire and it works with whatever is in season. I found the general idea online and made my own version. 😉
Steel cut oats can be a little tricky…if you don’t cook them just right, they’re crunchy. I’m not sure about you, but crunchy oatmeal is just not cool – not cool at all. If you expect them to taste like regular oatmeal, you’re going to be sadly disappointed. They do have a bit of a bite to them, but they should not be crunchy when cooked. For us, we had to learn to like them – and buddy, do we like them!

So, I have this thing I like do to do in my spare time…it’s called – planning meals. Yeah, okay. Stop your laughing. Some people knit. Some people sew. Some people play sports. I read cookbooks and dream up meal plans. I’m a wild and crazy girl.
You already know how much I love Plan to Eat. But what you don’t know is that planning meals is one of the highlights of my week. I also enjoy making beds, ironing clothes, and de-boogering my children. Gosh…I AM a weirdo.
But something I’ve learned is that not everyone enjoys de-boogering their children with a Nose Frida – and not everyone enjoys making their bed daily – and some people don’t even own an iron (THE HORROR!). And the most crazy thing of all is….some of you hate making meal plans! Ahhhhhhhhhhhh!!! Cue the freaky scary movie music! What is wrong with you people!? [Read more…]
