vinegar

100% bran cereal

applesauce
or oil, both work

honey

brown sugar NOT PACKED

all purpose flour
I use fresh hard white wheat

baking soda

teaspoon
baking powder

teaspoon
cinnamon
Instructions
Add vinegar to milk - stir. Add bran cereal and let stand 30-60 minutes or until cereal is softened.
To cereal mixture add: egg, applesauce, honey, vanilla, and brown sugar. Stir well.
To the liquid mixture add: flour, baking soda, baking powder, and cinnamon. Stir only until combined.
Spoon into muffin tins - greased or use silicon cups.
Bake at 375 degrees for 20 minutes. Let stand 10 minutes before turning out to cool completely.
