Potato soup is the perfect meal for those cold, blustery, winter days. Add a little spice via Pepper Jack cheese and you’ve got a real winter winner! I love soup…that should be evident by all the soup recipes on here. And I have to warn you – more are coming. It’s inevitable. Something about a hot and spicy, or thick and creamy, soup just gets me all excited. I’m a huge fan of enchiladas, so putting them in soup form just makes get all giddy. Add in the crock pot and I don’t quite know what to do with myself. I’m not sure where this obsession with my crock pot might take me…but wherever it is, I hope you’ll visit me. Crock Pot Lentil Vegetable Soup
I love lentils. I love soup. Therefore, I love lentils in soup. I also love lentils buttered. But then again, I love anything buttered. Bread. Muffins. Veggies. Dirt. Babies. Etc. Butter makes things better. And as Pioneer Woman says, “If some is good, more is better.” Amen.
Anyway, this is a good, cheap meal. Lentils are excellent for replacing the meat in recipes. They’re high in fiber and they still give you the protein you need to be full. They also give you something else…buy Beano. Ahem. [Read more…]
Homemade Cream-Of Soup Mix
Let’s be honest…there are times when I’m just lazy. I might run out of Homemade Cream of Chicken Soup and be too busy to make more…or too lazy. I try to always keep some in the freezer, but sometimes I run out. I know it’s quick and easy to whip up a batch, but I’ll be honest again. If I see a recipe that calls for it and I know I have to make some because I’m out – I pretty much nix that recipe. Can I get a witness?!
While I just love cooking, and don’t mind making the homemade cream of soup, sometimes I just can’t get around to it…and for those times, there is this lovely stand-in made with dried ingredients. Crock Pot Pumpkin Soup
You didn’t think I’d leave pumpkin out of my crock pot day, did ya? No. I’m up to the challenge. I accept!
I’m usually a meat and potatoes kind of girl when it comes to soup. I don’t really like weird things in there – like those soups that call for clams and they leave the shell on? Ew. Totally not for me. I don’t like to have to work around a shell to get to my food, but thanks anyway.
This might qualify as a “girly” soup…it’s pureed. BUT, my manly man who doesn’t like his food pureed (weirdo) liked this soup just fine. And so did I. And so did Annie – she ended up eating out of my bowl. And for those of you who know me, you know this is a BIG step for me. Normally someone who eats out of my bowl or off my plate loses a finger. Mama’s Tomato Soup – With Cloves
For as long as I can remember, my Mama has made this soup. She has spoiled me. I can’t even touch the “tomato soup” in a can. What is that stuff anyway? It tastes like a big bowl of nothingness to me. Yuck! (No offense to my husband and dad who actually like that stuff.)

When Stacy asked me to do a guest post for Fix-It-And-Forget Friday, I was smile-from-ear-to-ear-and-giggle-a-bit excited. I immediately started to think about what I would make… and failed three attempts in a row (though don’t worry, the recipe below is a winner!) That lead to three *cough* interesting meals. The food would have been fine if it had been cooked correctly, but I did not know how to use the crockpot for those recipes.
It never occurred to me that I could not just pick up my slightly dusty crock pot and make an amazing meal. I tend to think I can do anything, which leads to a lot of humbling experiences. Ooops. Chicken and broth. Chicken and broth. My crock pot did not realize it could do anything else. Except that one time it cooked meatloaf in a hotel overnight, but that was unusual circumstances. Crock Pot Curried Sweet Potato & Carrot Soup
I’m just going to tell you, the name of this soup is really weird….and kinda gross. If I had seen it in a cookbook, I would have made a nasty face and passed it by as quickly as possible. Curried? Sweet Potato and Carrot curry? EWWW! My great friend, Erinn sent me this recipe with the recommendation that it was awesome. I trust Erinn.
